one last trip


As summer wraps up, school starts, and Corbin heads into a busy season at work- we take one last vacation. I'm so glad we did because the memories and feelings have lingered with me these last few weeks. We had a relaxing time in Mesquite with my parents where I spent lots of time lazing about the pool reading while the kids swam. Corbin took Roman on many Geocaching adventures and we all joined in one cloudy day. My favorite cousin, Roxanne, came for a visit with her kids and parents. And we took Marina and Roman to The Little Mermaid at Tuacahan. I would love to see another show there sometime. Here's a photo of Marina and Roman outside the amphitheater holding hands- so sweet. I just love vacations that make you sigh at the thought of them. This will always be one of them.

Back home, the kids enjoy petting this baby kangaroo that visits Avalon on certain days of the week. So cute!

sum/yum

Isaac must have been listening when I asked our friend if he was ready for third grade because later he said to me, "My heart's excited for me to go to third grade, but I'm not." Good thing he's only going to preschool.

Speaking of school, the cashier asked us today while buying backpacks if we were getting ready for school and I replied by saying it's bittersweet. For the most part we've really enjoyed this summer. I went into it thinking it would be the best summer yet. So far I think it probably has. No babies, no teenagers. We can all hang out or go somewhere together. Yes, there's still lots of "MOM, he did this" and "MOM she did that" and in those moments school can't start quick enough.

What I'm not ready for is the times when my kids do get along. Times when we go to the pool or just sit and watch Wizards for and hour. Times we make a point of doing something that's on our summer list or a spontaneous twist cone from AC and going to the park at sunset to eat them. I think there's more I want to hold onto with regards to summer rather than face school. I know I'll be pretty close to wanting it here when it does come, but I hope we can still fill our time up with some fun things and enjoy these relaxing days of sunshine.

Oh, beautiful day! One of the first lovely days in June and Roman is learning how to mow the lawn.

Now for the yum part. I've discovered the most delicious chocolate frosting. I'm sure this recipe exists somewhere, but since I'm the one who put the ingredients into the bowl and tested and tweaked it a few times, I'm going to call it mine. So here it is:

Nikki's YUMMY Chocolate Frosting
2 oz cream cheese
1/4 cup butter softened
1/2 cup semi-sweet chocolate chips (I love the Ambrosia brand from Costco)
1/ 1/2 cups powdered sugar
2 tsp milk

In a small bowl melt chocolate chips in microwave*.
Beat cream cheese and butter in mixer until smooth.
Next add the melted chocolate and mix again.
Adding 1/2 cup at a time, slowly beat in the powdered sugar.
Continue to beat at medium to high speed and adding a bit of milk to reach desired consistency.

*Since my microwave is probably 30 years old I won't tell you how to melt your chocolate. But, if you'd like some tips I'd be happy to help.

happy mother's day


happy mother's day!

today i am thinking of you mom. these past few months i have learned so much about you. you are a strong woman who quietly fights her own battles yet graceful accepts help when it's offered. that acceptance of allowing others to serve you is, in turn, really an act of service. i am amazed at the power and determination you have to endure your battles well. thank you for bringing me into this world. for teaching me by your example. for all that you give to me even though you are the one in need. hang in there. my prayers are with you. you will win this battle!! i love you.

*my mom was diagnosed this year with her2 positive breast cancer which is very aggressive and not inherited. last october her mammogram was clean. then this february she noticed some changes, but no lump. three weeks later there was a lump 1 1/2 inches in diameter and by the next week when it was removed it was the size of a lemon. she has no history. luckily she caught it in time and the prognosis is very hopeful, but it will be a hard battle. she will overcome!

Ice Pops...literally


Now that the temperature has peaked just above 70 degrees my kids are anxious for anything water related. The other day we froze water in some popsicle molds. You'd think it was the best treat ever. Isaac is just polishing off his second one. YUM!

Full Jar


It took a few weeks...actually 6 weeks to fill our kindness jar. Our goal was an ice skating activity which took place last month. We all had a fun time together as a family. I really enjoyed it since it'd been a few years. Roman really caught on and I loved watching him make the rounds. He looked like a little robot with his legs and arms moving just like scissors. Isaac wanted so badly to 'just go'. A few times he got loose from our grasp and took off. He went so fast and skated so erratically I thought he'd fall. For the most part he did well. Marina really had a good time. I remember the days of being her age and going to the skating rink with my friends most Friday nights. Funny how the music they play is still the same. I might as well have been 9 again.

Of course we set a new goal and have been refilling the jar once again, but it's been much slower this time. I think we really need to focus. We've slipped in watching out for good acts and kind deeds.

I love how Roman looks like the big brother in this picture. Do you ever wonder if your kids were born out of order? Probably wouldn't make any difference. I think they'd still have the same traits. Just a thought.
