So, this was lil' Alex's first campout and he handled it quite well.

Here he is posing in front of our $35 tent from WalMart (thanks for the tip, DanJ).

Good morning... lil' Alex spent most of the night against the side of the tent. Kid rolls all over the place. I though he had taken off until I looked under the sleeping bag and saw him asleep inside.

Honestly, I can't believe Alex rode this. He's usually scared of stuff like this, but he got in line and tore it up.

All in all, it was really fun to take lil' Alex camping. Of course he took off on his own around 10pm and it was pitch black. I had a couple of paniced minutes until I found him hanging out with Jared Kolacz. He hung around the campfire the rest of the night. BY MY COMMAND.
Can't wait till next year. It was perfect weather, and DARTMOUTH REPRESENT!

In the Becky Higgins Blog I saw this recipe and thought immediately of my CAFE RIO FANS SISTERS. So "if" you dont have this, enjoy!


CAFE RIO PORK SALAD
There are 3 parts to the salad: the rice, the pork, and the dressing.
[ LIME-CILANTRO RICE ]
2 Tbsp. oil
4 c. long grain rice (6 c. water)
1 bunch cilantro, finely chopped
juice of 2 limes
2 tsp. crushed garlic
Heat oil in a large skillet. Add rice, cilantro, and garlic. Saute 3-5 minutes, stirring frequently. Add water and lime juice and bring to boil. Then reduce heat and simmer until all the liquid is absorbed by the rice (about 20 minutes). You can also use a rice cooker if you have one.
[ CAFE RIO PORK ]
pork roast
1 (16 oz.) bottle of salsa
1 can coke
2 c. brown sugar
Place pork in crock-pot and fill it half way up with water. Cook roast on high for 5 hours. Drain off water. Cut pork in thirds. Mix together ingredients (salsa, coke, brown sugar) and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low until ready to serve.
[ CREAMY TOMATILLA SALAD DRESSING ]
1 packet hidden valley ranch buttermilk dressing
1 c. buttermilk
1 c. mayo or sour cream
2-3 tomatillas (peel off outer leaf/shell)
1 tsp. crushed garlic
Ă‚¾ bunch fresh cilantro
1 tsp. cayenne pepper
juice from 1 lime (about 2 tsp.)
salt & pepper
Blend all ingredients in the blender. Refrigerate.
[ SERVING ]
Of course you can assemble everything burrito-style. I prefer salad-style. For one serving, I first put a tortilla on a plate (or a large serving bowl, like the pasta bowl shown in the photo). Then put rice, pork, some chopped lettuce, and the dressing. Finally, garnish your salad with shredded cheese, tomatoes, sliced avocados, or whatever you want.
Note: I strongly prefer and recommend the uncooked tortillas over regular ol' packaged tortillas. Check the refrigerated section of your local grocery store. Our Costco carries them too. Just throw the tortilla in a pan over the stove top, give it a few flips, and it's cooked

Alex's latest challenge.
"We believe that the first principles and ordinances of the Gospel are: first, Faith in the Lord Jesus Christ; second, Repentance; third, Baptism by immersion for the remission of sins; fourth, Laying on of hands for the gift of the Holy Ghost."
He got the first three down in no time but this one is taking him a bit longer. He is almost there though. We have been a little exigent with him saying the words very clear cause we want him to really really learn them. I (cynthia) wasnt a member as a child, so, never got to "memorized" them all. Now Im learning with him and its been a lot of fun trying to come up with creative ideas to help him remember.

I did it again!
Hi there millions of readers! :P I was thinking of some ways to improve my home without spending money and I found some left over paint. Its the same color I have painted my living room, wich made me happy cause I love that color. I thought, mmm... I really hate the stairs wall. Last time we painted the red in that wall (6 coats later :S) we made a big mess. We were very sick of the painting and wanted to be done and didn't even bothered to tape around the carpet. Result, paint all over! So this time around after finding my lovely left over from the living room I decided to do a better job and fix that wall.
First step: Because "of course" it wasnt gonna be the JUST PAINT AND BE DONE proyect, I decided to lift up the edges of the carpet (It wasn't a biggy since we are installing new carpet in the next three weeks).

After pulling the carpet out there were the staples! Ohhh man, one more thing!


My hands were soo sore by the time I called it a night.

Funny Story. Talking to Alex the next day we've come to realize how much we hated that metal frame and that it wouldn't be very hard/expensive to just raise the wall there and make it more functional. Sooo...

That happened. Yes I DID IT AGAIN! I didnt stick to my little proyect. It just grew gigger and bigger and this is were "we" (not just me now) are. Wish us luck and soon to come is the finishing product.

Draggin' my butt of the couch!
I came across a blog called "thrifty decor chick" (you can find it now in my "cool sites" area) and founded myself with an urge to do something for my home. So I wanted to start small. I went to the thrift store and found acouple of things. This is the one I tackled first.

Its nothing WOW out there, just a wall candle vase, but like I said I wanted to start slow. Im gonna spray paint this black (of course) and Im still deciding if I do wanna put a candle or if I dare to experiment with something else.

I've been having Alex cook for us every now and then. Last night for the second time he made "semi-homemade pizza" He really laaavs doing it. It was fun!
