OOOOOOOOklahoma!

I figured it out and we spent a total of 64 hours in Oklahoma, but boy, it was worth every minute. I could go into great detail about all the things we did, but here's a quick little run down:


  • walks in the parks

  • cuddling with one of the cutest little baby boys I've ever seen, next to Wyatt of course!

  • watching Wyatt cuddle with said cutest baby ever seen.

  • allowing Wyatt to climb an actual tree, one that is big enough to support him; a water guzzling, thick trunk tree with big fat leaves, that didn't need little support sticks to keep it standing up.

  • looking at old Oklahoma City mansions and dreaming what it would be like to live in them.

  • laughing at Christoffersen puns (and stating a few myself).

  • teaching Lauren how to start her own blog!

  • getting to know Preston and Beau (my fellow in-law and soon to be in-law) and observing Byron and Wyatt's seal of approval of them.

  • eating way too much chocolate.

  • throwing up after landing in Tulsa because of the plane turbulance (OK, that wasn't a good memory).

  • letting Wyatt take pictures with my phone and seeing Oklahoma through his eyes.

  • just relaxing, and feeling so welcomed by our family!

I'm Up to My Nose in YUDU Shirts!

I can get obsessed about particular things very easily.


  • Facebook (duh!),
  • The Killers,


  • Ghost Adventures are a few of my obsessions.





    • I've added some new ones to the list as well.





      • Dancing with the Stars (only while I'm working out


      • documentaries about processed foods and corrupt meat packing corporations,


      • and just yesterday my husband yelled at me in disgust, "You're obsessed, Sommer!" as I ate my piece of Red Velvet Cafe cake and then proceeded to eat his cake, because he couldn't finish his, and its a sin to let that magical, 150 calorie, heavenly, red goodness go to waste.


      So what am I obsessed with right this minute (beside blogging)? My YUDU! I love it. I am far from perfect with it, but it challenges me, and I can't stop thinking of t-shirt ideas. I'm getting really good at stealing ideas off of the internet, too. The products can be kind of pricey, but then I found a website that sells generic products for super cheap, which has just fed my obsession even more. I ordered all new colors of paint, not paying attention to how big each tub of paint is. I'll never run out of paint for as long as I live. Like I said, I'm not perfect at it, but I'm getting better, and my mom and I have been trying to figure out if there is a market out there to sell any of the stuff I make. We were brain storming last night about having parties, like Pampered Chef, come look at my samples, and we'll make you up a custom design. Who knows...it might not work, but then again...it just might. ;) Here's some stuff I've been doing so far.











      The "Dude Bro" shirt is the face Wyatt mimicks when he watches Ghost Adventures. Whenever the guys on the show hear a ghost they make that face and yell, "Dude! Bro!" The shirt glows in the dark, and both Wyatt and I have one. The "fat" shirt is for my friend Kasey. She comes up with the best ideas for shirts!

      An Only Child's Gotta Do What An Only Child's Gotta Do!

      When you don't have anyone else to play with, you have to do something to keep yourself entertained!


      How Does My Garden Grow? Why, Into Mint Ice Cream, Of Course!

      In just a few short weeks, our garden has just taken off, and I've got to say I'm quite surprised I haven't killed anything! We have learned some lessons, though. Mainly, never fill a bird seed feeder with bird seed right before a wind storm, hanging right over your strawberry plants..Photobucket

      PhotobucketAnother lesson I learned, squishy green caterpillars like my mint. I, however, do not like them. My mint plant was exploding, and I had been collecting mint recipes. Finally, one we just had to try: Fresh Mint Homemade Ice Cream. YUMMMY! Wyatt and I started trimming the mint leaves, and I knew something was eating at it, since I was spotting holes. I went into the kitchen to wash the mint and there he was: a big ol' nasty green inch worm thing and several little siblings. I am not an Oompa Looma, and therefore do not eat caterpillars, and was more than happy to flush the critters down the toilet! Once pest control was concluded, Wyatt and I could continue on to the mission that was" The Making of Some Freakin' Delicious Mint Ice Cream.

      Here's the recipe from David Lebovitz's Fresh Mint Ice Cream recipe from The Perfect Scoop

      Fresh Mint Ice Cream
      - makes about 1 quart (1 liter) -

      Ingredients
      1 cup (250 ml) whole milk

      3/4 cup (150 g) sugar

      2 cups (500 ml) heavy cream

      Pinch of salt

      2 cups (80 g) lightly packed fresh mint leaves

      5 large egg yolks

      Procedure
      1. Warm the milk, sugar, 1 cup (250 ml) of the cream, and salt in a small saucepan. Add the mint leaves and stir until they're immersed in the liquid. Cover, remove from the heat, and let steep at room temperature for 1 hour.




      2. Strain the mint-infused mixture through a mesh strainer into a medium saucepan (the milk will be a lovely shade of emerald). Press on the mint leaves to extract as much of the flavor as possible, then discard the mint leaves. Pour the remaining 1 cup (250 ml) heavy cream into a large bowl and set the strainer on top.

      3. Rewarm the mint-infused mixture. In a separate medium bowl, whisk together the egg yolks. Slowly pour the warm mint liquid into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.

      4. Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula. Pour the custard through the strainer and stir it into the cream. Stir until cool over an ice bath.

      5. Chill the mixture thoroughly in the refrigerator. then freeze it in your ice cream maker according to the manufacturer's instructions.

      I think the ice cream turned out great. The texture was the best I had ever made, super creamy. The mint flavor is not a fake mint extract kind of flavor. It is a very fresh mint leaf flavor, but I think it is stinkin' good! So did Wyatt. And I guess Byron did, he ate it. ;)
