Peppermint Parfaits
1 quart low-fat vanilla ice cream
1/2 cup semi-sweet chocolate chips
1 tsp unsweetened cocoa powder
Light Whipped Cream
1/4 cup finely crushed starlight peppermints
Chocolate Sauce: Combine 1/4 cup of ice cream with the chocolate chips, cocoa powder and 1 TBSP of water in small sauce pan. Warm on low until melted
Scoop remaining ice cream into eight bowls and drizzle with chocolate sauce. Top each one with light whipped cream and sprinkle with peppermints
183 CAL; 2 g protein; 31 g carbs; 6 g fat; 1 g fiber

Chcolate and Nut Butter Squares
For all of you that have a sweet tooth on some days, this will help you satisfy it
8 1/4 oz bittersweet chocolate bars
4 teaspoon almond, cashew or pistachio butter
Top each chocolate square with a 1/2 teaspoon of nut butter. Enjoy

Guacamole Roll-up
Ingredients:
Guacamole
Cucumber Diced
Tomatoes diced
Wheat Tortillas
Guacamole:
Ripe Avocados
Salsa-to taste
Garlic salt-to taste
lemon juice-to taste
Spread about 2 Tbsp of Guacamole on a tortilla, cover with cucumbers ad tomato. Roll up and eat.
