It takes less than five minutes and has no clean up! • 3/4 cup extra virgin olive oil • 1/4 cup red wine vinegar • juice of one lemon • 1 tsp Dijon mustard • 1 tbsp honey • 1 clove of garlic, minced • 1 tsp salt and freshly ground pepper Pour over your favorite salad and enjoy.
These Rosemary Garlic Confit and Herb Ricotta Crostinis are an easy, delicious appetizer to serve at any type of gathering.   

Serving size: 12 crostinis  

Ingredients: 
 • 1 head of garlic
 • Enough EVOO to cover garlic
 • 1-2 sprigs of rosemary
 • 1-2 sprigs of sage
 • 1-2 sprigs of thyme
 • ½ cup ricotta cheese
 • 2 tbsp hot or regular honey
 • Baguette
 • Salt/pepper

Preparation: 

1. Make your garlic confit: Preheat oven to 250 and peel skin off of garlic. Add rosemary and garlic to a ramekin or cocotte. Add enough oil to completely submerge the garlic. Cover and bake for about 2.5 hours.  

2. Meanwhile, chop up herbs. Add herbs, honey and ricotta to a bowl and mix thoroughly to combine. Season with salt and pepper
