The past few weeks have been challenging as I've managed to catch any sickness that any of my students have. Although this has been so frustrating, I have been blessed with no other option but to slow down and relax. With Thanksgiving around the corner I couldn't help but think of how grateful I am for the blessings all around me.
1. Freedom & Religion- Privilege to live in America and have freedom of choice. All the blessings of the gospel, and to have temples to close.
2. Ben!- He is the best. This week he has been so helpful and kind: he makes the best grilled cheese and soup. and does the dishes and laundry when he senses my stress.
p.s. he turned 24 this week!! Happy BDAY Ben!! (we celebrated with Outback Steakhouse, gifts, cake, duck hunting yesterday just to name a few)
3. All My family & Cell phones- Talking to my mom & having Marcia and Miriam so close.
4. Teaching! I am so grateful to be able to teach. It is getting easier and less stressful by the day. I love going to school and helping each student gain a desire to learn new things.
5. Trials- UPs and DOWNs. You need them both to appreciate the UP times. This weekend I lost my voice. For those who know me... this seems impossible but no.. I hope its back for Monday!

Back in high school!
Sad. It's true. And I love it. Much harder than I expected, but absolutely worth it. 8 Weeks down, just a few more to go... ;) They say your first year of teaching is the hardest. Some days its a breeze & other days I have students male and female who break out into crying by the time 2:15 rolls around. Kids are so funny: from anamae, writing notes in class, chats with BFF btwn classes, insect collections, etc the list never ends. What an eventful life it is to be a teenager, I can barely keep up.
Well, including school, Here are top 10 changes that have happened in the past little while.
1. Ben is back in school! He is studying accounting. He really does love his major, and enjoys everything he is learning. This is good. 3 years to go, and we are counting down. :)
2. I make quick unplanned dinners 1-2 nights a week.
3. We don't watch TV anymore. No time.
4. I teach math to 110 students ranging from ages 11-13. Oh the emotions, and the smells, and all funny things...
5. I spotted my first gray hair. ;)
6. We are going ELK hunting this weekend! (My 1st time)
7. UEA weekend is this week, so I have off until next tuesday!
10. Ironically, I can't count. Happy Weekend!

Cafe Rio Recipes

Sweet Pork
2.5 lbs pork (pork loin filet peices work well or pork roast)
1/8 tsp salt
1/8 tsp pepper
1/8 tsp garlic salt
1 can coke
15 oz can mild green enchilada sauce
1/2 c. brown sugar
Cut pork into large cubes, put in crock pot. season with salt, pepper, and garlic salt. add a can of coke.
cook on high for 4 hours or low for 8 hours.
remove meat and drain. shred meat and place in bowl.
stir in green chile enchilada sauce and 1/2 cup brown sugar.
Chicken
1 cup Italian Dressing
1/4 cup water
2 cubes chicken buillon
1 T chili powder
2-3 lbs chicken breast
2 cloves minced garlic
1/2 cup cilantro chopped
Cook Italian dressing, water, buillon, chili powder, and chicken all together in a crock pot for 4 hours. shred meat, add cilantro and garlic and cook an additional 1/2 hour.
Lime Rice
1 c. dry rice
2 c. chicken broth
1 minced garlic clove
1 tsp finely grated lime zest
2 TBsp lime juice
1/2 tsp salt
Combine all ingredients and cook in rice cooker. you may stir in 2 TBsp miched cilantro after rice is cooked.
Lime Cilantro Dressing
1/2 jar salsa verde(green chile salsa)
1/2 cup mayo
1/2 pkg dry ranch dressing mix
1/2 TBsp canned jalapendos
1/8 bunch cilantro
1/2 can evaporated milk
1 clove minced garlic
1/2 lime, juiced
blend all in blender
Pico de gallo
chopped roma tomatos
chopped white onion
lime juice
chopped jalapenos
garlic salt
Creamy Tomatillo Dressing- Mi favorita!
1 dry pkg ranch dressing
1 cup mayo
1 cup cilantro, chopped
2 cloves garlic, chopped
3 tomatillos-peel oof paper, chop
1/3-1/2 cup buttermilk, to consistency you want
1/4 tsp cayenne pepper (optional)
Put in blender and mix. (note: i read online its a good idea to cook the tomatillos and cilantro before hand. i did this by broiling them lightly in the oven. otherwise i guess the dressing needs a day to taste the best)
Serve it Cafe rio style!!
Serve rice with pork or chicken on warm flour tortillas and toppings including: beans, lettuce, pico de gallo, guacamole, a pinch of parmesan cheese, chip strips (torilla chips are same thing), and your favorite cafe dressing!
I owe these recipes to my freind Kathryn. we tried the chicken salad with the creamy tomatillo dressing and it was awesome.. if you arent close to a cafe rio you need to try this.. and if you are, and you spend most nights eating out there, try this!!!!

