Those darn Porkers...

Yep - the swine are gettin' a bad wrap. First of all - the more you talk about it, the more I want bacon, or a pork roast, and pass the barbecue sauce please. Ok folks, I'm not being mean, it's just that you can't get it from Pork, and the Pork people of the world are ticked off that they are calling it that! Elder Hillary commented that as he looks out his apartment window into Juarez..... ya - let's just stay in your apartment today son! He' s a sweetheart and he is so very concerned about his companions scattered around Chihuahua (so are we actually - I'm not cold hearted ok?) El Paso boarders Chihuahua (seriously geography nuts) and there is just a tad bit of havoc going on everywhere. I do believe that Mission Presidents get the big picture - and I have come to trust them in every way - except Ryan's is in Arizona and he's in Texas! I sing loudly, (everybody sing now) "Find a pretty face mask, put on your nose there, never let it fly away" I think I'll go and find some Celestial facemasks at Deseret Book (they've made plenty of room there now that they've pulled the Twilight books), and perhaps some berry scented skin sanitizer... I just know that someone is grasping the market on that one. Gotta go - feeling kinda queezy... ew... pork samie anyone?

So I just thought I would drop in some proof that our Friday
at BYU Graduation was splendid.
There were also adventures in food at Brick Oven,
2nd Sunday Dinner at home, and also waffles on Sunday night.

I really wish I could say that we acted respectfully,
and we were very reverent,
but I cannot tell a lie.

We decided to cheer for anyone with a first name of anyone in our family. Oh how I wish I had a cow bell. We also decided that if Mike and Ashley figure out how to make babies by the time Ashley graduates with her Masters from the U of U (Bach from BYU) that we will paint her tummy white - and put a big Y on it and when she walks across the stage she'll show her tummy off. Now you could NEVER pull that off at the Y, but the U? It's usually a welcome change. Bethany's Graduation was at 8 AM, it was wonderful - Michael Wilcox was the speaker and wow was he amazing. Then we made a mad dash home to run errands and then returned back at the Y for Matt's graduation at 5:00 PM. We all missed Ryan - the Texan Missionary Man, but other than Ryan - our whole family was there! Even Bethany's mom and Grandma came to Matt's Graduation! Rock out with the "We Are Family" disco version! One day we'll show Andy these pictures and tell him about how we miss most of it because we were playing with him! (Sssssshhhhhh don't tell!) I just wanted to thank my kids for making it possible to attend, and for those that attended, and for those people that came into their paths to make so many years of schooling - so memorable. We are so very proud of you. Next Spring? Ashley (U of U Masters,) Mandy, Ryan M (Both BYU Bachelors), Katie Bowen (Mountain Crest) and Katrina (Bethany's Sister)(BYU Bachelors) will graduate - we're going to really need a plan to make all of those! WHA HOOO!! (I think Dad needs to get his PhD - his kids have caught up with him!) (I still don't know what I want to be when I grow up) (Can you get Peter Pan on the phone for me...)

I Love Hailey

Last week in Sacrament meeting I sat next to a little girl that I adore. Hailey. She was dressed in a black and white polka dotted Easter dress and her beautiful blond hair was shiny and curled. The Bishop announced that the Achievement Day girls had made the bread for the sacrament today and I, being an ex-achievement day person thought that to be a wonderful and sincere idea... Hailey passed me the bread during the sacrament and said, "I helped make this bread", with the sweetness of an angel. I said, after taking a piece, "Wow - that's really good Hailey - thank you for your kind service!" A little later on she leaned over and said, "It's better hot with butter and honey." To that I say, "All those in favor show with the uplifted hand" I love you Hailey!

PS Jenn - I don't consider you my friend just for any old reason - I consider you my friend for many many many reasons.... Hailey is just one of my favorite reasons.... Don't let anyone steal your sunshine!

It was so much easier when they were younger!
These innocent stickers are now under my counter, on
my counter, on my pictures, and several other random
places, all left for me to find over the next 365 days,
the amount of stickers they had in package, minus the
dozen stuck to Mandy's eyelids.

Is it 'Friday' already?

Hot Cross buns have long been a symbol of Good Friday. Today they are sold in bake shops and supermarket bakeries throughout the Easter season. Each bun has an icing cross on top to signify the crucifixion. In England, they were once sold by street vendors who advertised their wares with cries of "Hot Cross Buns! "Hot Cross Buns!" Their street cries became a nursery rhyme....

Although they have been a Lenten and Good Friday tradition for centuries, Hot Cross Buns were not always associated with Christianity. Their origins lie in pagan traditions of ancient cultures, with the cross representing the four quarters of the moon. During early missionary efforts, the Christian church adopted the buns and re-interpreted the icing cross. In 1361, a monk named Father Thomas Rockcliffe began a tradition of giving Hot Cross Buns to the poor of St Albans on Good Friday. In years that followed, many customs, traditions, superstitions, and claims of healing and protection from evil and were associated with the buns. In the 16th century, Roman Catholicism was banned in England, but the popularity of Hot Cross buns continued. Queen Elizabeth I passed a law banning the consumption of Hot Cross Buns except during festivals such as Easter, Christmas and funerals.

