Christmas Day

Christmas day was lots of fun. We opened presents, Brian played tag with Arlo and Jack, we went for a walk and experienced "California snow" (coyote bush seeds), and had a great dinner. Brian cooked a chicken in a stoneware roaster and we had yams, sauteed brussel sprouts, rice pilaf, and homemade bread on the side. I had salmon of course. Jack fell asleep on the floor before dinner and Arlo fell asleep on the floor before dessert. But not before our family whistle band rendition of Jingle Bells. If I can figure out how to upload a video, I'll show you the fun. (Update: video posted - enjoy!) Anyways, here are some pics from the day. (PS. Arlo wore his PJ's Christmas day...in all the excitement of Santa visiting the RV, he forgot to get dressed!)

Christmas Eve Day

So, we had a great day out near Santa Margarita Lake hiking through the campground and hanging out in the RV. Nana and Grandad (Mom and Dad to me) were very excited to have all their grandchildren with them for Christmas. Arlo and Jack are such great big cousins to Bixby. They held his hand and stroked his hair and had a great time showing him toys and talking to him. Our hike through the campground led us to an oak with a cavity big enough for Arlo and Jack, a large climbing rock with a great view, and a half frozen pond. We think we even saw Santa setting up camp next door. Arlo was going to keep a lookout to see if they (Santa and the Misses) went out to walk the reindeer later. Arlo did make sure to let Santa know that the reindeer had to stay outside the RV as they would create quite a mess if they joined him inside for a treat. He left the note to Santa on the table so he would be sure not to miss it. Tomorrow is Christmas and we are looking forward to a clear and sunny Atascadero day.

The finished tree

Well here it is, the finished tree. Lexi loves sleeping on the tree skirt (we did steal her favorite napping spot for the tree). And Bix loves looking at the lights at night.

Our First Christmas Tree

We headed down to Hidden Springs Christmas Tree Farm today to find and cut down our very own Christmas tree. This is the first year Brian and I won't be traveling for Christmas, so this will be our first Christmas tree. And it is made even more fitting as it is Bixby's first Christmas. We found a beautiful white fir tree that, as it was likely to go, was a little taller than it looked out at the farm. But a little trim at the top and it fit just fine. Brian chopped down the tree while Bixby and I watched and then we carted it over to the tree shaking area to have all the leaves and dead needles shaken out. It's not decorated yet as we need to go buy some lights and basic ornaments. We will post pictures of the decorated tree once it's done.

Thanksgiving

We visited down south at my parents for Thanksgiving and had a great relaxing day. We went for a walk around the neighborhood and sat down for a grand turkey dinner. The grandparents and great grandparents had fun watching Bixby and cuddling with him. He had a very sleepy day after the car ride down. We are sitting by the fire this morning enjoying the morning and cooking up a big egg breakfast. Cheers and Happy Thanksgiving!!

Bixby and Dad

Bixby definately enjoys hearing dad play the guitar. Dad even learned his favorite lullaby. He seems to have a good sense of rhythm already and is happy to "talk" and "sing" along when the moment strikes. Enjoy the movie clip.

A visit with grandma and grandpa Gleason

Last weekend grandma and grandpa Gleason got to meet little Bixby. They had a lot of fun sitting in the front yard in the afternoon sun. They got to see him smile and make all sorts of great faces at them and the world. Aunt Aly and Uncle Nate also stopped by to say hi....but they mostly got to experience the big meltdown after a busy day.

Bixby's first bath

Bixby had his first tub bath on the 6th of November (to get all gussied up for Bridget and Tyson's wedding). These are actualy pictures from bath #2...#1 was a little new and he was a little uncertain of the process so these turned out better. He loves the bath now.

Bixby has arrived

Bixby Oscar Douglas Gleason was born Wednesday October 21st at 9:26 p.m. He weighed in at 8 lbs, 11 oz and is 21” long. He is perfect in every way! We came home from the hospital today and he is enjoying the beautiful fall day.

