Hearty Taco Soup
Easy on the waistline, not on the taste!!
1 lb Ground Turkey
1 Yellow Onion, chopped
2 cloves garlic, minced
1 pkg taco seasoning
32 oz chicken stock
1 Bell Pepper, chopped (any color)
1 150z can diced tomatoes, drained
1 15 oz can black beans, rinsed & drained
1 Tbsp garlic salt
1 Tbsp mexican oregano
1 Tbsp cumin
1 Tbsp dried cilantro
1/4 c half n' half (reduced fat or fat free is fine)
Brown turkey w/onion, garlic, and taco seasoning until turkey is cooked. Add chicken stock and next 7 ingredients, bring to a boil. Once soup is boiling, reduce heat and add half n' half. Let simmer 20 minutes and serve.
We had this for dinner tonight and it was really good! I served w/ low-fat jack cheese, whole-grain tortilla chips and a small scoop of lite sour cream. Yum, yum!!

Weekend with Great Friends
We just finished a great weekend w/ our friends The Hicks. Maryann, Clay, Jason and I went to the Aggie game Saturday morning and enjoyed the game together despite another loss. We also enjoyed an adult-only dinner at Madden's Saturday night which was so fun! Sunday morning we went out to breakfast and then went to the Aggie Bonfire Memorial. Even though there were 4 kids under four running around and 8 of us under one roof, we enjoyed the company so much. We are so thankful for great friends in our life!

Our Growin' Girl
Davis went for her 15-month well check yesterday. She is getting so big, I just can't believe it! She weighed 24.5 lbs and was 32.5 inches tall. She is only in the 50th percentile for weight, but 90th for height. Before long, she will catch up to Greyson.

Healthy but Delicious
Low-Fat/Low-Sugar Banana Bread
1/2 stick salted butter
1/2 c unsweetened applesauce
1 Tbsp oil
1 c Splenda
2 eggs
1 1/2 c whole wheat flour
1 tsp baking soda
1 tsp salt
2 ripe bananas, mashed
1/2 c vanilla yogurt
1 tsp vanilla extract
1/2 c walnuts, pecans, etc. (optional)
Mix butter, splenda, and oil until fluffy. Add eggs beating well. Sift dry ingredients and add to butter mixture. Add bananas, yogurt and vanilla. Mix well. Pour into sprayed 9x5x3 loaf pan
Bake at 350 for 50 minutes-1 hour depending on your oven.

A Big Day For the Little Guy
Yesterday was a big first for Greyson...his first Aggie football game. It was a lot of fun and he did great while we were there. He got to share his first w/ his Poppy and Lauren (our adopted Aggie who has graduated and moved to Dallas). It was another ugly loss for the Aggies but that was o.k. considering the fun we had with our little guy!

They are precious in HIS sight
The Lord gave me a little wake-up call this week through 2 heartbreaking circumstances. Jason came home one evening and shared w/ me a story about one of his clients...the couple was pregnant w/ triplets, lost 2 of them, and has spent the past 4 months in the NICU w/ their little one that made it. The second heartbreak was this morning...I found out that some dear sweet friends of ours lost their baby last week almost 6 months into her pregnancy. She had to deliver the baby stillborn and is now grieving the loss of that precious child. My heart hurts for both of these couples as I cannot even imagine going through what they are. I have realized how often I have taken for granted the 2 healthy pregnancies I have had and the 2 precious beautiful ones that I see smile everyday. Why is it that I don't thank the Lord enough for these blessings in my life? Why does it take 2 heartbreaking stories like these to bring me to my knees and say "Lord I don't deserve what you have blessed me with, but you have given me 2 gifts that you have asked me to raise up for your glory and I can only rely on you to do just that." I am so thankful for Greyson and Davis and do not want to lose sight of the gift they are. I guess sometime you need a little wake-up call regardless of how it might break your heart. These couples know who they are. Please know that we are praying for you as you grieve.

I heart the Fall
So we have a new look for the fall! I know it's been a while since I've posted, but I've been working on a little project. Check back in a few days and hopefully I'll have a sneak peek ready for you!
While you wait, I'll leave you with some sweet pics of the kids. We were supposed to go to Houston this weekend to do the Race for the Cure with my mom (she's a breast cancer SURVIVOR!!!). We didn't make it b/c Jason was sick, so this is the closest we got the race :)
