shutterfly

well, here goes. the shameless post to get 50 free Christmas photo cards.

we have used shutterfly in years past to order our cards. i have to be honest, we ordered 2 years ago and hated the cards when they came in. we called {or e-mailed, i can’t remember which} and they were VERY gracious and happily re-printed our cards using a different design. they didn’t charge us any additional fees -- they shipped us the new cards with no cost to us. the 2nd design we loved! shutterfly has excellent customer service -- which is probably one of the main reasons we continue to use them.

along with our yearly Christmas card purchase, we also use shutterfly to order a photo calendar for my mother-in-law. this is one of her favorite gifts. she has already been dropping subtle hints to make sure we don’t forget this year! we {try to} take pictures throughout the year and combine them with pictures from reed’s sister to make the calendar. shutterfly allows you to save the dates for the next year so we don’t have to go back and add in the same birthdays/anniversaries every year. the first year took a little time, but now all we do is insert the pictures!

winter favorites

i saw this idea for a recipe exchange on another blog and i thought it was such a fun idea!  since the weather is finally starting to get cold i am "all in" for winter! {you like that not-so-subtle au reference?} 

it's easy to play along!
if everyone will post their favorite winter recipe on their own blog and then copy & paste the link to that post below we'll end up with a yummy list of recipes!  if you have a favorite recipe from another blog or website, feel free to link to that as well!!  the more recipes posted, the better!



here are two of my favorites:
chicken tortilla soup
{i got this recipe from another blog a year or so ago and have made it several times since!}

combine the following 3 ingredients in 2 tbsp extra virgin olive oil in a large pot and simmer until onion becomes transparent.

• 1/3 cup chopped onion
• 1 minced jalapeno, seeds removed (i use pre-minced in a jar and just add a very heaping tbsp)
• 1 tbsp minced garlic

add the following, bring to a boil, then turn down the heat and simmer 30 minutes.

• 48 oz container chicken broth
• shredded chicken - i use an already cooked rotisserie chicken and shred to bite sized pieces
• lg can of diced tomatoes (do not drain)
• lg or small can of stewed tomatoes (do not drain)
• lg can of whole kernel corn drained
• lg can of fresh cut green beans drained
*you can really add any vegetables or beans you would like

• 2 tbsp chili powder
• 1 tbsp cumin
• 2 tsp oregano
• 2 tsp ground red pepper
• salt and fresh ground black pepper

5 minutes before serving you can add fresh chopped cilantro if you have it and like the taste.  serve hot over tortilla chips and shredded monterey jack cheese! 

caramel apple pie
• 1 pre-made pie crust
• 1/2 cup packed brown sugar
• 1/4 cup butter, melted
• 1/3 cup all-purpose flour
• 5 cups thinly sliced apples (1 bag of granny smith)
• 2/3 cup white sugar
• 3 tablespoons all-purpose flour
• 2 teaspoons ground cinnamon
• 1 teaspoon lemon juice
• 20 caramels, halved
• 2 tablespoons milk

directions:
1. preheat oven to 375°F

2. to make taffy: in a small bowl combine brown sugar, melted butter or margarine, and 1/3 cup flour. mix well and set aside.

3. to make apple filling: place apples in a large bowl. add white sugar, 3 tablespoons flour, cinnamon, and lemon juice. toss until all ingredients are mixed well and apples are thoroughly coated.

4. spoon half of apple filling into pastry-lined deep-dish pan. top with half of caramels and half of taffy mixture. pepeat process with remaining apple filling, caramels and taffy mixture. place top pastry over filling and seal well {this is very important--if edges are not sealed, caramel will leak out all over}. cut steam vents and brush top crust with milk or light cream.
*i always put a baking sheet under my pie pan because i haven't perfected sealing the edges!

