Potato Bajji - Indian Snacks

Bajji is a famous snack in South India. It tastes best when served hot. Bajji can be done with a variety of vegetables like Potato, Carrot, Brinjal (Eggplant), Snake gourd, plantain, bell pepper, onion, bottle gourd, chili etc. Famous ones are potato, chili, plantain and onion. Adjust salt and chili powder to taste.

Onion Pakoda

Pakoda is a famous snack in South India. It tastes best when served hot. This is a regular in our house as it is one of the most favorite snack / tiffin, but never get a chance to click as it is mostly done while I am cooking itself.. By the time I am done with final round of frying, the earlier rounds of pakoda are over. Even today, I took the clicks in a hurry and hopefully I will be able to do the justice on photo for this delicious pakoda. Adjust salt and chili powder to taste. You can make many varieties like cashew pakoda, mint pakoda, masala pakoda etc.. Today my choice is the very famous onion pakoda.

Potato Chips

If there is one type of food which is enjoyed in many parts of the world, then it has to be chips.. Ranking top on junk food, these are irresistible and a lot of times you cannot stop with one.. There are many branded chips available, but make them at home and make it even more irresistible. I have tried the baked version here, but this one is the sinfully delicious fried one. You can add any seasoning powders of choice, but I kept it simple this with just salt and chili powder.

Parupu Bonda

For this week BM we will be seeing a variety of snacks starting with a type of Bonda today. Fried items are many people's weakness.. You can just stop with one.. Same holds true for this delicious bonda. This bonda is made with a variety of lentils (parupu) along with spices ad herbs.

A delicious sweet that is prepared for Diwali.. This recipe will make 12 - 16 medium sized somasi and there will extra filling, that you can eat as is or as a stuffing for parathas..  This is a traditional sweet!!!

Mullu Murukku–Indian Snacks/ Indian Savories - Diwali Recipes

Mullu thenkuzhal is a savory which is a famous South Indian snack. It tastes best when served warm or at room temperature. It goes well as an accompaniment with coffee or juice. This is a quick savory and can be done in less than 30 minutes. This can be stored in an airtight container for at least 2 weeks. This variation is used in occasions like marriages, festivals and celebrations.

Kala Jamun / Kaala Jamun - Uttar Pradesh

Come and visit the state of Uttar Pradesh. Uttar means North and Pradesh means place.. So come to the state which is in the Northern part of India. Uttar Pradesh was home to the very powerful empires – Magadha, Mauryan, Gupta etc. If you read Indian history, you will surely read about Uttar Pradesh. If you read Indian Ethics, then also you will come to Uttar Pradesh which has Mathura city. If you are tourist, one of the important places – Taj Mahal is here. Also two main Indian rivers – Ganga and Yamuna join at Allahabad and then flow as Ganga further east. Coming to today’s recipe it is a delicious sweet which is so tasty and authentic. I got this recipe from a few places on Internet. Some websites tell to add sugar to the dough, some do not. I chose the option of adding the sugar to the dough as it will give a caramelized sugar taste and also helps in browning better. Make sure you have the oil on low medium or the inside will remain uncooked.

Gulgula / Gulgule –Chhattisgarh Cuisine

Today we travel to Central India to the State of Chhattisgarh. Chhattisgarh is a newly formed Indian state and was born on November 1st, 2000. Chhattisgarh is known as the rice bowl of India and has a rich varieties of rice and rice based dishes. A lot of the traditional foods are prepared with rice, rice flour, curd and green leafy vegetables. When coming to sweets, Gulgula is one of the popular sweets from this state. I got this recipe from here. A delicious sweet from the state of Chhattisgarh. This is so quick to make and also very delicious…

Then Vadai / Sweet Medu Vadai

Vadai is my favorite deep fried item.. So perfect for tiffin or for breakfast. This is the sweet cousin of the Spicy Medu Vadai. This gets its taste and sweetness from the honey added. You could add more honey if desired. I saw this in a TV show and loved it.. It will be in darker color compared to its spicy cousin due to its sugar content..

A delicious accompaniment which is so popular in many parts of the world. Although this is quite popular, it is considered not so healthy. To me the reason is double frying. This is a great accompaniment to Burgers, makes a great evening snack. Serve it with ketchup and you cannot stop with one!!

