June Festivities

In June we made our way up north to visit my family.  On our way, having finally found the elusive road to the scenic lookout, we stopped at the Hoover Dam and walked out onto the new bridge.  It was pretty cool if I do say so myself.  The view that is, not the temperature.

After an enjoyable walk out to the middle of the bridge we continued on our way up to lovely St. George where we spent the rest of the weekend with my family.  Saturday we went hiking in Zion.  It is my FAVORITE national park in Utah, although Arches is pretty high up there too.  Spending time there is almost as good as going home for me.

(These are the few pictures we took before our camera died.  :(  My mom is sending me the rest but I don't have them yet so this is what we have.)

After coming home Rooi and I were lucky enough to get a Culture pass from the Library for the Phoenix Zoo.  So despite the high temperatures we took a day and explored the exhibits.  It was SO fun!  and the Zoo is HUGE!  We managed to see almost all of it (minus the meerkats or whatever they are called) in one trip.  We got to pet some goats and sting rays, ride a tractor (non-operational), and take a paddle boat out on a lake.  We had a lot of fun and would highly recommend taking a trip to anyone who is thinking about it, although maybe not in the summer.

So far summer has been pretty fun and we are trying to see all that we can before we both start back into school.  (I can't believe I start classes in about a month!  weird!)  Summer isn't over yet so stay tuned for more adventures from the desert!

Memorial Day weekend

Rooi made it through his first year of medical school!  So to celebrate... we went home.  We got to spend a week with our families hanging out and having fun. We also got to watch the SF Lady Dons take state in softball
(Oh man that final game was intense. )
Congratulations Ladies!  You earned it!
And then for the weekend we went to Bryce Canyon with Rooi's family.  Here are some highlights:
It was beautiful down there and we had a lot of fun. We were kind of sad to come back to Arizona, it was so nice getting to be with family for awhile.  But now we are back and adjusting to the heat.  I haven't melted yet so... so far so good.  Let's hope it stays that way.

I like to Ride my Bicycle, I like to ride my bike!

A couple weeks ago I helped out with an informal "Bellair Friends Triathlon." Bellair being the name of our ward here. As all of my friends rode in on their bikes or those that they had borrowed from us I thought "I should ride my bike more often." It looked really fun, so today... I did!

I had to go to the post office which is conveniently located just on the other side of campus. Too short to drive and rather far away (or it seems that way) when it is really hot outside, so I took my bike. And can I just say... It. was. awesome. The weather is actually PERFECT today, not too hot with a slight chill in the air. I wish it would stay like this for the rest of the summer. :) And it felt so good to get out and do something active. LOVED IT! I guess I have really missed not exercising everyday (I've been slacking :( ) because riding my bike really cheered me up. Gotta love endorphins. :D  Rooi thinks his wife has lost her marbles, I'm in such a good mood.  Good stuff.

Hair cut

The school had an activity, "Cuts for Kids" put on by the Pediatrics club (of which Rooi is a member) so I donated my hair.  11.5 inches.  Here's my new look for all of you back home.  I like it. Hope you do to. :)

Oh but the break wasn't over...

After we got back from L.A. the break was just starting.  We enjoyed some relaxation at the pool, sleeping in, a spring training game (Reds v the Mariners), and a trip to the Science Museum.

It was pretty fun, but now we are back into classes. it's hard to believe Rooi is almost done with his first year of medical school, but he is! Weird.

Cupcakes

Isn't it pretty?  German Chocolate Cupcakes with chocolate centers and Chocolate Peanut Butter "frosting"
I don't like cake but I will have to say they were pretty tasty.

Trip to So Cal

Rooi has a break from school this week so we decided to take a little trip to California with some of our friends over the weekend.  It was so much fun!  We went to the L.A. temple for an endowment session and visited the grounds of the Newport Beach temple (it was closed for cleaning).  Newport is a nice area, but we felt a little out of place in our little Honda surrounded by Porsches, BMWs, and Aston Martins.

Visited Downtown Disney and had dinner at the Rainforest  Cafe which apparently has the best Hamburgers ever (according to our friend Dane).  This was fun, but really made us want to go to Disneyland.  (I guess that will just have to be one of our next trips.)

And a trip to California would not be complete without a trip to the beach (or two).  The water was a little cold so we didn't go swimming, but it was fun to walk on the beach and look for seashells.

And our last day there we went to Knott's Berry Farm.  The first theme park in the US.  It was fun but the ride we were looking forward to the most was closed "to clean the pond below the ride" although we didn't see a single person down there all day. LAME.  But we still had fun on the others.  Our favorites were the Xcelorator (pictured in the top right corner) and the Log ride, whatever that was called.

It was a fun trip and just long enough to make us miss being home.  Yeah for weekend getaways!

Valentine's Day 2011

Our Valentine's Day:
Steak Dinner at home:

I don't do steaks.  Rooi has to cook the steak and since he is so busy on a normal basis, we don't have it very often.  But every Valentine's Day he makes time to go out and BBQ it for us.  At least this year he didn't have to do it in the snow.  We also had asparagus (because I love it so much) and I made dessert.  Heart-shaped Chocolate chip cookie dough cheesecake.  Recipe found here.  This was my first attempt at cheesecake of any kind and I think it turned out pretty good.  Not perfect, but good.  Oh and I also decorated the table.  It was fun.

We try to be creative in our presents for each other on V-day.  This year Rooi got me an Edible Arrangement (something I have wanted since the first time I saw the commercial 3 years ago, I love fruit!!) He also made our whole dinner.  He let me help a little with some of the small stuff, but he planned the menu and told me what do.  It was very good, very delicious.  Twice baked potatoes, grilled asparagus, a green salad, and bacon wrapped beef tenderloin.  Muah!  Muy deliciouso!  I made Rooi a candy bar poster and a scavenger hunt that lead him around campus and back to our apt where he found a slide show of us from the past 4 years.  We met 2 days after Valentine's Day back in 2007, it doesn't seem like it's been that long, but it has.

That was it for us.  All in all it was pretty fun, and my present doubled as an activity for our date.  I was pretty proud of how it turned out and he only needed help to figure out one clue.  And he said he loved it so two thumbs up.  I got the idea from this website, My Insanity

Anyway, hope you had a fabulous Valentine's Day too!