5. cover pie with foil and place on a baking sheet. bake in preheated oven for 25 minutes. remove foil from pie and bake for another 20 to 25 minutes, until crust is golden. Serve warm.

tiger bite

a few weeks ago, we woke up bright and early to fly to the coast for reed's cousin's wedding.
we landed around 10:30 and reed's dad came to pick us up from the airport.  we went straight to the hotel {which was absolutely beautiful!} and quickly changed clothes to head to the wedding day brunch.  after a delicious brunch we went back to the hotel and changed again for our next excursion. 

you see, i've always had this funny little dream of playing with a tiger.  i never knew when or where, but it has always been something i've wanted to do.  turns out, the zoo near the wedding lets you do just that!!  reed surprised me about 2 weeks ago and scheduled a time for us to go to the zoo and play with the tiger.  to say i was excited would be an extreme understatement!  i. was. pumped.  we got to the zoo a few minutes before our time and were waiting where the lady told us to wait when we saw the sweet little white tiger coming down the sidewalk on a leash!  i don't know how i expected them to get the animals around, but i didn't expect to see her on a leash! 
delhi had drawn quite a crowd at this point and had tons of little kids wanting to pet her.  her trainer motioned for us to follow her to a little playpen of sorts. 
we stayed in there for about 30 minutes just rolling around, playing with delhi.  we played with a tiger!  i still can't believe it!  there were 2 rules with the tiger: #1 no running  #2 keep a stuffed animal with you at all times.  we quickly found out the reasons for both rules.  if you run, she will chase you.  if you turn your back to her, she will, with out a doubt, pounce on you. 
yes, i fell victim to both things and ended up with baby delhi biting my leg.  it didn't hurt, but i did freak out because i started thinking to myself, "this is a tiger.  not a dog.  there is a tiger, biting my leg"  i have to admit, i'm pretty proud of my tiger bite.  i mean really, how many people can say they've been bitten by a tiger?
her favorite chew toy?  an elephant.  oh the irony. 
once we left the zoo, we went back to the hotel where the wedding was going to be.  i don't have any pictures of the wedding, but it was beautiful.  katherine was a stunning bride and her dress was beautiful.
after the wedding reception, we went back to the room to watch the end of the auburn-kentucky game.  the game was way too close for comfort, but in the end, auburn pulled it out! 
thankfully, reed's parents woke up early sunday morning to take us back to the airport so we could get home.

pregame

i can't believe i haven't posted this yet, but i made the pregame video for auburn!!

i feel i need to explain my crazy behavior.  the video was actually taken during the 2009 season at tiger walk.  we were all getting pretty hyped up and acting like typical {southern} football fans before a game.  a good friend of ours, jared, told me i better touch chizik when he came through.  so i did.  they caught it on camera.  now i'm the crazed fan trying to grab him as he walks by!

reed says i've now made the "auburn trifecta" because i've been on a game ticket {lsu to be exact}, been on auburn everyday {the tv show} and now the pregame video!!

while we're on the subject of football, i can't take many more games like the clemson games.  i care way too much about this silly sport.

meet molly

isn't she adorable?  we are completely smitten with her.  reed came home with her last thursday night while i was having spa night with some of my closest friends.  molly quickly became the highlight of the night when she came home!  it took us until friday morning to come up with a name, but in the end molly just seemed perfect.  she is 9 weeks old and quickly learning lots of new things. 


1st on the list was potty training.  she's on her way, but not there yet.  she goes to the door most of the time... we're just waiting on it to be all the time!  reed is teaching her to bring the paper inside in the mornings and she's actually done it the past two mornings.  she sweetly walks to the mailbox with reed, he shows her what to do and then she comes bounding in the house to give me the paper.  hopefully she'll pick this one up pretty quickly.

we had plans to be in cullman for most of the weekend so my sweet, sweet parents {thanks mom and dad!} watched molly while we were gone.  we came home saturday during the day and got to spend some good qt with molly, mia & tré.  tré kept wanting to carry her around by her neck like he does with mr. bear -- she suffered through it pretty well!  we started filling up the kids' baby pool at my parents and she just jumped on!! we're so excited she likes water and can't wait to take her to the lake!

they do exist...

for quite some time now {we're talking months} reed has asked every person we know about a shoe he called insta pumps.  he has insisted these things exist, yet not one single person has ever heard of them!!  well, i did a little googling and after a few clicks i found them.  the now infamous insta pumps really did do exist.  i apologize to my sweet husband because i have doubted these things from the beginning!  i mean really, a shoe that has a co2 cartridge, who would have thought?


