Gluten Free Porridge, suitable for anyone with Coeliac Disease 
 • Here in Australia, those with Coeliac Disease aren’t advised to eat oats unless they do an ‘oat challenge’ under medical supervision. So, until then, here’s my go-to alternative porridge:

Ingredients 
 • 1/2 cup quinoa 
 • 2 cups water 
 • 1tbsp maple syrup 
 • Milk (to serve) 
 • Topping Ideas: berries, nut butter, yoghurt, muesli and/or coconut flakes. 

To make 
 • Place quinoa and water into a saucepan and put over medium high heat. Bring to boil, then turn the heat down to low and put the lid on. Cook until the liquid is absorbed (approx. 10-15 mins) 
 • Before serving, stir in the maple syrup. 
 • Serve hot and add milk and toppings. Enjoy! 

Notes
 • You can stir fruit into the quinoa porridge

Ingredients:
 • Quinoa Porridge:
 • 1/2 c quinoa flakes 
 • 1 c water
 • 1/4 - 1/2 c milk (I used cashew)
 • 1 banana (mashed)

Optional toppings:
 • 1/2 c mashed raspberries, 1/4 c chopped nuts, 1T date syrup (or maple)

1.Bring water to a boil. Add quinoa and mashed banana. 
 • 2.Turn the heat to low and cook quinoa stirring frequently for about 4 minutes.
 • 3.Add milk and cook for another minute.
 • 4.Transfer to a bowl. 
 • 5.Add optional toppings and enjoy.

5min · 1 serving     Ingredients:  • 1 c milk (I used homemade cashew)  • 1/3 c quinoa flakes   • 1 banana sliced   • 1/4 t cinnamon   • 1/8 t vanilla extract (optional)  Optional toppings:  sliced banana, chopped walnuts, honey or maple syrup   1.Put small pot on a medium heat and add milk, salt, cinnamon, vanilla extract and bananas and bring to a boil.  • 2.Then add quinoa flakes and lower heat to low.  • 3.Cook stirring occasionally for 5 minutes.  • 4.Pour cooked quinoa porridge into a bowl add your favorite toppings and enjoy.
