This is Kevin's absolute favorite cake. I had a once upon a Family party last night and this is what I served. The kids were so excited that there were some left for them and so was Kevin. Thanks Mom Staples for welcoming me to the world of pumpkin and chocolate. I love it.
Here's the Recipe
Beat - 4 eggs, well
Add - 2 cups pumpkin (I use 1 15 oz. can)
1 cup oil (I use 1/2 the oil.)
1 1/2 cups of bran flakes
Mix, then add - 2 cups flour (I use 1 cup of wheat and 1 cup of white)
2 cups of sugar (I use 1 1/4 cup of sugar)
1 tsp. soda
2 tsp. baking powder
1 1/2 tsp. cinnamon
1/4 tsp. all spice and ginger
1/2 tsp. salt and cloves
Stir just to mix
Stir in 1 1/2 cups of mini chocolate chips
Spread in a 10" greased tube pan. ( I also flour it.)
Bake 1 hour 10 minutes at 350 or until done. (Mine took an hour)
Cool completely, remove from pan. I sprinkle confectioners sugar on top.
Yummy!