to make it worse, they are making them again --a 20th anniversary edition!
{thankfully, i had already bought his birthday present before i found these beauties}

birthday weekend in review

i'm a few days late, but...
happy birthday reed!

we have had a busy past few days celebrating, but it was great!  reed's birthday celebration started on thursday when his division at work all went to eat lunch and celebrate.  friday {his birthday} we drove to cullman and had dinner with michael and shelley.  they have offficially moved and are living in their house, which i'm so glad we got to see.  it's very cute!!  we miss them tremendously, but know that God is using them in big ways at crosshaven. 

saturday morning reed and my dad took off on the motorcyles and headed down to the lake.  mom, melissa and jonathan left a little while later in the car and met them at the lake.  i helped host a baby shower for sabrina saturday morning {i'm soo excited for her and can't wait for lynlee's arrival!}.  after the shower i jumped in the car and headed to the lake to cook lunch/dinner for reed's birthday party at the lake.  after lunch we got in the boat {my favorite thing to do at the lake} and went for a ride.  we even found time to ski {which is quickly becoming my new favorite thing to do at the lake!} 

reed and i stayed at the lake saturday night.  we went to church in the pines this morning on the lake and then went to meet the ethridge's at their lake house for some more fun on the water!  reed and i did a little tubing {which is something we have never done together!} and now we both have "tube" burns on our elbows from hanging on so tight!  after a yummy lunch with the ethridge family we hopped back in the boat and headed back to the house to clean/pack up. 

to wrap up our awesome weekend we met our youth kids in linn park where we had water, sandwiches & popsicles to hand out to anyone around!  it was great to see the kids serving and even better was hearing them all talk about how they could make it better the next time we went!  reed and i thoroughly enjoy being with the youth and are so thankful God has allowed us to be a part of their lives.  He is doing big things in with our youth!

our sweet matilda

i haven't updated in a while mostly because i haven't wanted to write this post.  we experienced one of the saddest days in our lives 2 weeks ago.  our sweet puppy was hit by a car and it absolutely broke our hearts.  i know this may sound weird to some people, but she was a huge part of our lives.  she has been apart of our little family for 3 years and we are missing her tremendously. 


we had a very busy beginning to our summer and were in and out of town for most of june.  on saturday, july 3 reed was beginning to pack for yet another of those trips.  we decided to go get dinner before we went to see the fireworks that night.  we got home at 6:30 and matilda wasn't home.  i immediately went to the front and started calling for her.  reed noticed the message light blinking and there was a  message from a sweet lady asking us to call her. i did and she confirmed our worst fear in that moment.  matilda had been hit by a car on a major road near our house.  we are extremely grateful to the lady for taking the time to call us and let us know what had happened.  we immediately got in the car to go and find her.  when we found her she looked like she was sleeping {which she did about 20 hours a day!} 



the next few hours were spent with reed digging a grave for us to bury our sweet matilda.  we loved our puppy, maybe too much, but we know she was a gift.  the lyrics to one of matt redman's songs kept playing in my head:

Lord, blessed be your name.  as we were crying over our puppy, we were both very convicted about the thousands of men, woman and children who die every day without knowing Christ.  we had such an incredible experience in africa and witnessed so many of God's children who have nearly nothing and worship Him completely.  while we are still missing matilda everyday, we are trying to keep our eyes focused on Him -

let us fix our eyes on Jesus, the author and perfecter of our faith, who for the joy set before him endured the cross, scorning its shame, and sat down at the right hand of the throne of God. - hebrews 12:2




i won't keep going on and on because this much has been extremely hard to write.  i didn't think it was possible to love a dog this much, but we did.  we have both said that if we do decide to get another puppy they will have big shoes to fill.  she was a great dog and we're still missing her a lot.

rwanda + the final review

after being back in the states for 3 weeks i finally managed to sort through the pictures and videos!  our trip to rwanda is something we will never forget.  our lives will never be the same because of what we have seen.  we are both extremely grateful to reed's work for 1st giving us the opportunity to sponsor muyvuni and 2nd giving us the opportunity to meet him.  

