Girls Getaway to St. George

My mom treated us three sisters to a girls weekend to St. George with her back in April.  It was such a fun weekend, and nice to get away with some of my favorite gals.  We stopped in Beaver, so Kristin could take a picture of herself wearing a famous "I Love Beaver" shirt holding some "neeyakuns".  She had a friend stop in Beaver one time to eat, and her server offered her napkins, but she couldn't understand what the server was saying because she pronounced "napkins" as "neeyakuns".  Probably not as funny for those of you reading this as it was for us to hear in the car that day, but nonetheless, I've included the picture here for you all to see...


Once we got to St. George, we checked into our hotel, and headed to dinner at Anasazi--a restaurant where you cook your steak on an extremely hot rock.  It was yummy, and a really fun experience...


And, as if that wasn't enough food yet, we stopped for some Nielson's Frozen Custard afterward...


The next day was a shopping day.  What better way to start off a shopping day than with a Swig.  The first Swig ever was in St. George...

And, we finished the day off with frozen yogurt from Yogurtland...


The next day we went to brunch at Bear Paw Cafe.  Yummy...


And then finished the trip off with one of our favorite hikes--Red Cliffs, just outside of Leeds...


After that, it was home to our families and reality.  It was so much fun to be able to get away with these girls.  A huge thank you to our sweet mama for making it a possibility! We had a blast!!  --Lindsay

Spring Break

We didn't do anything super exciting for Spring Break this year, but we sure packed it with a lot of little fun things.  We started the week out with a trip to the Dinosaur Museum with cousins and a couple of Cohen's friends...






We went and saw Zootopia with our cousins.  It was a really cute movie...


We took a day trip down to Beaver...


Now, I know you're probably asking yourself why someone would take a day trip to Beaver.  Well, Aiden was assigned Beaver County for his 4th Grade County Project.  The students have to do three creative projects, plus a travel brochure, and a Poster Board.  When Connor was in 4th Grade, he was assigned Grand County.  It's the home of Moab and Arches National Park.  It's one of our favorite places in the world, so we decided to have some fun with one of his creative projects and take a little mini-trip down there to make a "tourism video".  It was a huge success.  So, it came as no surprise that Aiden wanted to do the same thing for one of his creative projects.  Unfortunately, Beaver isn't exactly known for being a tourism hot spot, but we were able to find some cool sights.  Mike insisted that one of those sites be the Tesla Super Chargers that are located in Beaver (halfway point between Salt Lake City and Las Vegas).  Here he is posing by it, and holding up three fingers--indicating his desire to get his own Tesla in about three years.  Silly boy...


We stopped by the Old Territorial Courthouse...


And, we found the birthplace of the famous outlaw, Butch Cassidy.  It's been added on to over the years, but the little brown house is the original house where he was born...


We got some squeaky cheese at the cheese factory...



Climbed a tree while we were there too...


Traveled out into the West Desert to find Frisco--an old mining town that is now a ghost town.  After some off roading, we were able to find an entrance to the original mine...




And some other relics too...

But, Frisco is most famous for these beehive-looking kilns.  It was inside these kilns that they would melt down the ore they took from the mine...





After Frisco, we drove back to Beaver and ate at the Crazy Cow Cafe.  This was Connor's request.  He has an bizarre obsession with cows...


We finished the day by driving up to Eagle Point Ski Resort, but I forgot to take pictures there.

It was a fun day.  Who knew there were so many interesting things to see and do in Beaver County...


Aiden's video turned out great!  I posted it on my public Facebook page, and it kind of went viral.  25,000 people ended up viewing it--including the mayor of Beaver, who sent Aiden a gift package full of Beaver County memorabilia.  More on that in a future post.  If you'd like to watch Aiden's video yourself, here's the link to watch it on my Facebook page...

After our Beaver County adventure, the kiddos were covered in dirt.  What better way to get it off than with a big bubble bath.  These bubbles are called Hollywood Bubbles because they are the type of bubbles used in movie bath scenes...


We also spent lots of time at the park...



And we took lunch to the  Thanksgiving Point Gardens one day and just wondered around afterward.  This was the only picture I took though...


We also had several epic lightsaber battles.  These battles also included my oldest child--Mike.  He really is just a big kid, which is one of the many reasons he's such a great dad...


So, that was our Spring Break in a nutshell.  It was a lot of fun, and made me really excited for summertime that was right around the corner!  --Lindsay

Easter Weekend

Easter Weekend was jam packed around here.  We started the weekend with our annual peep roast (and also threw in some normal s'mores for those that didn't want to roast a peep) on Friday evening...


We invited my entire family this year, and everyone had a great time...

After much persuasion, he finally gave in and had a bite...




The next day was Women's Conference.  I don't usually get to go because I work weekends, but I took it off this year.  Someone in my neighborhood had tickets to watch it in the Conference Center that they weren't going to be able to use, so they gave them to me.  So, my mom, sisters and I had a girls night out.  Here we are at the conference...


And then at dinner afterwards at From Scratch...


The next day was Easter.  The Easter Bunny came to our house while we were at church, since church is at 9:00 am this year.  He brought the kids some fun little presents, and hid a bunch of eggs and candy in the backyard...

We also had my family over for a yummy Easter dinner that night too, prepared by Chef Mike.  It was an awesome Easter!  The weather was great, and all the family time was the best!!  I'm so thankful for my Savior, and that He died and was resurrected so that I can live again and be with my amazing family forever!  --Lindsay
