Kanchipuram Idli / Kancheepuram Idli

Today we travel to the temple city - Kanchipuram. Kanchipuram is very famous for Silk Sarees (called Kanchipuram Pattu), temples, rich tradition and culture and food wise, this delicious idli. It has a beautiful aroma from the dried ginger powder and other spices. The recipe today is the very famous idli from this city. This is a very authentic recipe and has its unique taste, appearance and flavor..

Jal-Jeera / Jaljeera / Jaljira–Spiced Indian Drink

Today I am bringing a delicious and tongue tickling drink.. It is Jal-Jeera.. Jal means water and jeera is cumin seeds.. This is a very popular flavored drink in India and I got this recipe from here and changed very little.. All of us enjoyed this drink and it was so refreshing and energetic

Spinach Mini Quiche w easy Crust / Mini Quiche with Crust / Eggless Quiche / Eggless Mini Quiche

Quiche is one of the recipes that I have not tried due to high amount of eggs in it.. Today I am sharing a delicious Quiche which is completely egg free.. So was this easy to do?? Yes and No.. The reason was I did mini quiche in muffin tin which does not have a loose bottom.. So had to research quite a lot to ensure that the base does not crack and also comes out clean.. I used the base recipe from cooks.com and the filling was my own.. The crust was so beautifully flaky and soft which is an interesting texture...

Bread Pizza Cups–Muffin tin recipes

Bread is an universal food and there are lots of dishes using it.. Dishes can be a very simple bread jam or a delicious bread pudding.. Today we are going to be seeing the bread in cute cup form.. Now like yesterday's recipe, today's recipe is also a different use of muffin tin rather than the regular muffins or cupcakes.. These bread pizza cups are so versatile and are sure to impress kids and adults.. They are perfect for parties, potlucks, as an evening snack, a quick bite etc..I got the idea of making the bread pizza cups from rakskitchen. Filling is a personal choice. You can bake the bread cups separately and add sundal or sprouts as a change.. You could also fill them with fresh fruits and whipped cream.. yummm.. The taste is very similar to the Bread Pizza I make..  This Bread Pizza Cups should be served hot hot!!!

Kambu Semiya Upuma – Millet Recipes

With the New Year brings New Year resolutions and a lot of people have “Eating healthy” or “Weight Management” as part of their resolution. Here I am with a recipe to help….I love visiting shops that healthy items like millets, many types of rice, many types of flour etc.. We learn so much about the ingredients available for us. But a lot of ingredients are new and unidentifible. I remember seeing black rice for the first time and did not even recognize it, but I was surely fascinated by it. Recently I saw various types semiya made with millets like semiya made with Kambu, Ragi, Whole Wheat. I once saw a TV show where they did upuma with Kollu Semiya. It was very similar to how I do with Ragi Semiya. Now I have tried Ragi semiya and it was delicious. Today I tried Kambu Semiya and it was even more tastier. Cut the vegetables and you have the delicious upuma ready in no time... This will serve 3 - 4. Kambu is Bajra in Hindi, Pearl Millet in English, Sajjalu in Telugu. Try this for a healthy breakfast or evening tiffin and you will be happy you did!!

Vegetable Momos–Sikkim Cuisine

Sikkim is a North Eastern state of India which is located in the Himalayan Mountains. Sikkim is surrounded by Nepal to the west, China's Tibet to the North and East and West Bengal in the South. Sikkim is the second smallest state in India and is the least populated state in the Country. Another interesting fact about Sikkim is that it has 11 official languages. Coming to the Sikkim cuisine, dishes like thupka, chowmein and momos are popular here. From wiki - "Noodle-based dishes such as thukpa, chowmein, thanthuk, fakthu, gyathuk and wonton are common in Sikkim. Momos – steamed dumplings filled with vegetables, buffalo meat or pork and served with soup – are a popular snack.[105] Beer, whiskey, rum and brandy are widely consumed in Sikkim,[106] as is tongba, a millet-based alcoholic beverage which is also popular in Nepal and Darjeeling. Sikkim has the third-highest per capita alcoholism rate amongst all Indian states, behind Punjab and Haryana." Today I have chosen Momos with a vegetarian filling. You could use this same filling for making spring rolls also. These Momos are addictive and you cannot stop with one.. This is definitely a healthy snack which has lots of veggies, very less oil and also this dish is steamed. I served these delicious Momos with Spicy Garlic Tomato Chutney..  I got this recipe from here and made few changes.. This recipe yields 12 momos

Shikanji / Shikanjvi - Madhya Pradesh

Today we are visiting the state of Central India. Madhya means middle and pradesh is place and I believe that the story behind the name of the state - Madhya Pradesh. This is a very refreshing and delicious drink. It is scotching summer here and what a better way to beat the heat other than a refreshing juice.. So chilling!!! I got this recipe from here. Shikanji is also popular in the neighboring states of Maharashtra, Punjab, Himachal Pradesh also.. Since it is a simple post, I have shared some tricks of serving the juices in my post..

Oats Wheat Rava Idli / Oats Cracked Wheat Idli

Oats Wheat Rava Idli is a quick and easy breakfast or tiffin item. It tastes best when served hot and best accompanied by Sambar, coconut chutney or tomato pickle. This resembles and also tastes like rava idli, but has a lot of goodness attached. A guilt free food. I got this recipe from here.

Veg Hakka Noodles

A very delicious and spicy noodles. Noodles and fried rice and so dear to kids and teens. They are also very popular among adults and Indo Chinese food is the next popular food on the menu after the Indian food in restaurants. Before pizza and burgers came to fame in India, it was the Chinese food that became part of the restaurant menu.  I do not know if in China there is anything like this, but in India, Indo Chinese noodles, rice are very popular. Adjust the spice according to taste.

I made this spicy and yummy dum aloo to go with the delicious Kachori for the SNC Challenge. This is a great side for roti, naan, batura, rice and pulao..  I used regular potatoes, but feel free to use baby potatoes if you could lay your hands on them.

Schezhwan Chili Potatoes

Schezhwan Chili potatoes is a Indo Chinese dish. The most common fusion cooking in India is Indo Chinese and this mouth watering spicy dish will make the taste buds tingle. Serve this hot with rice or roti. You could also do this with Paneer or Tofu instead of Potatoes. I did this from a Sanjeev Kapoor Cookbook and am sharing this for BM#25 under Cooking from a book.

Mysore Bonda (மைசூர் போண்டா)

Mysore Bonda is a very famous South Indian snack or tiffin which tastes best when served hot with coconut chutney. Every time I hear or see Mysore Bonda, I remember a joke – “One person ordered Aloo Paratha and he checked if there is aloo inside it and then he orders Mysore Bonda and claims that the waiter has cheated him as there is no Mysore in it”.. I know it is a silly joke… But I always remember this jokeSmile