we are very excited to see where God will lead us over the next few months and years.  we have plans of our own, but our ultimate goal is to serve Him.  wherever and whatever that means.  being in rwanda has made us both re-evaluate things in our lives, which is a good thing.  our hearts truly break for the people of africa, but at the same time we are inspired by them.  we are inspired by their joy which can only come from the Holy Spirit, by the obvious presence of the Father in their lives and by their hunger to know and study His word.  they are my daily inspiration for me to seek Him in all that i do.  i am definitely a work-in-progress when it comes to seeking His direction first, but with His help i'm getting there.

if anyone is considering sponsoring a child through compassion international i would say "do it - now."  don't wait.  there is a link in the sidebar -- click on it and a list of unsponsored children will come up for you to see.  your sponsored child will bring you far more joy than you can imagine.  we have thoroughly enjoyed watching our child grow in the last 2 years and can't wait to see how he continues to grow in the next 10 years!  maybe one day we'll get to be the proud sponsors of an ldp student!

rwanda in pictures + days 6 & 7

we were greeted once again by native singing and dancing when we got to the nyamata student center on day 6 -- the kids are so cute!

this sweet boy's name is bonana -- adorable.

on day 6, we had an awesome opportunity to serve the children.  compassion cooks and serves the children a meal once a week.  it was very cool to be God's hand and feet in distributing the lunch to these children.  before they ate, each of the 200+ children went outside and washed their hands.  it was surprisingly a very orderly process!

after we served lunch, we got to do what we had been looking forward to since we found out we were going to africa.  we went to muyvuni's house to meet his parents & little brother.  words can't describe what it was like.  we were humbled to learn that his parents {who are very young} along with their 2 children, had adopted 3 other children to care for.  these people, who by our standards have nothing, are willing to give it all to care for those in need.

the next day was friday, which was the day we were leaving.  we got to squeeze in 1 last student center visit before we left, which was awesome.  we went to gustave & got to see several preschool classes.  the children all sang to us when we came into the rooms and even asked us to sing for them!  we weren't prepared for that, but we taught them head, shoulders, knees & toes which they seemed to enjoy!

rwanda in pictures + day 5

day 5 started with a construction project in nyamata.  they are constructing a building which will eventually serve as a type of fellowship hall for the community.  the sponsored children will come to the new building for their saturday classes and meals provided by compassion.  here's some pictures of the men -- hard at work!

this man was mixing mud to put inside the bricks to provide stability {i think!}  he would pour in water and then stomp around in the pile to mix it up.  it proved to be a very effective method!

the scaffolding was made from sticks tied together which were pretty unstable!  the men from the village walked across them quite swiftly, but the americans, to put it lightly, were a little slow & unbalanced!

next door to the construction site was a primary & a secondary school.  i really wanted to go over and visit a classroom, but i thought i might be a little bit of a distraction.  being a teacher, i know how teachers feel about "distractions!"

...we had some gifts to give before we left.  the employees at wakm donated 43 Bibles which we had the honor of distributing to the local church.  it was awesome to see the looks of excitement as the people received their Bibles in their native language which they can read, study & enjoy anytime they would like.  several of the people who received Bibles immediately went to the side and opened their Bibles to read.  it was wonderful to see God's people so hungry for His Word!

while everyone was preparing to leave, i snuck off to find this sweet baby girl and her momma.  i had been eyeing them all through lunch and couldn't wait to hold her!  her momma was very gracious and let me hold her.  she chewed on everything in sight -- she was precious!

as we were leaving, we took a quick tour of the goat house.  {i know that was a terrible transition -- sweet baby to stinky goats, but it is what it is!}

this is one of the many bathrooms reed visited in the villages we attended.  i think he just wanted to see what they were like on the inside!  based on some of the reactions, i'm happy to say i never went in!

we left nyamata and went to another compassion project where there is a compassion cottage.  this is another one of those things compassion does i had no idea about before our trip.  compassion sponsors cottages, which are orphanages for children who have no family -- no mother, no father, no siblings, no grandparents, no aunts, no uncles -- no one.  there are 7 children living in this house with 1 loving house mother taking care of them all.

while in this village, we went to the local compassion office where we were met by the project manager and several other people on staff.  we saw this sign on the wall and thought it was interesting.  it lists the countries and then tells the number of children sponsored in that country.
