 • 45 g cold water⁣
 • 1 g dry yeast⁣
 • ⁣
 • Main dough:⁣
 • 340 g bread flour⁣
 • 110 g whole wheat flour ⁣
 • 315-370 g water (start low, add more if needed)⁣
 • All of the poolish
 • 9 g salt ⁣
 • ⁣
 • Instructions⁣
 • ⁣
 • • Day 1: in the evening, prepare poolish: combine flour, water, yeast in a bowl. Cover and rise overnight at room temperature (8-10hrs)⁣
 • • Day 2: in the morning, prepare the main dough: add flours and water to a large baking bowl. Mix until just combined, cover, and rest for 1 hour. ⁣
 • • Add poolish to the main dough and gently mix by hand or in a stand mixer on low speed for 3-4 minutes. ⁣
 • • Add salt and, if needed, a splash of water. Mix for 3-4 minutes
