Ready for Summer!

It was a BEAUTIFUL day today! After our Opening Day festivities, we came home and played outside all afternoon. We are so ready for summer!

Today was Opening Day for Sealy Little League! Bailey is playing t-ball once again. The t-ball teams in our league are named after minor league teams...and once again, Bailey is on the Scrappers. What are the odds? Poor thing has to wear the bull dog shirt again this year!

Bailey's Haircut

I can count on one hand how many haircuts Bailey has had in her lifetime. Four. And they were all just trims. Recently she has expressed an interest in getting her hair cut shorter. I tried to ignore her for a while because I love her long locks! But I didn't want to be THAT mom. You know, the one that's attached to her kid's hair. More so than the kid is! So when we took Campbell to get his hair cut one day during Spring Break, and Bailey asked if she could get hers cut too, I said yes. It didn't take much convincing...I knew how much she wanted to do it. I did have to tell the hairdresser how much to cut or Bailey would have had her cut it much shorter! I may or may not have shed a tear as those beautiful locks fell to the floor. As much as I mourn her long hair, she looks too cute with it short(er)! She looks older too!

Twenty (thousand) Questions

Campbell is our analytical, inquisitive child. He always asks a million questions! It's amazing how different he and Bailey are. She is quite content with the information we give her and asks very few questions. Not Campbell! Tonight on our way home from Katy, our conversation went like this:

C: Who doesn't go to heaven?
Me: People who don't believe in Jesus. They don't believe that Jesus loved them and died on the cross for them.
C: What does die on the cross mean?
Me: Well...people killed him while he was on a cross.
C: Who killed Jesus?
Me: Ummm....people who didn't like him. Do you believe in Jesus?
C: Yes, I do! But he's dead.
Me: Oh, but he didn't stay dead! After he died, they put him in a tomb, like a cave, and three days later he rose again.
C: What does rose mean?
Me: It means to go up. He went up to heaven.
C: Who took him to heaven?
Me: God did.

And just like that, he changed the subject...

C: What is Bailey's big doll's name?
Me: Thomas? He's my baby doll. I got him in New York right after I got married. (I got a Cabbage Patch from the Toys R Us in Times Square while we were on our honeymoon.)
C: Did you wear your wedding dress?
Me: No.
C: Where did you put it?
Me: At the hotel.
C: Where were me and Bay-Bay?
Me: You weren't born yet.
C: I know...somebody babysitted us.
Me: No, you weren't born yet.
C: Where was I?

Sometimes he wears me out, but I LOVE this about him. I hope he keeps asking questions and never stops learning!

Happy St. Patty's Day!

To us, St. Patrick's Day is just another day to wear our Baylor green and gold! We also made some green treats to enjoy.


Green Velvet Cupcakes
Makes: 24 cupcakes
Ingredients:
2½ cups cake flour
1½ cups sugar
1 tsp. baking soda
1 tbsp. cocoa powder
1 tsp. salt
2 large eggs
1½ cups vegetable oil
1 cup buttermilk
2 tbsp. (1 oz.) liquid green food coloring
1 tsp. vanilla extract
1 tsp. distilled white vinegar
Directions:
Preheat the oven to 350° F. Line cupcake pans with paper liners. In a medium bowl, combine the cake flour, sugar, baking soda, cocoa powder and salt; whisk to blend. In the bowl of an electric mixer, combine the eggs, vegetable oil, buttermilk, food coloring, vanilla and vinegar. Beat on medium speed until well blended. Mix in the dry ingredients on low speed and beat until smooth, about 2 minutes.
Divide the batter evenly between the prepared liners. Bake, rotating the pans halfway through baking, until a toothpick inserted in the center comes out clean, about 18 minutes. Let cool in the pans 5-10 minutes, then transfer to a wire rack to cool completely.

Vanilla Cream Cheese Icing
8 oz cream cheese, softened
1/4 cup (half a stick) butter, softened
2 tablespoons sour cream
2 teaspoons vanilla extract
16 oz powdered sugar
Beat the cream cheese, butter, sour cream, and vanilla until light and fluffy. Gradually beat 1 box (16 oz) powdered sugar on medium speed until smooth.

San Antonio

We were so excited to be returning to our old stomping grounds. We had planned several fun things to do while we were there, but all of them were outdoors. With the cold and wet weather, we had to adjust our plans.

On Friday, instead of going to the Natural Bridge Wildlife Ranch, we went shopping. We had to get Bailey some closed-toe shoes and tights and I had to get a long-sleeve cardigan because it was so cold. Then we went to the movies and saw The Lorax and ate lunch at Alamo Cafe - our favorite! We had plenty of time to go back to the hotel to get ready for the wedding.

On Saturday, we braved the weather and went downtown to see the Alamo. It was the first time we've taken the kids. While we were inside, Bailey asked a lot of questions about the battle so we had a little Texas history lesson. Campbell asked, "Who's Santa Banana?" Awesome!

Sara & Andy's wedding

This weekend we had the privilege of going to San Antonio to be a part of Sara and Andy's wedding. Sara was a student in our youth ministry when we lived there. Judd was honored to perform the ceremony for them. Despite the weather (temps in the 40s and rain), the wedding was beautiful!
