In a large bowl, mix cucumbers, vinegar, sugar (if using), water, salt, black pepper, red pepper flakes, carrots, mustard seeds, and celery seeds. Stir until sugar and salt dissolve.
Cover the bowl and refrigerate for at least 24 hours.
The pickles are now ready to eat! Store them in the refrigerator for up to two weeks.
