Christmas 2010

Merry Christmas!  We had such a fun time celebrating Christmas with family.  And, we're excited that tomorrow morning we get to fly to Colorado to spend a few days with Dave's parents in Steamboat. 


My sister, Emily, was here for the whole week before Christmas and stayed at our house.   Isaac loved having his Auntie Em around!  She was a huge help with Isaac especially since he was so sick.  She was up with me several times throughout the night when he was running a high fever. 
After church on Christmas Eve, we went to my parent's for dinner.  My mom made Swedish meatballs (our favorite!), and I attempted my mother-in-law Susie's Seven Layer Jello.  Isaac was very intrigued by the fire!

Even though Isaac had been pretty sick all week with strep, he still had fun opening presents.  It took him quite awhile to tear off wrapping paper strip by strip (methodical like his dad)...and sometimes he'd even bring the strips of paper to different people throughout the room, which made the entire process even longer.  :)    

The aftermath of Christmas Eve!

We had planned ahead of time to all spend the night at my parent's house on Christmas Eve.  But, Isaac must have been feeling so miserable that he didn't fall asleep on Christmas Eve until 2 in the morning...maybe he was waiting for Santa?  Dave & I were trying everything we could to get him to sleep, so a little after midnight we loaded him up in the Tahoe and went for a drive to see if that would help.  (It didn't...but we did see a lot of beautiful Christmas lights in Trophy Club!)  After a short night, we all woke up on Christmas morning to my mom's cinnamon rolls & Christmas stockings!  Isaac also opened his big present from my parents...a kitchen!  (My mom assured us that she bought the most masculine-colored kitchen she could find.)  Don't mind Isaac's outift...he had just opened new socks from his Christmas stocking and wanted to wear them along with his church shoes. 

We spent the rest of Christmas Day at my Uncle Kym & Aunt Bernie's house.  Their daughter, Amanda, is 4 months old now...aren't she & Isaac so cute in their little Christmas shirts?  Right after this picture was taken, Isaac tried stealing her Santa cap off her head. 

Yesterday morning, we took Isaac back to the doctor, where he finally got a clean bill of health.  After nearly a week of being sick, he's finally getting back to his normal self!  (Definitely a wonderful Christmas present for all of us!)  The three of us spent the rest of the day having our own little Christmas at our house.  Dave built a fire, and we had such a fun day together.  Isaac loved playing with all his new presents!

Visit to Santa 2010

Our visit to see Santa last year was much calmer than this year!  Isaac wasn't too thrilled about sitting in a stranger's lap!  He started crying the instant I set him in Santa's lap...almost as if he knew that's what toddlers are supposed to do (at least some of them!).


We went to Breakfast with Santa with our friends the Pattersons.  Their twins, Thomas & Smith, and Isaac share the same birthday, just one year apart.  We thought their matching pj's were adorable!

Missing my Grandpa Ken...today would have been his 86th birthday.  Even so, I'm thankful that I have a multitude of memories to remind me of how much my grandpa loved his family. 

Thanksgiving in Iowa

This Thanksgiving, we traveled to visit Dave's grandparents in New London, Iowa.  We drove (okay, I only drove 3 hours, so really I should say Dave drove) through the night on Wednesday and arrived early Thanksgiving morning.  Dave's parents, Tim & Susie, came from Colorado, along with Dave's brother, Michael; and Jon, Kristy, & Griffin came from Chicago.  All of the Rinns hadn't been together since Jon & Kristy's wedding in March of 2008! 

Grandpa Bailey had met Isaac last month in Lubbock at the World War II Glider Pilot reunion, but Grandma Shirley still hadn't met him.  We're so glad she was able to!  Now, Isaac has met all of his great-grandparents! 


There were 35 people at Grandpa & Grandma Bailey's for Thanksgiving dinner!  It was definitely one of the biggest Thanksgiving we've ever been a part of!  There was people and food everywhere, but it was so special to have so many family members together!

The most adorable part of the trip was seeing Isaac play with his cousin Griffin! The boys are 3 months apart, and Isaac thought Griffin was hilarious!  Ever since we've been home, Isaac has said "uh-oh" at least 5 times an hour, just like Griffin.  :)  Tim & Susie bought these tiger costumes for the boys for Halloween, and they couldn't have been any cuter in them!


Even though it took a lot of driving to get to Iowa, we're so glad we were able to go and spend time with family!  On the way home, we spent the night in Kansas City with Dave's Uncle Randy.  (We weren't about to drive through the night again!)  He treated us like royalty!  And, he directed us to a Caribou Coffee on our way out of town!  (Do you know how happy this made me?)  There's a pound of Caribou's Reindeer blend in my cupboard that I'm rationing so that it will last through Christmas!

