the happy half

This week started out a bit rough, with me catching whatever sore throat/fever/want-to-die bug that the boys have had and being a little down & out for a couple days. But the rest of the week has been pretty glorious, with two days of downright warm (80 degrees!) weather and some fun times outside in the yard, at the playground, and at the zoo with our buds. Here are some snapshots of the happy half of our week.















This weekend we're looking forward to spending some time with Micah & Kelsey and not having much on the agenda besides some work around the house. Then I can't believe March begins next week! Longer days, warmer weather, and fewer cold bugs are within our reach!

recipe roundup: all our faves

For Valentine's Day this year I decided that my gift to my 3 Valentines would be cooking up some special food for them. They say the way to a man's heart is through his stomach, and since my Valentines are a man and 2 men-in-training, I figured this was appropriate! I also included some of my favorites in the mix, too :)

For breakfast I made Red Velvet Pancakes for me & the boys. Red velvet is my very, very, very favorite (as you know, if you follow me on Pinterest!) I was planning to use the same recipe from our elf breakfast back in December, but the night before I realized that I didn't have sour cream. So I tried a new recipe and liked it even better! Here's the link: Red Velvet Pancakes. (Instead of the elaborate topping, we just dusted ours with powdered sugar. Also, I left out the cinnamon).

Josh doesn't like sweets for breakfast, so I cooked him up some eggs sunny-side up, hash browns from scratch, toast, and heart-shaped bacon :)

I didn't make lunch but instead got Noah his very favorite: Subway! A turkey & cheese sandwich on wheat with olives, pickles, tomatoes, and honey mustard. :) Love that boy and his funny 3-year-old tastes.

Dinnertime was a bit tricky but I think I pulled it off. I had a lot of things going in our kitchen and I think I used every pot and pan we own! Josh's favorite recipe I make is Heavenly Halibut (the link takes you back to another Recipe Roundup post). I made it with creamed spinach and our new very favorite side dish, Quinoa Primavera. It seems that quinoa is all the rage right now, and for good reason: it's delicious! We both love this recipe, which of course I found via Pinterest. The original recipe comes from here, and I have only slightly modified it. The picture comes from the original site.


Quinoa Primavera
1 1/2 C uncooked quinoa (find it in the organic section)
3 C chicken broth
1 T olive oil
2 oz cream cheese
1 T butter
2-3 cloves minced garlic
1 red bell pepper, finely diced
1/2 yellow onion, finely diced
1 zucchini, finely diced
(You can really use an veggies you want. Just dice them very small)
grated or shredded Parmesan cheese
Heat the olive oil on medium-high in a saucepan, add the quinoa and stir it around for about a minute to toast it. Pour in the broth, bring to a boil, cover, reduce heat and simmer for about 20 minutes or until all the liquid is absorbed. Meanwhile, in a large pan melt the butter and saute the garlic and veggies until they are just starting to get tender. Stir the cream cheese into the cooked quinoa, then stir in the veggies. Top with a generous amount of parmesan. Yum yum.

For the boys I made Noah's recent favorite. We call it Ketchup Chicken because that gets him to eat it :) He actually really loves it though. I made it for the first time about a month or so ago and he has asked for it no less than 5 times a week since then, for lunch and dinner. I have seen similar recipes floating around the Internet but I cook it a little bit differently. Josh & I are fans of this one, too. I add in sliced green onions for us and it tastes like Pei Wei takeout. Noah is convinced that is is like Chick-fil-a, probably because the sauce is similar to his coveted Polynesian Sauce. 

"Ketchup Chicken"
2-3 boneless skinless chicken breasts, cut into chunks
1-2 T cornstarch
1/3 cup honey
1/4 cup soy sauce
1 T onion flakes
1/8 cup ketchup
1 T vegetable oil
1-2 cloves garlic, minced
1/4 tsp. red pepper flakes
Toss the chicken with the cornstarch, and mix together the remaining ingredients in a separate bowl. Heat another 1 T oil in a big skillet over medium and cook the chicken until it is white all over but not cooked through. Pour in the sauce and stir well, cover the skillet and turn the heat down to medium-low and cook it until the chicken is cooked through. Serve over brown rice. 

And then...dessert! This one was all about me, although Josh was a fan. I had to do something red velvet. The perfect way to start and end the day :) I searched for a red velvet pie recipe and the only thing I really found was red velvet brownie pie. Since both my mom's brownie pie and red velvet brownies are favorites of mine, I decided it was perfect! You can find the recipe here: Red Velvet Brownie Pie. I left out the chocolate chips. I know that cream cheese frosting is a traditional pairing with red velvet, but I absolutely love the addition of white chocolate buttercream to my coveted rv brownies, so I wanted to go with a similar flavor. I decided to attempt to make white chocolate whipped cream. It turned out deeeeeelicious. I may or may not have eaten several spoonfuls of this stuff just by itself. 

White Chocolate Whipped Cream
2 ounces white chocolate
2 T + 1 C heavy whipping cream
1/3 C powdered sugar
Put the white chocolate in a bowl with 2 T of cream and melt in the microwave for 30 seconds. Stir it well and if it isn't totally smooth microwave for a few more seconds. IN a large mixing bowl, combine 1 C cream with 1/3 C powdered sugar. Beat with a handheld electric mixer until soft peaks form. Fold in the white chocolate/cream mixture. Seriously, this stuff is pretty to-die-for.

