Dressing & marinade is defo Viet inspired but surprisingly loved all this with couscous instead of vermicelli noodles. I also forgot how quick couscous is to cook so I’ve fallen back in love with it 🥰
Ingredients
For the dressing/marinade:
• - 1 mild red chilli
• - 1 clove garlic
• - juice & zest of 1 lime
• - 1 tbsp fish sauce
- 1 tbsp brown sugar
Everything else:
• - 160g couscous
• - 200ml boiling veg stock
• - 1/2 shallot
• - handful of chopped cucumber, carrot & lettuce
• - fresh coriander (optional)
