Back to preschool...

i worked in special ed preschool for 3 years, this year at the beginning of the school year i got put in 1st grade since there were not enough kids in preschool to have a 3rd person , i was a little dissapointed to not be with my cute little kids, hard as they were i loved being in there. well of course i got settled in my new position with a little boy that is hard a lot of the time but so cute and sweet and i have become very attached to him as he has to me. i love the 1st grade class i am in. the teacher is very firm but never ever yells and is very structured which i also like. i have learned a lot from her. she gives me a lot of jobs in her class like grading papers, checking for homework every day, doing sharing time with the kids and walking around the room to help with work all day all while helping my student.
the VP came to me and said that they needed another person in preschool and that she knew i loved preschool, and would i like to go. what a decision. it took me about 4 weeks to build a raport with my student, i wanted to do what was best for him. i talked a lot with the special ed teachers and together we all decided it would be best for me to go to preschool. my student (i cannot name him is why i say student) has become very attached as i said and sometimes that becomes dependent which is not what we want and 7 of the preschoolers are coming up to KDG. next year so i would move up with one of them next year and make that transition smoother.
today i was sad in my class, i gave the teacher a heads up that this might happen and she was not happy so i hate to tell her i am leaving. i really hate to leave that class. i then saw my coworker from preschool and she gave me a squeal and a hug so then i was happy. a lot of mixed emotions! i won't move until the end of the month but i will be sad to leave 1st grade!
i texted matt and told him i was sad, he said in 1 week back there you will be loving it! hope so!
SO...back to preschool where i know the math!!

rude comment?

i just had a little chuckle. i am always checking other blogs to see their good ideas on food, crafts, decorating etc. i comment quite often. i think comments should be positive or just leave the site. one post in particular though just kind of hit me. she was telling about a company that sells these amazing blankets, from baby alpaca hair. anyway i clicked on the link to the site and the blankets were 650$$$$$. are you kidding me?!?!. i left a comment. "would you really pay 650$ for a blanket, i could think of so many more worthwhile things to do with 650$!"
i went back today to see if anyone else felt the same way. my comment was deleted!
everyone else's comments were "oh these look so soft", oh these would be wonderful in wisconsin" etc. i guess she either thought mine was negative or that she was trying to give the company a plug and exploding about the price was not going to sell more blankets.
i really do think you should only be positive when you comment. next time i will just close the page and then say to myself "650$$ for a BLANKET"?!

a girls night out!

hawaii has been soaked the last week or so with constant rain. i know i have felt stuck at home. so when my friend marj's birthday was coming up i decided we needed a girls night out. those of us who could, got together at ruby tuesdays in a party room and had dinner. it was really fun to sit with friends and laugh and catch up. we need to do it more often.

chicken fajitas

we always try to eat healthy but of course the holidays threw us off and then we were sick and didn't really eat much of anything and i was hardly cooking. i am trying to get back on track and chicken fajitas sounded so good! this is an easy, healthy recipe.
Chicken Fajitas
4 boneless, skinless, chicken breast, cut into strips
1 Tbs. of olive oil or veg. oil
2 cloves of garlic minced
1/4 C. lime juice
1/4 tsp.chili powder
1/2 tsp. oregano
1/4 tsp. thyme
1/2 tsp. cumin
salt and pepper
1 red pepper, or green pepper, i use both
1 small onion
(i kind of use whatever seasonings i have but cumin is really important!)
in large skillet, heat oil over high heat, add chicken, garlic and onions. stir fry until chicken is browned. add lime juice, spices, and peppers. i heat it until it is sizzling and all the moisture is gone so they are charred and yummy!
i use corn tortillas but you can use flour too, heat them through and top with your chicken mixture.

red onion, avocado or guacamole, cheese, sour cream, salsa and cilantro. we try to keep it light with avocado, salsa and a little cheese.
i would double for a large family.

back among the living!

today was a much better day! i took cough syrup last night and slept so well and didn't have to get up early this morning so it was much needed good sleep.
i actually felt a little productive. matt works 24 hr. shifts several times a month (i accidentally typed that word without the "f", that's kind of how i feel about them:) so i have a day to get stuff done. I...

did 1 hour of stretching yoga at home
cleaned out my closet, have a trashbag of stuff to take to goodwill
did laundry
read a little (these is my words)
finished the toffee (thanks sondra but please no more!)
ate a healthy lunch and had fruit today
got my eyebrows waxed
went to target and did some grocery shopping (really want a new pretty comforter at target!)
stopped at wendy's on the way home for their baja salad with real pico and guac!! yum!
i didn't get everything done i needed to but i was pretty sore and still getting my energy back so i am done for today.
on another note last night we saw country strong. i loved it. if you like country music you'll love it, if you don't like country music , you'll still like it. it is about more than music. i did love the music and downloaded my new favorite song, give into me, by leighton meester and garrett hedlund who sing it in the movie. gwyneth paltrow and tim mcgraw were great and it was pretty clean.

sluggish

so january hasn't started out like i would have liked. this is pretty much how i feel! like a slug!
Kiley was sick, then caleb came home sick then matt got sick and as much as i tried to hold out, i got sick. i missed a new years party, helping a friend with a lesson, going to the pool and just plain moving. i have gone to work and the temple but that's it.
i was so sick of laying on the couch at one point with matt in chicago that i just went to get a pedicure, i thought at least i was out of the house.
a new year is supposed to be new energy, resolutions, eating healthy and exercising. at this point my goal is just to start new in feb.! not really my goal is to go to yoga sat. morning and really hope i make it through.
i have had a steady diet of nyquil, dayquil cold and cough, bags of cough drops, toffee that my friend sondra made (thanks again!) because nothing else sounds good and watched more t.v. than i can stand. it just won't go away and i just can't get energy back.
at least i am longing to eat well and get moving, hopefully that will stick!

our christmas was pretty quiet this year but we were happy to have caleb home from college and when kiley came back from california we celebrated our christmas together with chicken parmesan-caleb's favorite and opening presents.
