Watermelon Head!

A good friend of mine sent Sophee this hat quite a few months back. Her little head was swimming in this cute little watermelon hat. I remember thinking "it's going to be a long time before this fits her." Well it really hasn't been that long........and it fits! Yikes!! Our little girl is growing way to fast. I feel like almost everyday I try something on her and it's to small, or something that seemed so big suddenly fits. I'm realizing more and more how important it is to cherish every moment! If only I could freeze time!

This was at the end of picture time, clearly she was finished!

#4 Sophee's eating big girl food!! Yep that's right! Sophee started eating rice cereal! I was so excited to give it to her, and a little nervous not knowing what she would think of it. I halfway assumed that that she would just spit it back out and we would have to try again later. Much to my surprise, she did a great job. She really loves it and gets quite ravenous about it between bites. We can't believe that we're already to this point, before we know it she's going to be walking! So crazy!!

This is Sophie the Giraffe, it has her same name (it came with this name)! She really loves this giraffe. It was only appropriate that she joined her for dinner!
This is good stuff mom!
Yum!!

#3 We Went to Texas! Just last week we got back from spending a wonderful week in Houston (our home away from home) with our dear friends Tyler and Jodi. We just love these two so much. Tyler a Jodi, along with their friends, family, and church have been super huge supporters of us and our ministry endeavors. We are so thankful for them. We had a wonderful time hanging out, and making great connections with some awesome young couples from there church. Thanks Tyler and Jodi, we love you!! While the boys were off at a Texas A&M Football game, Jodi, Jana, Jodi, Scarlett and I got to take Sophee swimming for the first time. I wasn't quite sure what she was going to think but she really seemed to like it. She was quite the little fish! Here are some fun pictures of our swim!

This is actually after. She was so tuckered out from her big swim I didn't even get her dressed.

#2 I love Pickling!! Because I am a huge fan of pickles or anything pickled for that matter, I have been wanting to make pickles for the longest time. This year when I saw the adorable little cucumbers at the store I decided that I was finally going to do it. I was so excited about my new pickle adventure that I started jumping up and down in the store. Cameron thought I was absolutely crazy! The greatest thing about these pickles is that they are "cold-packed". That means that you don't have to do any of the extra steps like boiling the jars and all of that. You just screw on the lid and stick them in the fridge. You also can eat these pickles after just three weeks. Of course the longer you wait the better :). These pickles were so fun to make I decided to put the recipe up so you can make them too! This recipe is from a cucumber farm in Washington who has apparently mastered the art of making pickles.

DURIS COLD-PACK REFRIGERATOR DILLS
MAKES ONE QUART

  • 2 grape leaves
  • 2 stalks fresh dill wound in small coils
  • 3 peeled cloves garlic
  • 1/4 white onion, sliced
  • 3 teaspoons pickling salt
  • 2 teaspoons mustard seed
  • 15 whole black peppercorns
  • 1 dried red chili pepper
  • 1/4 teaspoon alum
  • 1/4 fresh jalapeño pepper, sliced
  • 1 slice red bell pepper (or more to taste)
  • 5 medium pickling cucumbers, blossom end removed
  • 2 to 3 small pickling cucumbers, blossom end removed
  • 1/2 cup apple cider vinegar (5 percent acidity)

Put 1 grape leaf in jar. Add 1 coil dill, garlic, pickling salt, mustard seed, peppercorns, chili pepper and alum. Arrange the medium cucumbers vertically in the jar, holding them against the side. Fill in the jar with the small cucumbers.

Slip the jalapeño slices, red bell pepper slices and onion slices between the glass and cucumbers so that they make a pretty design. Add the vinegar and fill the jar with tap water to within 1/2 inch of the top. Top with remaining dill coil. Cover with the remaining grape leaf to help hold everything down and maintain crispness. Screw on lid and shake well to dissolve the salt and alum. Store in refrigerator for at least a month before eating.

Note: This recipe can be adjusted to any size jar. Store jar in refrigerator. It will last up to six months in the refrigerator.

#1 We got family pictures done!! A good friend of ours and photographer Jeff Marsh (who we will hopefully soon be partnering with in photography) came down and blessed us by taking our pictures. As a photographer myself I've never been able to master taking fun and great portraits of my family, it just doesn't work so well! Thanks Jeff!!

Beautiful Girl

As most of you know I love taking pictures! I can't imagine anything more fun than taking pictures of my beautiful girl. Sophee is such a great little model and is already posing great for the camera.  Yesterday I set her up in our living room and took these fun pictures.  I'm so excited to capture her as she grows and changes so fast!
