Birthday Cakes and Drive Ins

The birthday cake for my sweet Mazie who turned 8 this year. I think it turned out quite cute. I make a fun cake for my kids each year for their birthdays, this year I was having a hard time finding one that hit the spot. And then I came upon this adorably fun cake on the back of a cake mix box I just happened to have hiding in the cupboard and it was just the ticket.

An old American Pastime THE DRIVE IN. I believe it is on the endangered species list. But one is still hanging on-- the Motor Vu in Riverdale Utah. Why it's on the endangered species list I do not know. I mean really what more could you ask for in family entertainment. Adults get in for $7 dollars and kids 5 and older are $3 kids 4 and under are free. That is cheap real cheap. and you get 2 movies. To top it off you get to bring in as much food, drinks, candy and popcorn as you want, and fill the bed of the truck with blankets and pillows--talk about comfort. We took Mazie and a few of her friends there for her birthday. It was a blast!! My little man and my hubby were really outnumbered 6 to 2. So if you want a cheap family outing, my suggestion is the drive in. But be prepared for a really late night. Which made for some whiney kidos the next day. But worth it. Or get a babysitter for the kidos and rekindle the romance, think of all the possibilites that can happen in the back of a truck. :)

This weeks TONGUE TICKLER


A Little Piece of Heaven.... So Refreshing
Coconut Cupcakes with Lime Buttercream Frosting
adapted from Cooking Light
Cupcakes:
1 C. Flour
3 Tbsp. Potato Starch or Corn Starch
1 tsp. Baking Powder
1/2 tsp. salt
3/4 C. Sugar
2 Tbsp. Softened Butter
1 Large Egg
2/3 C. Fat Free Milk
2 Tbsp. Flaked sweetened Coconut
1/2 Tsp. Vanilla Extract
Frosting:
3 Tbsp. Softened Butter
1 tsp. Half and Half
1/2 tsp. Grated Lime Rind
1 Tbsp. Fresh Lime Juice
1 1/3 C. Powdered Sugar
Makes 12 cupcakes
Preheat Oven to 350
Line muffin tins with liners and spray with cooking spray
Weigh or lightly spoon flour into a dry measuring cup; Level with knife. Combine flour and next 3 ingredients in a small bowl; stir with a whisk
Combine 3/4 C. sugar and 2 Tbsp butter in a large bowl; beat with a mixer at medium speed until blended. (mixture will be the consistency of damp sand) Add egg and egg white, one at a time, beating well after each addition. Add flour mixture and milk alternately to egg mixture, beginning and ending with flour mixture. Fold in coconut and vanilla.
Spoon batter evenly into muffin cups. Bake at 350 for 18 minutes or until cupcakes spring back when lightly touched in the center.
To prepare Frosting:
Combine 3 Tbsp butter and next 3 ingredients in a medium bowl; beat with a mixer at medium speed until smooth. Gradually add the powdered sugar, beating just until smooth.

Taylor Swift and The Spaghetti Factory Can It Get Any Better Than This!!!

My friend Jamie took Mazie and I to the Taylor Swift concert for our Birthdays along with a big group of girls. First we went to the Spaghetti Factory for a delicious spaghetti dinner. Then we rode trax from trolley square to the Energy Solutions Arena for the Taylor Swift Concert. It was a blast. She really put on a spectacular show. Mazie Loves, Loves Taylor Swift. Thanks Jamie! That was an awesome time.

HoPpY eAsTeR!




Oh the joys of Easter! We attended Egg Hunt after Egg Hunt and my kids made out like bandits. Cache took the cake--At grandma's he got the egg with the $5 bill in it and at his uncle's he got 6 $1 bills. WOW! too bad I'm too old to participate in the egg hunt. What is the age limit anyway? I Love Spring!! When is it going to get here? It IS the middle of April, but the snow and the freezing temperatures are making it feel more like January.

Got Crabs?


We're Back!!! Lucky for you we left the crabs behind. This cute little bugger crossed our path on a hike up to the waterfalls. He is a fresh water crab isn't he cute. Speaking of Crabs--My next encounter happened while laying out on the sunny beach. (no its not those kind of crabs) and I don't know what's going on with my man's hand, he just couldn't keep them off my luscious bosooms. Anyway back to the crabs. I was digging in the sand with my feet, when I got about a foot down and felt something hard, so I kept on prying at it and prying at it. It was white and so I figured it was a rock or a piece of coral so I kept on prying at it with my toe until it finally surfaced and then it moved and I let out a blood curtling scream and a big crab ran toward the water with his pinchers a snapping. Needless to say everyone on the beach was laughing. It scared the crap out of me.



Coconut drinks a plenty--They are not very good.

Golfing in the Carribean! We had a lot of fun. Apparantly tank tops aren't part of the dress code, so I had to purchase this lovely yellow collared shirt so I could play. We were supposed to have collared shirts, golf shorts and golf shoes. But with a little fluttering of the eyelashes they let me play.


This is my man looking for his balls. He does that a lot while golfing. He has a mean right slice.

We had a really great time. I could go to the beach everyday and be happy. Why do I live it Utah? It's freezing here. I will probably post some more fun pictures when I get them. The group I went with are collaborating all the pictures from everyones camera, So I am sure their will be some really great funny ones. I will post some more soon.

Sunny Beaches Here I Come!!!


The countdown is on until I am sipping margaritas on the fabulous beaches of the southern carribean. First stop Puerto Rico, then St. Thomas, Dominica, Barbados, on to St. Lucia, Antiqua, St Kitts and back to Puerto Rico. 9 days total of Sun, Margaritas, Sun, Margaritas and more Sun. If you have been to any of these places and have some suggestions of fun things to do or not to do I would love to hear about them. I can hear the margaritas calling my name right now.

Dance Baby Dance

The night before the recital! That's right those are the infamous sponge rollers. Remember those? Now I know why my mom put me through such torture. Don't they look adorable. and here they are getting ready for the big performance...
