Not only do you get more protein but it makes the eggs fluffy, creamy and delicious.   • ✨4 eggs   • ✨1/2 cup cottage cheese (I used low-fat good culture)  • ✨Salt and pepper to taste   • ✨1 tablespoon butter  • ✨Finely chopped chives, for garnish  • 1. Whisk the eggs and cottage cheese together in a medium bowl.   • 2. Heat a skillet over medium heat and add the butter. Once melted, pour in the eggs.  • 3. When the eggs just start to set but not stick, use a flat spatula to slowly scrape the eggs, creating folds. Scrape occasionally until the eggs form soft folds, about 2-3minutes total. This will depend on how soft you like your scrambled eggs.   • 4. If desired, garnish with chives and serve immediately.