I'm not Catholic but I do believe that I try to give a wonderful portion of my 'Friday Before Easter' and dedicate it to some good things. I admire my Catholic friends that made it through the Lent time and find their strength in their beliefs to be very refreshing. If I had participated in Lent - I would have given up complaining - so here is my list of 'non-complaining items'

1. Not complaining that my Visa just called me and said - you're over the limit - just how much do Peeps cost? Must send money right away.

2. Not complaining that I had tickets to take my mom to hear the MoTab Bells tonight and she chose to stay home and wave her arms in front of the people at the rest home that have their books upside down anyway.

3. Not complaining that there is absolutely no Pepsi in the house today.

4. Not complaining that I'm in a quandary about 'if I go to Wicked I'll be in trouble and if I don't go I'll be angry, and my Visa said - I probably shouldn't go.'

5. Not complaining that I have no idea how many people, if any, will be over for Easter Dinner and if I should use the old ham from the freezer or pluck a new one from the store.

6. Not complaining that my Grandson will be rolling his Easter Eggs in Washington.

7. Not complaining that my dad just keeps hanging on and I don't know why.

8. Not complaining that my mom keeps hoping that he recognizes her, and not being able to tell her that he doesn't and won't again in this lifetime, but she's beautiful and that would make anyone smile at her!

9. Not complaining that this 'picture of life' I've believed in, has some colors running here and there.

10. Not complaining ever that someone loved me enough to die for me, and believe in me, even when the road seems long and lonely.

Good thing I would only have to have lent once a year, I'm not very good at it. Gotta go make some 'Hot Cross Buns' Happy Good Friday.

Hot Cross Buns


  • 1/4 cup water - at room temperature or just slightly above
  • 1/2 cup lukewarm milk
  • 1/4 cup melted butter
  • 1 egg, lightly beaten
  • 3-1/2 cups all purpose flour
  • 1/4 cup sugar
  • 1-1/2 tsp. active dry yeast
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • pinch of ground cloves
  • pinch of allspice
  • 1/2 tsp. salt
  • 1/2 cup golden raisins
  • 1/4 cup finely chopped, mixed candied fruit

    glaze

  • 2 T. granulated sugar
  • 2 T. water

    icing

  • 1/2 cup Confectioners' sugar
  • 2 tsp. water

Preparation -
Place all the dough ingredients, except the raisins and fruit, in the bread machine pan. Set on the dough only cycle. Add the raisins and candied fruit at the bread machine's signal for adding extra ingredients. Remove the dough from the bread machine at end of dough cycle. Place it in a bowl, cover with a cloth and let it rest for 10 minutes.

**Divide the dough into 12 pieces. Shape the pieces into balls and place them 3 inches apart on a lightly greased baking sheet. Cover and let rise in warm place until almost doubled, about 45 minutes to an hour. Bake in a preheated oven at 375º for 15 to 18 minutes, or until light brown on top. Remove from the oven. Place the baking sheet full of buns on a wire rack to cool. Prepare the glaze, then spread it over the warm buns. Let the buns continue to cool on the baking sheet. When completely cool, fill a cake decorating bag, fitted with a round tip, with icing. Pipe an icing cross on each bun. Or... simply spoon narrow stips of icing, in the shape of a cross, on each bun.

**To prepare this recipe without a bread machine, use this mixer method -
Mix the yeast, 1 cup flour, sugar, salt, and other spices in a bowl. In a separate bowl, mix the milk and water together. Combine the dry ingredients mixture, the liquid ingredients, and the butter in a large bowl. Beat for 2 to 3 minutes at medium speed. Add the egg and beat 1 more minute. Stir in the raisins, fruit, and enough of the remaining flour to make a firm dough. Knead the dough on a floured surface for about 5 to 7 minutes or until smooth and elastic. Use additional flour if necessary. Place in a lightly greased bowl; turn over to grease the other side of the dough. Cover and let rise in a warm place. After about 15 minutes, test the dough to see if it has risen sufficiently and is ready to be shaped. To test, gently stick two fingers into the risen dough up to the second knuckle... take them out. If the indentations remain, the dough is ripe and ready. Continue to follow the preparation directions above, from the **.

The power of 'Joint Checking'

So checking Ryan's bank account today - realizing that it's nice to share the account - that way I can put $$$ in as he needs it. But then it occurred to me that I can track where he actually is that day by the McDonalds trail he's leaving behind from his Debit Card. Today - April 1st, (really, not even kidding)(and he was in Tucson just yesterday) he's in "Lordsburg", New Mexico. Hope they live up to their name on his first full day on the job! (Hope he got the Double Cheesburger) I have no idea when I'll hear from him next - no address, no p-day assignment, so I guess the Lord really does look out for Missionary Moms in some 'personal' ways. I believe he's to end up on El Paso - so I'll let you know when he stops at a bike shop!
