Ice Cream Sandwich Dessert

Ice Cream Sandwich Dessert

16-18 ice cream sandwiches
12 oz fudge topping
16 oz cool whip
1/4 C. Chocolate syrup
Chopped Heath Bar

Lay 8-8 sandwiches in bottom of 9x13 pan so that it is completely covered. Layer 1/2 fudge topping, and 1/2 of cool whip. Layer remainging sandwhiches, fudge and then cool whip. Top with chopped heath bar and drizzle with chocolate syrup. Freeze at least 3 hrs before serving.

My Grandma

I just found out yesterday that my grandma has cancer. And not just any cancer. Pancreatic cancer that is not operable. It's a strange experience having someone tell you that your grandma has 9 months to live.
My Grandma lives in Florida and I can probably count on my hands the number of times I've seen her. It's sad that I only have a few memories of her. She came to Medford when I was 12 or 13 for Keith's high school graduation. When I was 18 my mom and I flew to florida together to see her and my great-grandma. The other was at my wedding. I know I've seen her a few times other than that when I was younger, but those are all I can remember. How is it that I call her grandma but know so little about her, and yet love her so much? I'm so sad that she won't be here on earth much longer, but mostly I am sad that I didn't get a chance to know her better. I'm sad that it wasn't until after all of these thoughts came to mind that I finally cried.
I never want that to happen to Ava. She will know her grandparents. No matter where we live or how far away I will always make sure she knows them.
Grandma: Thank you for bringing into this world the most amazing mom I could ask for. I love you and will miss you.

Do Not Watch If You Have A Weak Stomache



When we were in Oklahoma we went out to dinner for Josh's birthday. Keith offered David $2 if he would put all of the fat from Shaun's prime rib in his mouth at once and eat it. I decided I'd give him $2 too. He took it. This is a video of his first attempt. The second attempt was even funnier. He never did do it but we gave him the $4 anyway for trying.

More Oklahoma Pictures

A few more pictures from our vacation to Oklahoma. Now hopefully it doesn't take me a month to get pictures from our trip back to the ranch!

I wanted to get a picture of Ava and Macy together so we squeezed them both into Macy's bouncer chair. Ava was totally out and I didn't see the need to wake her. Especially since she snuggles right into Macy. It was so cute!

I miss dairy

I've decided to try going without dairy for a few days to see if it helps Ava. Sally had the lactose-intolerant problem with Samm and has told me she might have it also with Macy. It got me to thinking...maybe that's whats wrong with Ava. So, after only 24 hours I already feel like I'm wilting away. EVERYTHING has dairy in it. It's ridiculous. I'm not sure going without dairy is even worth it.

Bring on the fussy baby! I want my girl scout cookie samoa ice cream!!!

Riding In Cars With Babies

Chris and I went back to his family ranch for the first time since Ava was born. It's a three hour drive that depending on weather and traffic in the mountains can turn into a 4 or 4 1/2 hour drive. Ava actually did okay. On the way there she slept for the first hour and a half. Then I fed her. She cried for the next half hour, and then luckily fell asleep until we arrived. On the way home she slept for two hours, I fed her, she cried for ten minutes, then slept most of the way home. It was as bad as I had anticipated it might be. It turned out to be a really fun trip and when I get a chance I'll post some pictures. Right now Ava is screaming and I think I better go try and save Chris.

Angel Chicken

Crockpot recipe's are my favorite. Just throw everything in and let it cook. I found this recipe in my ward cookbook. I love it.

3 chicken breasts
1/4 C. butter
1 pkg. Italian dressing mix
1 can cream of mushroom soup
1/4 C. Chicken broth
4 oz. cream cheese

Hot cooked angel hair pasta

Cut chicken into strips or chunks. Place in crockpot. Melt butter and cream cheese. Mix together with remaining ingredients. Pour over chicken. Cook on low 4 to 5 hours. Serve over hot pasta.

Recipe's

I am so bored with the recipe's I have. I make the same dinners, deserts, and other foods over and over again. I've tried looking at cooking magazines, etc. but it seems like all of their recipes call for crazy ingredients and are fancy foods that I would really never eat or make anyway. I want real recipes and that real people eat. So I've decided I'm going to start sharing recipe's on my blog in hopes that you all will share some of your favorites with me. I'm going to try to post a new recipe every week or two. I'd love for you to do the same!

This weeks recipe: I just tried this one for the first time yesterday. It was delicious.

Sweet Potato Bake

1 1/2 - 2 lbs sweet potatoes, peeled & quartered
2 eggs lightly beaten
1/2 C. granulated sugar
1/2 tsp. cinnamon, nutmeg, & vanilla
1/3 C. evaporated milk
1/2 C. brown sugar
1/3 C. melted butter
1 C. crushed cornflakes

Boil potatoes until tender. Drain and mash. Preheat oven to 350. Combine eggs, white sugar, cinnamon, nutmeg, and vanilla. Stir in mashed potatoes, add evaporated milk. Place in a baking dish. Bake uncovered for 55 minutes or until knife comes out clean.
Combine brown sugar and melted butter, stir in cornflakes. Sprinkle over cooked potatoes. Bake 5 to 10 minutes more.
