on the market

Our house is on the market! It's been listed for a couple weeks now and we've had showing after showing after showing--which explains why I'm a little frazzled and a lot exhausted! I had no idea just how much we were taking on trying to show a house that we happen to share with two little kiddos. Whew. I can say that our house has never been cleaner, that's for sure. Of course, we've hardly been spending any time at home! The showings are constant so we have to be out of the house a lot, and I also just try to keep the kids out of the house most days just so they can't mess it up. I have been amazed at how messy/dirty it can get in no time at all when they are around. 

Anyway, I don't want to post the official listing or the address since this is a public blog, but here's our flyer minus that information, plus some of the pictures from the listing. recipe round-up: feta chicken & whole grain cookies

Welcome to what has become a bi-monthly (at best) Recipe Round-up. I am nothing if not sporadic.

I loooove this simple recipe for greek chicken, but really it's all about the feta topping. It is perfect on the grilled chicken but is super versatile and can be used in a lot of ways. I originally got the idea from this Pin for feta dip and just tweaked it a teensy bit.

Feta Topping
8 oz tub of crumbled feta cheese
1 carton of grape tomatoes, halved or quartered
2 green onions, thinly sliced
about 1-2 T olive oil
Cavender's Greek Seasoning, about 1/2 T or so
1t lemon juice
Sorry the amounts aren't exact, I just eyeball it. Mix everything together and refrigerate for at least an hour. Marinate chicken breasts with something that compliments the flavors--I love it with Kalyn's Kitchen's greek grilled chicken that I posted here, but thanks to my poor planning skills I almost always marinate my grilled chicken with Newman's Own Olive Oil & Vinegar salad dressing. Take the feta topping out of the fridge as you start to cook the chicken, so it isn't overly cold. Grill your chicken then top with the feta topping and let it rest for at least 5 minutes before serving. Yum, Yum, Yum. Since I'm usually cooking for approximately 11/2 people, I never use all of the topping on our chicken so I LOVE to mix the leftovers with chopped romaine for an amazing salad at lunch the next day. It's also yummy as a dip like it was originally intended. I add chopped olives to the dip, and serve it with pita chips.
Last night we had this delicious chicken with roasted green beans and quinoa with veggies, and we enjoyed it all out on the deck.




Don't forget dessert! I searched a long time for a good recipe for chocolate chip cookies made with whole wheat flour, and these from Joy the Baker  are perfect. I changed them a bit and added extra grains by including oats, and the results are great. 

Whole Grain Chocolate Chip Cookies
2 1/4 C whole wheat flour
 1 t salt
1 t baking soda
1 C brown sugar
1/2 C white sugar
1 C unsalted butter, softened
1 t vanilla extract
2 eggs
1 C rolled oats
1 1/2 C chocolate chips
Whisk together flour, salt and baking soda. Combine sugars and butter and beat with an electric mixer for 3-5 minutes, until creamy. Add vanilla then add eggs one at a time and beat for 1 minute after each one. Add the flour mixture and mix well, then add the oats and mix until blended. Fold in the chocolate chips by hand. Refrigerate the dough for about 30 minutes then drop it by tablespoons onto a wax-paper lined cookie sheet. Bake at 350 for 10-12 minutes. This also freezes well, just freeze balls of dough and bake however many you want at a time.

play ball!

Noah's first t-ball game was lat Tuesday, his 4th birthday! What a great way to celebrate. It was way, way too cute watching all those little guys out on the field. Noah hit it great both times up to bat, and he had a blast hustling after the ball when he was fielding. I laughed so hard at how the boys would all run for the ball no matter where it went, and then pile up and fight over it :)

My favorite part was that Noah slid into every single base! He must have gotten that from watching baseball on TV. It was hilarious! 















The birthday boy had a nice cheering section with Mar Mar, Papa D, Scott, Melissa, and Emma all in attendance--along with Mommy, Daddy, and Sam of course.

birthday week

We had a great time celebrating Noah's 4th birthday last week. It was full of cupcakes, presents, singing, and playing!

Monday night after Noah went to bed, Josh & I decorated the doorway of his room for a little birthday surprise the next morning.


Tuesday morning I woke up before 6:00 am, nose-to-nose with an anxious Noah standing next to my bed. He said "Mommy, am I 4 now??" He was just SO excited. So he crawled into bed with me and said "when I opened my door I thought 'whoa! what is going ON here?!?'" Sweet thing. After some snuggle time as we waited for a somewhat more decent hour to get up, he just couldn't wait any longer to open some gifts.



He went to school that day and took some cupcakes for his class. I'm pretty sure that he was sufficiently celebrated and loved on at school by his sweet teachers, friends, and of course Aunt Rachel.

That evening was his very first t-ball game, but that deserves a post all it's own. Afterward we went to All Aboard to celebrate the birthday boy and baseball star. The sweet staff there sent him a train whistle and Happy Birthday card via the train, so he was feeling pretty special. He also opened his gift from Mar Mar and Papa D and squealed with delight over "lots of Cars I don't have!!"




Thursday he had his check-up, which we had both been dreading since he had to get shots. He is 42 lbs (89%) and 42 inches (85%). I would describe him the exact same way I did as a 9.5 lb newborn--sturdy. This kid is STRONG, like a bull! He had a vision screening and a hearing screening. He has 20/20 vision but didn't do great on the hearing. I'm pretty sure it is because he was too busy flirting with the cute girl doing the screening and didn't pay attention to the instructions :) She agreed that he was kind of being silly and didn't fully understand what to do, so we are just going to check again when he's 5. When time for shots came, I had a really hard time holding him down. I honestly think he may be stronger than me! But we both survived the shots and he got to pick out a new toy afterward with some of his birthday money.

All week long he asked me repeatedly how much longer until his birthday party. Finally, Saturday morning the time was here! He had a race car party this year--of course! I tried to really keep it simple and just fun for the birthday boy and his friends. We had a racetrack ramp built by Daddy, lots of Cozy Coupes to race outside, racecar decorating, a Lightning McQueen pinata, and cupcakes. Papa D's Mustang provided some impromptu birthday fun too!! Noah had a wonderful time--success! He is blessed to have so many sweet friends who came to celebrate with him.


























Sunday we celebrated all over again at Mimi & Papa Jim's. This is one lucky 4-year-old boy to have so many people who love him and want to celebrate each year of his life! Thank you to all the family and friends who made him feel special.



We love you, Noah James! I can't wait to see what age 4 holds for you!