Favorite Foods of Fall

Since fall is my favorite season, I had high aspirations of doing series on our blog of my favorite fall recipes.  But, since it's already the week of Thanksgiving and my series never quite got started, here are some of my favorite recipes for fall!  Enjoy!
Butternut Squash Soup

1 Tbsp. olive oil
2 medium butternut squash, peeled, seeded, & cut into cubes
1 medium onion, chopped
1 clove minced garlic
1/2 tsp. ground allspice
2 cans (14.5 oz each) chicken broth

Heat oil in large saucepan on medium heat.  Add squash, onion, & garlic.  Cook 10-15 minutes until crisp-tender, stirring occasionally.  Add allspice; cook & stir 1 minute.

Add chicken broth & bring to a boil.  Cover; reduce heat to low.  Simmer 15 minutes or until squash is tender.  Add, in batches, to food processor and blend until smooth.  Return to saucepan and cook until heated through, stirring occasionally.

Serve with sour cream, a dash of nutmeg, & saltine crackers.

Sweet Potato Tortilla Soup

We first had this soup last fall, when my friend Ericka brought us dinner one night after we'd brought Isaac home.  We LOVE it, and I've made it 3 times in just the last month.  Isaac loves it too!

Saute until tender:
1 Tbsp. olive oil
1 medium onion, chopped
2 cloves minced garlic

Add:
3 medium sweet potatoes (peeled & cubed)
3 cups chicken broth
1/2 tsp. cumin
1/2 tsp. oregano
1/2 tsp child powder
1/4 tsp. cayenne pepper

Bring all ingredients to a boil & simmer 10 minutes or until potatoes are tender. 
Puree 2 1/2 cups of mixture and return to pot.

Add:
1 can Rotel (or 1 can diced tomatoes + 1 can green chiles)
1 cup frozen corn
3 T chopped fresh cilantro

Cook until heated through.  Top with sour cream and serve with tortilla chips. 


Pumpkin Cream Pie
Pumpkin Cream PieI made this recipe from Martha Stewart Magazine a few weekends ago for our Community Group.  Mine didn't look quite as beautiful as Martha's does in this picture, but it was delicious!  My favorite thing about the recipe was that all of the work can be done ahead of time (you know I love being efficient!), and then the pie sets up in the fridge until you're ready to serve! 

Makes one 9-inch pie; Serves 8
FOR THE GINGERSNAP CRUST
1 1/4 cups ground gingersnaps (from about 25 cookies)
2 tablespoons sugar
Salt
4 tablespoons unsalted butter, melted and slightly cooled

FOR THE PUMPKIN CREAM FILLING
2 cups whole milk (side note:  Dave is thrilled that we have whole milk for the first time since we've been married now that Isaac is drinking it!  And, I have to admit that it makes recipes taste much better than my usual skim milk)
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Pinch of ground cloves
1/2 cup sugar
Salt
4 large egg yolks
1/4 cup cornstarch
1 1/4 cups solid-pack pumpkin (from one 15-ounce can)
1 tablespoon unsalted butter, room temperature
1 1/4 cups heavy cream, whisked to medium peaks (or, if you're like me, use Cool Whip...because when I got to this point in the recipe, I realized we'd used most of the cream in our coffee throughout the week)

Make the gingersnap crust:
Preheat oven to 350 degrees. Combine gingersnaps, sugar, and a pinch of salt in a bowl. Stir in melted butter. Press mixture into bottom and up sides of a 9-inch metal pie dish. Refrigerate until set, about 15 minutes. Bake until crust is golden brown, about 15 minutes. Let cool.

Make the pumpkin cream filling:
Bring milk, vanilla, cinnamon, nutmeg, cloves, 1/4 cup sugar, and a pinch of salt to a simmer in a medium saucepan over medium heat.

Meanwhile, whisk egg yolks with cornstarch and remaining 1/4 cup sugar in a medium bowl.

Gradually whisk about 1/2 cup milk mixture into yolk mixture. Gradually whisk in remaining milk mixture. Return entire mixture to saucepan. Cook over medium heat, whisking constantly, until bubbling in center, about 2 minutes. Remove from heat. Immediately whisk in pumpkin. Whisk in butter.

Strain filling through a fine sieve into a clean bowl. Pour into gingersnap crust, smoothing the top with an offset spatula. Refrigerate until set, at least 4 hours. When ready to serve, top with whipped cream, and garnish with nutmeg.

Happy Halloween!

