Dosa batter would probably also make a decent substitute for injera. I've never had luck making the batter from scratch. But whenever I go to a store selling south-Indian food now, I buy 1 bucket of fresh dosa batter (from the freezer section), plus a couple of packages of dried dosa mix (to which you add yogurt and water).

The first time I tried to cook dosa, I had terrible problems with it sticking to the pan. But an Indian friend told me to not grease the pan first. Rather, drizzle a little oil around the edge of the dosa just before you flip it the first time. Works like magic. The oil around the edge somehow coaxes it to pull away from the pan.
