🌶️ Kimchi – Enjoy a spicy, tangy fermented Korean side dish packed with crunchy vegetables and bold flavors, perfect for adding a kick to any meal! 

Ingredients: 
• 1 medium Napa cabbage, cut into pieces 
• 1/4 cup sea salt 
• 4 cups water 
• 5 garlic cloves, minced 
• 1 inch ginger, grated 
• 2 tbsp Korean red chili flakes (gochugaru) 
• 2 scallions, chopped 
• 2 tbsp fish sauce (optional) 

Instructions: 
1. Dissolve salt in water and soak cabbage for 2 hours; drain and rinse.

Let it sit at room temperature for 1-3 days for the fermentation to start, then transfer into the fridge. Once the fermentation starts the broth will taste a bit sour 🤌🏼  🥬TO MAKE: 1 large Napa cabbage 1 carrot 1 daikon radish (I used turnip cuz that’s what’s available at my local grocery store) 1 sweet bell pepper 1 bunch chive Handful of JUJUBE dates, not medjool! Water and coarse salt  For the brine- 4 cups water 2 1/2 tbsp salt, I used pink Himalayan 1 sweet onion 5 - 6 garlic cloves 1 inch ginger 1/2 Asian pear 1/2 apple  by @veganbunnyelle
