IH Girls
Daddy went down to Lousiville, Kentucky this past week for the tractor pulls and brought back the girls a International Harvester shirt. Makenna was super excited about her new shirt.

Fun With Cooking
A few years ago my Mom got me the cookbook Deceptively Delicious by Jessica Seinfeld (Jerry Seinfeld's wife), which I never used until now. She was on the Oprah show showing all her recipes with an added twist. She takes all different types of purees and adds them to her meals. She puts carrots and spinach in her brownies, sweet potato/squash/red peppers in her sloppy joes, squash in her angel food cupcakes and carrots in the frosting. Some of the recipes just sound plain crazy to think it would taste any good. Our little Ashlyn is such a poor eater that I decided I was going to give it a shot and I went out bought a food processor and started to puree. So far I have done raspberries, avocados, cauliflower, carrots, pineapple, sweet potato, and banana. I make enough at one time that I put any extra in the freezer for future meals. I've really enjoyed it so far and the girls seem to like all that I've made. I love it that Ashlyn, even if she only takes a few bites at least she's getting some sort of veggies and fruit.

She ate her orange, mac n' cheese, broccoli, and mozzarella/cauliflower stick, but she wasn't a fan of her chicken quesedilla. At least she ate the most important things.
Some things we have made so far are....
Oatmeal Raisin Cookies (with banana and zucchini puree) I couldn't puree my zucchini because I already had it shredded and in my freezer, so I just put it in shredded and it turned out good. The girls liked them.
Grilled Cheese Sandwiches (with Sweet Potato puree) - This was a success.
Hot Cocoa (with sweet potato puree) I have given to this Ashlyn twice when she only took a few bites of her supper.
Here is the simple recipe....
1 1/4 cup milk
1/2 cup sweet potato puree
2 tablespoons chocolate syrup
1/8 tsp. salt ( I don't put the salt in)
1/8 tsp. cinnamon or pumpkin pie spice
marshmellows
Combine the milk, sweet potato puree, chocolate syrup, salt, and spice in a blender and blend until smooth. Transfer to a saucepan and bring to a simmer. Pour into mugs and top with marshmellows.
Fruit Punch (with raspberries, pineapple, and carrot puree) Ashlyn liked it, but Makenna not so much.
Chocolate Pudding (with avocado puree) Makenna liked it. My avocado needed to ripen a tad more so my pudding didn't turn out smooth.
Mozzarella Sticks (with cauliflower puree) This was a success.
Mashed Potatoes (with cauliflower puree) - This was a success.
French Toast (with banana and sweet potato puree) This was a success.
4 large eggs
2 T. banana or pineapple or sweet potato or carrot or butternut squash puree, or canned pumpkin
1/4 tsp. cinnamon
4 slices wheat bread
2 tsp soft tub margarine spread
Pure maple syrup, confectioner's sugar, or fresh fruit
In a bowl, whisk the eggs, puree, and cinnamon. Add the bread slices to mixture and cook. Yummy.
