So for the past week Eric and I have been in Daytona Beach, Florida with my parents, sister, brother-in-law, nephew, brother and sister-in-law. The weather has been perfect and so we have enjoyed a variety of activies. On Monday we spent the day at the beach and then did FHE as a family. Tuesday Eric and I were able to go to the Orlando Temple. I am a strong believer that temples are prettier with palm trees outside. We then met my family to go to Downtown Disney to walk around and eat dinner. We ate at the Rainforest Cafe. Then on Wednesday we hit the beach again and then did a round of mini-golf. My sister and I tied for second to last (the same as when we play mariocart on the Wii). Thursday Eric, Jenn, Jake, Isaac and I all went to the SugarMills Botanical garden. It was a very random place that is on the grounds of an old plantation. Then on to the Daytona Speedway! By the time we were done with tours and racing stimulators Eric is tempted to watch the Daytona 500 next time around. Yesterday we were on the beach body surfing and building sandcastles before going into town to a candy factory for a tour and free sample(yum yum). We went to Bubba Gump's Shrimp Factory for dinner and then Eric and I went and saw Indiana Jones (don't waste your money to see it in theaters). Today one last day at the beach and then packing up before flying home tomorrow to cold rainy weather.

Ready Ready Ready Ready to Fly

So I know I am excited when I am want to get on a plane a fly away. I get sick when I fly (not motion sickness, I don't know what it is but I feel yucky) but I am still chomping at the bit to get on the plane on Sunday and fly away to Daytona Beach. We are going to take water cameras so we will get lots of fun pictures from down on the beach. We will probably also go to the Daytona Motor speedway, ride the really fast motorboats, and I want to read, read, read!!!
Eric has even caught the reading bug. Last Saturday we went and saw "The Chronicles of Narnia:Prince Caspian" and now Eric is reading the whole Narnia series. Unfortunately I got him hooked right when he should be studying for boards but I love sitting around reading together.

Waiting ever so impatiently
So Eric told me this morning over breakfast that he was thinking about packing for our trip to Daytona this month. We don't leave until May 25th. I guess this shouldn't have surprised me since he was packed two weeks before we went to Texas. I have to admit with all the craziness at work it will be very relaxing to get away and to spend a week on the beach with people I like and not have to tell anyone where the bathroom is or why the internet policy is what it is. So maybe I will be impatient like my husband and start packing sooner rather than later.

Don't Try this at Home
Last Sunday Eric and I decided to make dinner for my family since it was Mother's Day and my sister's birthday. We found a recipe for cakes that you make on a grill. We decided to try to make both the white and the chocolate cakes. The white cake was burning so we took it of the grill only to find the inside was still batter. Then with the chocolate one we left it on longer only to have it be burned to a crisp on the top. Once we cut off the top of the chocolate one and cut around the batter of the white one they tasted alright but I doubt I will ever make a cake on a grill again. I don't know how the pioneers did it.

So when Eric moved to Utah he brought enough Jell-o to feed an army. This was taken after we had eaten eight boxes of Jell-O. I found all of this when I unpacked the kitchen when Eric moved in. We didn't eat any of it the first month we were in the apartment but then Eric decided to make Jell-O and since then he can't do without it. So now we eat Jell-O almost everyday and today we decided to be bold and mix lime and cherry flavors. I will keep you posted on any other flavor combinations.

A way long time ago
So way back in February Eric and I went to DMU's Winter Gala (aka Med School Prom). We are both anti-valentine's day so we didn't do anything for it but then a week later we went to the dance. Before hand we went out to dinner at Greenbrier, a nice restaurant near my parents house. Eric was adventurous and tried the duck. I think I had steak, I don't really remember. I had thought about buying a new dress but all of my sister's prom dresses were still in the basement so it was a free dress (I love having a sister with such great taste). It was a fun night of one dance (all I could get out of him), yummy chocolate and music. We ended up leaving a bit early because the music was so loud Eric got a headache. But over all it was a very fun evening.