Arkansas snow day

Only in our great state would this weather be considered a snow day. Schools announced they were closed this morning before a flake of the white stuff even fell. And that's really all we have gotten so far--a few flakes. It was really pretty for a minute there with big flakes pouring out of the sky. I guess if this is all we're going to get, we'll take it. We've bundled up, played in the snow (a.k.a. wet grass), started a fire, baked some cookies, and watched a movie.

be mine

Today we had a big time at our playgroup Valentine's party. The kiddos at yummy treats, decorated hearts, played on the playground, put their names on mailboxes, and of course exchanged Valentines! It was super cute & fun for the kids yet also easy & low-key. My kind of party! Morgan was the mastermind behind this party, and she really is the guru of planning things that are fun & memorable yet not over-the-top or extreme.  








Here are the Valentines that we did this year. The boys took them to their friends at school yesterday since they don't go to school on Tuesdays.

Am I going to win the most original or craftiest Mom award for these? Nope. But they're cute enough, they're a bit more fun than the boxed cartoon cards, and most importantly to me, Noah was able to completely help in the process of putting these together for his friends. We talked about why we give Valentines to our friends and why we are so grateful for friends in our life. Noah put all the dinosaurs in the little sacks, wrote his friends' names on the back of all the cards, helped me punch holes in the cards, and cut all the ribbons. And he was SO proud of his Valentines and SO excited to hand them out!



When I was perusing the favors section at Party City looking for plastic dinosaurs, I saw plenty of other little goodies that would make cute Valentines. All these things are super cheap but kids would love them. You just need little plastic sacks, cardstock, and ribbon to make fun Valentines! You could make the cards much cuter than I did (my printer is out of colored ink) and tie them with really fun ribbon (all I had on hand was good ole curling ribbon, so we went with it). Here are some silly ideas of things you could use for Valentines. A couple of these ideas came from Pinterest and the rest are just random ideas I had. Most of these items are from Party City, and a couple from Michael's. But you could find things at the Dollar Store, Target $1 section, Wal Mart, Mardel, etc.

That last one was my favorite for some reason, and I really wanted to do those for Noah's. But at $1 per shovel, it was just too much for us between his class at school and his playgroup friends too. I just think they'd be too cute with the cards tied to the handle!

weekend snapshots

I have to say, I thoroughly enjoyed our weekend. Not because we did anything ultra exciting or went somewhere special, but because it was just filled with the right balance of activity & downtime, and was spent with people we love! We ate dinner with my parents, Josh & the boys went to visit Mom & Papa, we enjoyed church & small groups Sunday morning, and Sunday evening we had our Community Group over for the Super Bowl. Good, good times.

I didn't document a lot of the weekend with my camera or even phone camera, but I did get a few pictures to post for memory's sake. Sunday morning we were actually ready for church with time to spare (!) so I asked Josh to take a picture of me with the boys, since I don't think I've had one with them for a few months. Then I turned the camera on him and took one of my 3 favorite guys. Maybe next week we'll be ready early enough to bust out the tripod for a full family shot! (just kidding....but actually, don't put it past me).


Sunday night we used the handy dandy self timer to capture a picture of our group, complete with 11 kids age 3 and under. This is our whole group minus the Moores, who were greatly missed while they were at work saving lives :) Love this group so very much!

thoughtful thursday

Sometimes (or all the time) I have these random thoughts in my head that I just want/need to get out. Hence, Thoughtful Thursday. Maybe this is the only Thursday I will feel like being thoughtful. Or maybe I will do it every Thursday. Who knows.

The other day I was actually in the car by myself so I was listening to the radio as opposed to the months-old "King George and the Ducky" Veggietales CD from Chickfila. I flipped to the country station just as the song "Remember When" by Alan Jackson came on. I don't listen to country radio all that much but it seriously seems like every.single.time. I do, this song comes on. Annnnnd, every.single.time. I hear it, it makes me cry! So silly! But I mean really, have you listened to these words?

Remember when, the sound of little feet,
was the music we danced to week to week.

 I may or may not be tearing up just typing it.

Remember when, old ones died and new were born
Life was changed, disassembled, rearranged.

I always think of my Papa at that part. We lost him a little over a year before I got pregnant with Noah. I sure wish my boys could know him. They would love him and his silliness. 
Yep I'm definitely crying now.

Now looking back, it's just a stepping stone
To where we are, where we've been
Said we'd do it all again
Remember when.

I mean, HELLO? How could this 30-year-old momma not cry when I hear that? 
I'm not saying it's the best song you will ever hear, but I just bet you'll tear up a little bit. 


Oh, Alan. You will always rock that mustache and curly blonde mullet won't you?

Did I mention that these thoughts in my head are totally random?!? :) Have a happy and thoughtful Thursday! We've been enjoying the strange Spring-like weather on this Groundhog Day, even though Punxsutawney Phil insists we'll get 6 more weeks of winter.
