Eggless Cornmeal Bread / Buttermilk Cornbread / Eggless Cornbread

Cornbread is a very popular breakfast in the US.. It is made on the skillet or baked in the oven and served as breakfast. It is quite simple to do and very delicious.. I baked this in a 8 inch square dish and the height of the bread was about 1 1/4 inches.. You will get a taller one if you choose a smaller pan. You can also bake these in muffin tins. I got this recipe from allrecipes.com and made a few changes..

Homemade Cream Cheese

Cream Cheese is a delicious condiment served along with bagel and crackers. It is also used as an ingredient in making deserts like Cheesecake and Mousse. I got this recipe from Gayathri's blog and with only 2 ingredients, this is surely a keeper recipe.

Bagel

Today's bake is a very famous type of bread called a Bagel. I love these with cream cheese.  Bagel is a traditional bread originated from Poland which is shaped by hand into a ring, poached and then baked, The toppings are a personal choice. Common toppings are sesame seeds, poppy seeds and rolled oats. I got this recipe from here. How does a good bagel taste – it should have a crust exterior, chewy interior and will have a light pull.

Vegan Chocolate cake recipe is a simple and easy cake which has no eggs or dairy products. This recipe is for a single layer cake with no frosting and make a 9 inch round cake. This is a healthier cake when compared to the regular chocolate cake but very hard to tell a difference.

Baked Potato–Breakfast Recipes

Cranberry Corn Muffin–Eggless and Butterless

Today's recipe is a muffin which is not too sweet and has an interesting taste from the corn meal and also a tang from the cranberries. Do you like fresh cranberries??? I am not a big fan of it.. But I love them dried.. But I love fresh cherries and prefer it over the macerated ones.. I always have a pack or two of various dry fruits in my pantry. The original recipe here calls for fresh ones but I have used the dried ones. I have also substituted the egg in the original recipe with flax seed meal. Go ahead and use the fresh ones if you like them and also can find them else can use the dried ones like me...

Eggless Chocolate Chip Cookies–Eggless Cookies

Chocolate chip cookies are one of the most favorite and also popular variety of cookie. What is the difference between a biscuit and a cookie? You ask this question and you get different answers from different people. To me, cookie is more softer and chewier but a biscuit (that we get in India) is more harder and crispier. My daughter loves to read Dora stories and one of the stories have Dora's  mom making her Chocolate Chip Cookies and sending it with Dora when she goes to meet a friend. Now my daughter wanted me to make the chocolate chip cookie. So that was when I made my first try on these delicious, mouth melting and soft chewy cookies. I picked up this recipe and did make a few changes. My daughter was very happy with the cookies, so I have made this a few times now and it goes off in minutes before I could take as many pictures as I want!!!

Potato Chips

If there is one type of food which is enjoyed in many parts of the world, then it has to be chips.. Ranking top on junk food, these are irresistible and a lot of times you cannot stop with one.. There are many branded chips available, but make them at home and make it even more irresistible. I have tried the baked version here, but this one is the sinfully delicious fried one. You can add any seasoning powders of choice, but I kept it simple this with just salt and chili powder.

Eggless Black Forest Cake - Eggless Cakes

Are you like me who WAS not very comfortable with icing cakes as you feared that it will not look perfect or professionally done.. Then this will be a perfect cake to practice your icing skills and also not be afraid as it will look great and so much professionally done. This was the first cake I did icing and now I tell everybody who is scared about icing to try this cake first as it is very easy. The amount of cherries, cream, sugar is personal choice. You can add more or less.

Almond Truffles

Here is another easy recipe which takes resting time, but preparation time is so less and also so simple.. You need only 4 ingredients and this will be a great crowd pleaser.. You could use any nuts in place of almonds, but I love the combo of almonds and chocolate… Instead of adding the almonds to boiling water, you could also soak the almonds overnight and then peel them. There are so many versions of this on the net and this is my way..

