Arrow of LIGHT


 Kendall graduated Cub Scouts.  A bittersweet day for sure.  He had the most amazing cub master who was seriously the master of all things scouts.  Danny Pruiett.

The lights were off the whole gym was a maze of obstacles to get through.  A metaphor of life.  After Kendall completed each phase next to Danny, he was given more light in his big arrow.  Pretty soon the whole arrow was lit and he was able to conquer the maze and obstacles with no problem.

   Just like when you go through life - you get experience and it gives you more light to make it through this life.  We need all the light we can get in order to get to the Celestial Kingdom.

Then I got pinned.  The last time. {sniff, sniff} What an incredible chapter of life 8-11 years old.  Kendall, you did it!

Daniels Park


We grabbed a pepperoni pizza and headed to Daniels Park to watch the sunset for FHE.

It was really something special. 

 360-degree views of some of the most beautiful scenery that is on planet Earth.  We drank it up until it filled up our bodies to the brim.  It sure makes it easy to be grateful for all creations when you have a place like that to look at.

Cataract Creek


One of the most glorious places in Colorado happens to be only 2 hours away from our house.  It's called Cataract Creek and it's a secret.  It was leaked to us from our friend Star.

We love to pack a picnic of sandwiches, chips, and grapes and go on up for a relaxing adventure.  The lake is ice cold and happens to be perfect when you need to dip your feet in after a hike.  Tree climbing and exploring are encouraged and its always a bonus to spot some wild animals.

Of course, it's mandatory to stop by the outlets on our way home and find a fun shirt or hat at the Underarmor store.

Martha Stewart's Favorite....


The Best Egg Salad Sandwich Recipe



Ingredients

  • 10 hard-boiled egg whites
  • 2 hard-boiled egg yolks
  • 2 to 3 tablespoons light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 avocado, mashed, plus 1/2 avocado roughly chopped
  • Coarse salt and freshly ground pepper
  • Boston lettuce, arugula, and tomato slices (optional)
  • 12 white sandwich bread, such as Pullman, sliced about 1/2-inch thick, toasted

Directions

  1. Using a pastry blender or fork, mash together egg whites and yolks in a large bowl; carefully fold in avocado. Stir in mayonnaise, mustard, and lemon juice; season with salt and pepper.
  2. Place 6 slices of bread on a work surface. Evenly divide egg salad among bread slices. Add lettuce greens or tomato, if desired. Top with remaining 6 slices bread. Serve.