Malai Kofta / Malayi Kofta

Malai Kofta is a very rich and creamy Indian Side dish. It tastes amazing when served hot with roti, naan or paratha. Malai means cream and kofta defines the shape.. You can make this less rich by substituting milk for cream and water for milk. But indulge in this with this creamy and silky way and you are sure to try them again soon…Also add the koftas just before serving or they will become soggy. Stuffing is a personal choice, but paneer and potatoes need to be there. This is a dish which can go wrong easily if there is excess moisture in the balls. Make sure that the balls are dry. Also when frying the balls, add one ball and see if it comes perfect fully before adding more. If it breaks open in oil, then it has moisture, so add more flour and fry again. Lavang Latika / Labongo Latika

Lavang Latika, known by several names like Lavanga Lata, Labongo Latika etc is a very delicious and flavorful sweet.. It is a small pocket filled with mawa, sugar and nuts, deep fried in oil and coated with sugar syrup. They look so cute from their tiny pocket appearance with the clove acting the beautiful and elegant accent to the bag... I have bookmarked this sweet from a cooking show sometime back, but never got to try it until now when Sanoli announced it as a challenge for this month’s Southern Team of SNC which was started by Divya and I am so happy that I finally made this…This makes 20 pieces.. The flavor of the clove, the delicious filling and a lightly crispy outer with a  sugar coated exterior makes this delicious sweet..

One of the famous breakfast is Puri and its delicious combo, the masala.. A very simple, quick and easy one to do and tastes so delicious... It can be accompanied with Aloo Masala, Channa Masala, Peas Masala or simply milk.

Samosa is a very famous Indian snack which has an outer layer with stuffing and then deep fried. It makes a great afternoon snack and goes well with Tea. The stuffing of the samosa can be adjusted accordingly to taste and preference. You can serve these as is or with spicy chutney!! SO yummy!!

Kaara Boondi–Indian Snacks

You have seen me in lot of foods, but generally I go unnoticed.. Who am I? One of the answers is Boondi.. It is tiny little balls golden in color that is added to many items like Mixture, Chaat items, raitha, Chivda etc.. Kaara Boondi is a very famous snack that can be eaten as is, with curd as Boondi raitha or on top of various chat items. It is a quick and easy recipe which needs very less ingredients most of which are in most pantries. I enjoy kaara boondi as is.. It is a pleasure to keep munching these cute tiny golden balls.. So yummm

Adai Kunukku

You grind a batter and it comes for more than a day, then you now have batter lying in the fridge waiting to be reused. People are bored to eat the same adai couple of times within a week.. We need a transformed recipe which uses the batter and presents in a very different way.. Here is the answer.. Adai Kunukku is a simple dish made from leftover adai batter. It is very tasty and a great use of the leftover. It can be served as a light tiffin or snack. It tastes best when served hot with spicy chutney or sauce. If the batter is not very thick, add 1 table of rice flour + besan  + corn flour. You can also add just rice flour and kadalai maavu, but I added corn flour for extra crispy flavor and texture.

Fried Onions–for Biryani

I love shopping for cookware but not for food that I can do at home.. For me if it can be made at home, I would not prefer to buy it.. Most of the times, I see people buying instant stuff, breads, jams, I feel so uneasy like.. One such thing is this fried onions. It is used in a lot of Biryani and gravy preparations.. So Fried onions, as the name says it is frying onions in hot oil and you get it, but yes as simple as it, you could also make it inedible.. Issues that could come are soggy onions, Onions that are charred etc.… Follow simple rules and you get it right.. I got this one from here and I have it done it few times now.. Channa Jalebi / Paneer Jalebi

For this month's SNC Chandrani of the North team challenged us South Team with a delicious Bengali Sweet. West Bengal is very famous for its milk sweets. This jalebi was literally mouth melting.. Little different than the regular jalebi and you can play with the shapes.. I made the standard round shape.. It was delicious and we all enjoyed it. Thanks to Divya and Chandrani for this delicious challenge. I am also sharing this for BM with Sweets from Bengal (Course wise meal from any state).