Chocolate Dipped Strawberry

Some items are so easy, that you do not make note of the recipe, but you forget how easy they are and search for the recipe.. Same happened with me for the Chocolate Dipped Strawberry.. It was strawberry season and fresh strawberries were welcoming us into the grocery shops.. It would be almost a sin that you do not buy these beautiful fruit.. So tempted to buy these, I got a large quantity and made Jam (yes that is the first one I make when I have loads of fresh fruit) and now wanted to make something with the remaining fruits.. I remembered the chocolate dipped strawberry I made long ago and wanted to make it.. I remember it was so easy that it hardly took 10 minutes to make it.. But I did not have the recipe written, reason was - it was too simple.. Now I did it again, but this time, made sure that I am writing it on my blog for me to remember..
We can eat strawberry as is, but add chocolate and it looks even more inviting.. You could also make designs with this.. Sorry I was in a hurry and did not take the photos with the designs.. Next time.. So to the basic recipe now

A delicious accompaniment which is so popular in many parts of the world. Although this is quite popular, it is considered not so healthy. To me the reason is double frying. This is a great accompaniment to Burgers, makes a great evening snack. Serve it with ketchup and you cannot stop with one!!

Applesauce Pancakes

Applesauce pancakes is a very delicious and quick breakfast.. This should be served warm or hot and not on room temperature.. Next time planning to make this with whole wheat flour instead of all purpose flour and honey instead of sugar. This is a very quick breakfast and can be done in less than 10 minutes from start to finish..

Eggless Sugar Cookies / Old Fashioned Sugar Cookies

Some goodies are so sinfully delicious!!! Yes this is one of them!! So butter, so much sugar, but so irresistible!! Love this crunchy and delicious sugar cookies which are so easy to make and also looks so beautiful… It was my choice from the cookies that Priya gave us for this month’s HBC. The original recipe had eggs and I replaced it with Flax seed

Creamed Corn

The creamed corn is a rich and delicious recipe I saw in one of my favorite cookery show by Alton Brown - Good Eats. It is very flavorful, quick and yet silky and delicious.. To make this less rich, substitute milk for cream. One can also use other herbs instead of Rosemary. One point to note is – just bruise the rosemary and NOT CHOP INTO PIECES. I learnt it the hard way. Also when removing the kernels from corn, knife should be facing towards the board or you will get corn milk facial. The recipe yields 3 cups of the creamed corn.

Eggless Jam Swirled Muffins / Eggless Nutella Swirled Muffins

Want a breakfast or food on the go in a jiffy? I am sure a lot of us say yes.. These muffins are so perfect for it. A delicious and very pretty looking muffins was suggested by Priya for this month's Eggless Baking Group which is started by Gayathri. It was a quick and easy one and you get a lot of points for those swirls. Wanted to get the picture with the muffin opened (like the interior), but it was gone by then!!! The original recipe had eggs and I replaced them with Egg replacer and little extra baking soda

Eggless Donuts–Deep Fried

Many foods make us drool and only a few recipes are drool worthy while they are being made. Visiting donut factory where you can see the donuts  being shaped, proofed, coming in line to get deep fried and turn beautifully golden and then jump into the silky sugar syrup is a treat to watch. And the best part of you getting to choose from the fresh hot ones – awwww that is so out of the world.. Warm and delicious donuts in hand.. So how much tastier will it be when you can do this factory at home… The answer is – even more exciting and even more delicious.. Garlic Croutons

I love the small piece of bread that is served in the soups and salads.. It adds a nice crunchy texture and delicious flavor to the soup or salad.. I actually eat them as is sometimes!!! A crouton is a small piece of sautéed or rebaked bread, often cubed and seasoned, that is used to add texture and flavor to salads and soups, or eaten as a snack food. The word crouton is derived from the French crouton, itself derived from croûte, meaning "crust". Croutons are available ready from the market, but homemade is very easy and also different flavors can be tried at home.

Mashed Potato

Mashed Potato is a very famous American side dish. For best consistency, use two types of potatoes. Russet potatoes are high starch potatoes and red potatoes are low starch potatoes. A combination of the two is great which gives creamy and also fluffy texture. This can be made a lean one by substituting milk for cream. If you cannot find 2 types of potatoes, you could use the baby potatoes and the normal potatoes as they have different levels of starch..

Applesauce Breakfast Bread

Applesauce Breakfast Bread is a great and sweet bread that is perfect for a snack or for breakfast. I did not add any nuts, but will add next time. It was very very moist and sweetness was just correct. Served with honey was a pleasure to enjoy. I have used flax seed for egg substitute