Summer Update
Lately we have been trying to soak up all the summertime we're gonna get. Ben is still working part time at Ivory homes and is also busy with a summer internship. Byu has been gracious and has allowed me to work as receptionist for just 1 more semester until fall when I start teaching, and the rest of the time I find myself math tutoring which I love love love. In between that all we have been finding lots of time to explore Utah, a good excuse to go hiking/fishing/camping. I am so grateful for the beautiful mountains and nature we have so close to enjoy.

It's always a party....

Looking forward to next week!
We moved last week and it was a success. we love our new little place. I will have to take a couple pics and post. but i sure am looking forward to monday. its been a good week of taking walks, exploring our new neighborhood, watching lots of movies, and organizing here and there.... but monday we will be getting internet and tv!!! woot woot!! we will prob be suffering from internet/cable overload next week. only cause im in withdrawl mode at this point. dont get me wrong im not even a huge tv watcher, ask ben, i rarely put it on.. but when you dont have the option, man you sure appreciate what you used to have... :)
so text/call me all ya want but no more emails til monday please!

Quick- Pf Changs Chicken Lettuce Wraps! yum
We had these last night for Marcia's bday and they were delish! thanks for the recipe Michelle.Serves: 2-3 Prep: 30 min
Ingredients:
3 tablespoons oil
2 boneless skinless chicken breasts
1 cup water chestnuts
2/3 cup mushroom
3 tablespoons chopped onions
1 teaspoon minced garlic
4-5 leaves iceberg lettuce
Special Sauce
This is quoted from a PF changs server: "Add some chili paste for tongue spice. Add some hot mustard mixed with hot water for nasal spice (like wasabi or horseradish). Add some soy for salt. Add some white vinegar to help break the spice. Add some chili oil (if you have it) for pepper taste. Exact measurements are a personal taste. You can add additional to yours if you want. I use to add lemon juice, because that's what I liked. Other servers add a splash of coke or a packet of sugar."
Stir Fry Sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar
Directions
Make the special sauce by mixing all ingredients together. Mix well and refrigerate this sauce until you're ready to serve.
Bring oil to high heat in a wok or large frying pan.
Saute chicken breasts for 4 to 5 minutes per side or done.
Remove chicken from the pan and cool.
Keep oil in the pan, keep hot.
1As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
1Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
When chicken is cool, mince it as the mushrooms and water chestnuts are.
With the pan still on high heat, add another Tbsp of vegetable oil.
Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce"cups".
Serve special sauce over filled lettuce cups. Enjoy!!

spinach stuffed zucchini

If you're looking for something easy & yummy to make tonight this might be the perfect side. I got this from my friend Lauren who is always trying new things and has great taste. Ben loved this.
Ingredients
4 large zucchini, halved lengthwise
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter
1/2 cup onion, diced
1 cup chicken flavored stuffing mix
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup sour cream
1 cup Parmesan cheese
4 large zucchini, halved lengthwise
2 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter
1/2 cup onion, diced
1 cup chicken flavored stuffing mix
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup sour cream
1 cup Parmesan cheese
Directions
Preheat oven to 400 degrees F.
Brush cut side of zucchini with olive oil; sprinkle with salt, and pepper. Place zucchini, cut side down, on a lined baking sheet. Bake 15 minutes, or until tender. Scoop out pulp, keeping shells intact; reserve pulp. Reduce heat to 350 degrees F.
In a large skillet, melt butter over medium heat. Add onion; cook 5 minutes or until transparent. To the skillet, add stuffing mix, spinach, sour cream, cheese and zucchini pulp. Mix together and add salt and pepper, to taste. Cook for 3 minutes. Spoon mixture evenly into squash shells. Place on baking sheet, and bake 15 to 20 minutes, or until heated through.

What's new with the Jumpers?


It has been an exciting week! We had my family in town for graduation, I got a job on Thursday, I graduated on Friday, and we are celebrating our 1 year anniversay today. Thanks for the best first year Ben!! Oh I will be teaching Alegbra I at Summit Academy in Draper this fall! Once I get some pics of this weekend and the family I'll post them. Hope everyone is having a Fabulous weekend!

Finally Finished!
Finally finished the wreath I said I would post. Doesnt look exactly like the lady's who made up this craft, but its a try. Thanks to Becky a from church who taught us how to make this. and heres a fun fabric egg decoration i whipped up last night. The wreath only costed a dollar and the egg decoration costed $3!! Crafts are so fun! Happy almost EASTER everyone!

Headbands
My student teaching friend Lauren and I have been constantly eyeing all those cute hair accessories highschool girls always wear. I especially love those cute flower headbands so I ventured out to walmart today with Mimi and found all the stuff to make them. Here are just a few. Lauren- what do ya think?!!
