Graduation Day!!


Roxie graduated from puppy class on Saturday. It was the best $109 I have ever spent(at least on my dog)! If you have a puppy or are thinking about getting one I definitely recommend Petsmart's puppy class. Roxie is a completely different dog than she use to be. I can now leave her alone with my kids w/o her attacking them. WHAHOO!!! She REALLY is a good dog now & has been super easy to train. I am so glad we can actually ENJOY having a dog.

YUM YUM YUM!!!

I found this recipe on the sister cafe blog. I love to try new recipe's especially if the are at least a little bit healthy. And this one is sooo good. I definitely had to share it. The next time I make it I am going to try using applesauce instead of the butter & I might try it w/o the sugar. I'm hoping the bananas, apple sauce, & chocolate chips give it enough sugar to make it taste good. I'll let you know how that turns out=) But until then, you HAVE to try this recipe.



Whole Wheat Banana Chocolate Chip Muffins

1/2 cup butter (1 stick or 4 ounces)
1/2 cup packed light or dark brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract
1 1/2 cups mashed ripe banana (about 3 bananas)
1/4 cup honey
2 large eggs
2 cups whole wheat flour
2/3 Cups chocolate chips

Preheat the oven to 350. Line or grease a 12 cup muffin pan.
Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and chocolate chips, stirring until smooth. Divide batter into the muffin cups, they'll be nearly full. Bake the muffins until a cake tester inserted in the center of one comes out clean, 23-28 minutes. Remove from oven and after a couple of minutes transfer the muffins to a rack to cool.
