Flatpack isn't solving the problem of building gtk and other dependencies, which are very much dead at this point. I hate to say this, but it's simpler and easier to just use gedit or visual studio code.
It's built on gtk2, which is essentially dead at this point, and porting to gtk3 is not going to be easy. If you are interested, I can help.

"Just fine" isn't really that fine, if you save the file then it most likely will be corrupted. I agree that it's useful to see the contents of binary files, but medit can't handle those.