A few weeks ago, we joined some friends for a Halloween Park Party!  Isaac sported his tiger costume from his Grandma Susie & Papa Tim:

We visited Grandma Joan at her nursing home on Halloween afternoon.  Isaac was a big hit with the residents!  Grandma Joan also gave Isaac his first Milky Way.

 








Last Halloween was the day that we brought Isaac home!  After a whirlwind day of driving to pick him up near Austin, we came home and had an impromptu party with our parents and some of our friends.  We tried to recreate the same type of night for this Halloween, too.

Calling all bloggers....check this out for 50 free holiday cards!

Halloween is already over, and Thanksgiving and Christmas are right around the corner! One of my favorite parts of December is sending and receiving Christmas cards.  I love opening Christmas mail and seeing the beautiful photos that friends and family have sent, and also I love reading (and rereading) the accompanying letters and cards. 

For our own personal photos, I upload everything that's on our memory card onto Shutterfly's website, where our pictures are saved.  There is no maximum number of photos that you can save on their website, and uploading is fast and easy.  I also have a Shutterfly Share site, where family members can view all our photos and order their own prints.  When placing an order, I usually receive my pictures in the mail within several days (even when selecting regular shipping) and there's also the option of picking up prints at Target within an hour, just in case you need them extra quick!


Here are just a few of my favorite holiday products on Shutterfly’s site right now. This card to the left is my favorite holiday card on their site, and that's hard to choose, because they have a lot of creative holiday cards! Its square shape is unique, and I like that the family photo is the focus of the card.   

But, my favorite product is Shutterfly's calendars.  I have made these the past several years for all of our grandparents, and they are wonderful presents.  In fact, my Grandma Sorbel writes me a letter at the beginning of each month telling me how much she loves that month's picture.

One year ago today...

One year ago today was the best day of our life...the day we brought Isaac home!  During this past year, we've kept in continued contact with Isaac's birthfamily; and, in doing so, have found out many more details about what caused them to place Isaac with us.  So many behind-the-scenes miracles were happening in those two weeks when we didn't have Isaac.  Even when felt we like nothing was happening, God was at work.  The ram was on the way! 

The day before we got Isaac (Friday, October 30) was one of the lowest days I'd had in the 2 weeks that we'd been home without Isaac.  I remember sitting on my bathroom floor and sobbing.  I actuallly felt my heart hurting...the pain over losing Isaac was so intense.  That evening, Dave & I went out to eat at Pappasitos with Dave's parents.  (Pappasitos is one of my favorite restaurants, and everyone was trying whatever they could to put a smile--no matter how small--on my face.)  During dinner, I was lamenting on and on to Dave & my in-laws about what a horrible month October is for our family: our first baby was due on October 19, 2007, and then we lost Isaac in October of 2009.  My father-in-law said, "I believe October is going to be a month of victory for your family."  Little did ANY of us know what was about to happen the next day!  But, he was right--October has turned out to be the best month on the calendar for us! 

The entire story of Isaac's homecoming is here.  We are still humbled and honored that God chose to work so miraculously in giving Isaac back to our family!  This past year has been overflowing with joy with having Isaac as a part of our forever family!

We definitely experienced the truth of this verse one year ago...our hearts were beyond heavy, but we came home LAUGHING with Isaac in our arms.  Isaac's name means "laughter," and his story and his little developing personality have caused us to laugh and laugh this past year...it's been wonderful.  Thank you, Jesus!

Even though we had to leave the hospital without him, we will always be thankful that we were able to care for Isaac for the first 3 days of his life.

The poem on Isaac's birthday invitation says it all....he's brought us joy & laughter, just like his name means.  I can't IMAGINE life without Isaac...this past year has been incredible!  My only complaint is that it has gone WAY too fast!  How is he already one?!?!
We had such a fun day celebrating Isaac's birthday!  Here are a *few* of my favorite pictures from his big day!
(And, I had nearly as much fun preparing for his birthday...it's amazing how many cute, over-the-top birthday ideas are out there!  My mom kept reminding me that I'll never have time to do this much "adorableness" for subsequent babies' birthdays!  Ha!)

Happy Birthday...again!  He was mostly interested in trying to touch the candle!



I think his highchair sign should have said "I am DONE" at this point!  He was exhausted from so much celebrating!  Even though the smash cake isn't on his tray in this picture, he really didn't eat it all!  It was huge!  He spent most of his time picking the fondant polka dots off and eating them!

Of course, there were a lot of construction-themed gifts with our family! 


What one year old doesn't need his own 4 wheeler?!?  You should hear the sounds it makes!




Happy Birthday, Isaac!  We love you!