OK.....so we got the wood floors in (thanks to Brian's dad Doug) and we got all the cabinets installed (thanks to Brian's uncle Mike). Furniture was moved back into place (after being crammed inback rooms, tents pitched out back, and the garage) by mom and dad...well...mostly mom as she has the bigest muscles right now :). It was hard work, but the house is coming together just in time. Doug has been going through the encyclopedia searching for the name, but alas, to no avail. And with only 3 weeks to go! guess everyone will have to wait until after the big moment. I get to go take more belly pics tomorrow....pics of it at almost it's biggest moment. Until later!

Shower Pictures





Ginger Punch and Chocolate Cake

There were some requests for the ginger punch recipe (served at the shower and expertly made by Darcy) and the flourless chocolate cake I made for Brian and Doug's birthday celebration last Saturday night...so here you go...

Ginger Punch

One batch makes 8-10 servings
Takes ~1-1/2 hours total to make 2 batches, if squeezing juice by hand (plus at least 24 hours to chill)

5-6 lemons (includes 1 for garnish)
4 oranges (includes 1 for garnish)
¾ c. peeled and roughly chopped fresh ginger
¾ c. honey
¾ c. sugar
4 c. sparkling mineral water, chilled


Grate 2 Tablespoons each of lemon and orange zest. Reserve one lemon and one orange for garnish. Squeeze 1/3 cup lemon juice, and 1-1/4 cups orange juice, and set aside.

In food processor, pulse the ginger, honey, and sugar until just combined (if making 2 batches, you will have to process in 2 batches or else it won’t fit). Add the lemon and orange juices and mix. Transfer to a large lidded container. Add the lemon and orange zests and 2 cups boiling water and stir until the sugar dissolves. Cool to room temperature. Cover and refrigerate for at least 24 hours and up to 5 days.

To serve, strain the ginger-beer base into a pitcher (use very-fine mesh strainer, or cheese-cloth-lined colander). Thinly slice the reserved lemon and orange to form circles. Add the slices and mineral water to the pitcher and stir. Serve over ice.


Flourless Chocolate Cake

16 oz Belgium Dark Chocolate or good Semi-Sweet Chocolate
1 1/2 cups organic cane sugar
3/4 cups boiling hot water or very hot coffee
2 sticks unsalted butter, room temperature - cut into pieces
2 tablespoons unsweetened cocoa powder
8 large eggs - room temperature
1 tablespoon vanilla extract

Preheat oven to 350 degrees F. Prepare a 10-inch springform pan by lining the bottom with parchment paper and buttering it.

Break up the dark chocolate into pieces and pour the chocolate into the bowl of the food processor. Pulse until the chocolate is in small bits. Add the sugar. Pulse until the chocolate and sugar turns into an even, sandy grain.

Pour the hot water or coffee into the feed tube as you pulse again. Pulse until the chocolate is melted - Magic!

Add the butter pieces and cocoa powder - pulse to combine. Add the eggs and vanilla and process until smooth. The batter will be liquid and creamy.

Pour the batter into the lined springform pan. Wrap the outside of the pan with foil. Bake at 350 degrees F in the center of the oven, until puffed and cracked and lovely - about 55 to 65 minutes.

Place the cake pan on a wire rack to cool - the cake will deflate. When cooled a bit, press down on it with a spatula to make it even if that's the look you are going for. When cake is completely cooled, cover and chill for three hours until serving.

Getting closer!

So....the big bash baby shower was last weekend. I was so excited to see so many wonderful friends and family there in support of baby "B-DOG" as he has been nicknamed by the Gleason's. Everyone was so generous and thoughtful and I am lucky to know each and every one of you and have you in my life.

There have been lots of name guesses so far. He does have a name, but we are not sharing in case he looks like someone else when we meet him. But the guesses have been fun and downright side splitting on occasion. I will try to turn the edit function on this one so you can have a guess too if you like.

So for the name clues are as follows:
- Starts with a "b"
- Not in any name book I've seen so far but doesn't sound like a crazy name
- 2 syllables
- More likely to be found in an encyclopedia than a dictionary
