Test Kitchen Tuesday

I tried a new recipe on the family a few weeks ago that I got in an email from Betty Crocker.  I wasn't sure what my husbands take on it would be at the time, but I went for it.  I got lucky and it was a hit all around.

I'm sorry I didn't take any pictures of it as I made it or the end product, but you can see them on the Betty Crocker website. I have also seen the recipe going crazy on pinterest as well.

Ok, are you ready?

Impossibly Easy Mini Chicken and Broccoli Pies (they really aren't pies, but it is a cute they were given)

For this tasty treasure you will need:

Chicken Mixture

1 tablespoon vegetable oil

1 pound boneless skinless chicken breasts cut into bite sized pieces

1 medium onion, chopped (1/2 cup)  I didn't use the onion in mine

1 cup chopped broccoli (can use frozen, thaw and drain well)

1/2 teaspoon salt (I ditched this too and didn't miss it)

1/4 teaspoon black pepper

1 cup shredded cheddar cheese (4 oz)

Baking Mixure

1/2 cup Bisquick baking mix

1 cup milk

2 eggs

Heat oven to 375 degrees and spray 12 muffin cups with non-stick spray.

In a skillet, heat oil over medium-high heat. Cook chicken in oil 5-7 minutes, stirring occasionally, until chicken is no long pink in the center.  Add onion; cook 2-3 minutes.  Add broccoli, salt and pepper, stirring occasionally, until mixture is heated through.  Stir in cheese.

In a bowl, stir baking mixture ingredients with a whisk or fork until blended.  Spoon 1 scant tablespoon of mixture into each muffin cup.  Top with about 1/4 cup chicken mixture.  Spoon 1 tablespoon of baking mixture on top of the chicken mixture in each cup.

Bake 20-30 minutes or until a toothpick inserted into the center comes out clean and tops are golden brown.  Cool 5 minutes and then loosen sides of pies from the pan with a knife.  Remove from pan and cool 5-10 minutes before serving.

My husband took the leftovers for his lunch and continued to rave about them.  These are quick and easy to make.

A tiny break from quilting

After I trimmed up 20 of the granny square blocks on Monday, I decided to take a small quilting break and make a summer outfit for my daughter.  I finished it up this morning, so now I can get  back to the quilting grind.

Spring and the craziness it brings and some sewing progress

Happy Monday!  I hope everyone had a great weekend.  The business of spring hit us this weekend as my son had his first soccer game for the season.  So we will be crazy busy the next couple of months, but to have a happy kid it is worth it.



I made a little progress on some projects last week and I am trying to set aside 1-2 hours each day to sew.  I squared up 10 of the 66 granny squares.  Here is my pile that I still need to tackle.


Another project that I am working on is a commission that a high school classmate of  mine has entrusted me with.  Her grandmother recently passed away and in her belongings she found 43 Sunbonnet Sue blocks that had been started and has asked me to finish them for her.   I am honored to do this so she has the memory of  her grandmother to cherish for years to come.



Yesterday was a beautiful spring day and we had the warmest temperature of the year when it hit 74 degrees.  We took advantage of the warmth and hit the park.



I think they were having a good time.  I never get good smiles out of them.


But before I can work on any sewing today, I must clear a space to work.

April Goals







I think I bit of a bit more than I could chew for March and lost my motivation half way through the  month.  I have put away all my 2" squares for now and will revisit them in a few months.  Right now I have picked up something that I actually feel is an attainable goal.

I have over 60 granny square blocks that have arrived in my mailbox from all over the world and they all need to be trimmed/squared up. I know I won't get them sewn together this month because I think there may be a few more come in, so I am going to wait until next month to even think about sewing them together.

Here are 2 of the blocks I made.  I can't wait to see the finished top.  I think it will be gorgeous!


I also have some summer outfits that I want to make for my daughter and possibly make some pull on shorts for my son.  He is a bit husky and short so finding things that fit him well is quite the challenge.  I'm so blessed to have been taught how to sew and have the knowledge and ability to make clothes for my children.
