It's official...I now have a Kindergartner. I still can't believe these last two years of preschool have gone by so fast. He was named "Future Architect" of his class because of all the neat creations he came up with while playing with blocks. In his yearbook he stated that when he grows up he wants his career to be working in a restaurant with his dad; live in Tennessee; marry his mommy and have six children, four boys and three girls. Guess we still need to work on his math skills. ;)

The End of Preschool is Near...Sniff Sniff
Well, this is Wesley's last week of preschool. His graduation is Wednesday night, and I have been told to be prepared to cry (which I would have anyway) because they show photos of the kids throughout the year as well as a baby picture of each child. If that's not enough, they play music that will REALLY get you. In some ways I am resisting this change in his life, and in other ways I am embracing it. I love watching the beautiful, sweet and smart little boy he is becoming, but at the same time I just want my baby to stay this age forever. I'm just so thankful that he and I have such a special bond, and I hope and pray that it will always be that way.

Upcoming Trip Through Andalusia
We are making a trip to visit my brother in Birmingham the week of June 27th. We are going to make a stop in Fort Walton Beach to visit my grandmother and other family, and after that we will head to Andalusia on the way to Birmingham. If any of you are interested, I would love to get together for lunch. We are probably going to eat at Old Mexico (oh, you know, lots of memories there!) and then be on our way. We are already planning to meet Kim Henderson (Lasseigne), but if any of you could make it, we could just get a huge table of old friends together. Any takers? By the way, this would be Monday, June 28th.

Goings On
*Sigh* Once again, I have been very bad about blogging. This has been a very, very busy few months. As most, if not all, of you know, we FINALLY opened Pueblo Viejo on July 25th. That first night was very chaotic as we were not as prepared as we should have been, but we got through it, and business is finally picking up, even with the crappy economy. The first few weeks I was working up there for lunch and dinner, and I had Wesley with me at all times, which, needless to say, was difficult. I have to say, though, he was pretty good most of the time. He would watch DVDs or play with his learning computer. This week I have only been working the lunch shift, so I'm home with him at night.

School starts here the week after next, and I feel so bad that we haven't done much of anything this summer. The whole summer was spent going to the restaurant and taking Wesley to the doctor. No joke! He hasn't even been swimming once this summer, I'm embarassed to say, because of several ear infections, allergies and coughing viruses. But, he did have fun at three different Vacation Bible Schools as well as going to his preschool for several weeks, including this one.

I am super-excited for next week. Wesley and I are meeting my mom in Naples on Monday for a few days at the beach! It will be just the three of us, and my mom has promised me that I can have as much alone time as I want, and she will watch Wesley. I assured her that I want to spend a lot of time with them, but I will be grateful to take a swim or lay on the beach in solitude for some me time.
Well, I guess that's all my updates for now. Oh, I hope all of you guys will make a trip to Busch Gardens sometime soon and stop by to see us! Our house is always open, we are only 45 minutes from Busch Gardens AND you would have an awesome Mexican meal awaiting you!

I Did It!
Isn't it a wonderful feeling when you complete something that at one time you thought you couldn't do? Well, I just finished the menu for Pueblo Viejo, and I must admit that it looks great! We bought a program, PrintMaster, from Best Buy a few weeks ago, and I got really frustrated when I first started trying to make the menu, that I almost gave up completely and was going to go to a printer and have someone else do it. But, this morning I decided to tackle it again, and it's taken me all day, but I've finally gotten it done! Arturo is very pleased with it, and I'm very pleased with myself for trying again with a wonderful result. This will end up saving us a lot of money by being able to print our menus from home. So, I'm not going to be modest....Yay For Me!

Another One?!?!
The past two months, Wesley has had probably 3-4 ear infections, and he might have another one now. When he got up this morning he was complaining that his ear hurt. *SIGH* I signed him up to go to his preschool Tuesday, Wednesday and Thursday of this week, so I was really looking forward to having some alone time and for him to not be bored here with me. He went yesterday and had a great time. He won't be going today in case he does have another ear infection because I don't want him to feel bad there and infect anyone else. He has a doctor's appointment this afternoon. After the last ear infection, probably a month ago, the doctor thought we might possibly have to put tubes in his ear (it was always the right ear), but not even two weeks ago he had a recheck, and the doctor said he was 100%. Now his other ear hurts. UGH!
In other news, my parents are coming through here today. They're on their way to San Destin where my dad has some banking meetings. My mom is going to be with my grandmother and my two aunts helping pack up my grandmother's things as she is going to be moving into an assisted living facility soon. I really hate the idea of that, as she is and always has been so independent, but she is almost 88 years old now, and I think she realizes that this would be the best thing. I was so hoping that the restaurant would be completed by now so that my parents could see the finished product, but alas it was not to be. Oh, we're getting there, but it's still not done. I can't wait to post pictures on here so everyone can see it. It really is going to be beautiful!
