Bread Machine Zucchini Bread

Typically I try NOT to create my own recipes.  I love to cook and bake and can follow a recipe...but creativity in the kitchen is not really my strong point.  My husband has graciously endured through numerous of my Oh-I-Made-It-Up dinners, and thanks to pinterest, hasn't had to do that in a long time.  BUT, I was on a quest for a Zucchini bread that was sweet but didn't have as much sugar and oil as the traditional recipes tend to have.  I searched around on pinterest but never found anything I was completely happy with, so I decided to just invent my own. (insert raised eyebrows here)

I was surprised that it turned out edible and actually tasty.  My daughter loves it, and I don't mind giving it to her since it is not loaded with sugar!  I enjoyed it this morning as toast (I KNOW, I KNOW...how is THAT low-carb?!?), and I was thinking it would make some really good french toast...

Here is it fresh out of the oven...


And here's the recipe:

2 cups shredded zucchini (water squeezed out if previously frozen like mine was)
1 1/4 c. warm water
1 egg
1/3 c. maple syrup
2 c. whole wheat flour
2 c. bread flour
1 1/2 tsp. salt
3 T. butter, softened
1 1/2 T. dry milk
2 tsp. cinnamon
2 1/4 tsp. yeast (or 1 pkg)

Place ingredients in bread machine in order listed.  Set on dough cycle.  When finished, knead briefly and shape into loaf (or loaves).  At this point, it was a bit dough-y so I will probably add a little more flour next time...for this time, I just kneaded in a little extra.  Place in loaf pans or on a baking sheet or stone and cover with a towel.  Allow to rise 45 minutes.  Bake at 350 for 25-35 minutes.

Enjoy fresh out of the oven with butter...

Recipe Failure...and the Recovery

We enjoyed having some family in town over the weekend, and had planned to have a nice dinner together on Saturday night with a few extra in attendance.  I try NOT to have desserts in the house, but thought that 10 of us could probably polish off a regular size dessert at one meal and I wouldn't have to be concerned with the tempting leftovers.  So, I began to search the cabinets for ingredients and ideas.  My Betty Crocker cookbook is a standard go-to for recipes around here and I already had it out to make the main dish.  As I looked through the desserts section, there was a recipe for Boston Cream Pie, and I just happened to have all the ingredients.  So, I mixed up the cake part, baked it, cooled it according to the recipe instructions and dumped it out of the pan....literally....



The picture doesn't even show how bad it was...there was no way to salvage it into anything that resembled a cake.  My husband walked into the kitchen and said, "OHHHHH NOOOO!"

Enter sacred wisdom from one of the best cooks I know.....my mom!  You could turn it into a trifle.......

OH YES, that's what I'll do.

So I mixed up the cream filling, and as it cooled, I added a bit more milk to make it thinner...I layered chunks of the cake and the cream in a large bowl...


After that, I made the chocolate sauce for the topping....there are few foods that I love to watch and smell more than chocolate and butter melting together...

(I know I'm weird....)

Once the chocolate had cooled, I added more hot water than the recipe called for in order to make it spread better (especially since I had nothing resembling a smooth surface to spread it on...) and poured it over the top of the trifle, spreading with the back of a spoon as best I could.


It certainly was not the most beautiful of desserts, and if I had been able to add some fancy whipped cream dollops or something on the top, it would have made it much more aesthetically pleasing, but in the end, it tasted good, and there was only one small spoonful left after dinner.

Thanks mom, for the great advice - all was not lost on my dessert gone wrong!  This works well for other cakes too, and if you can keep some vanilla pudding mixes on hand, they can be made quickly for a filling.

We had a great time with our family and guests, and as we sat around our table, I was once again reminded of the great blessing of friends, family,  food, and fellowship.

Homemade...

This is probably going to be link-overload, but I have tried some really fun and delicious recipes lately that I wanted to share.  As I mentioned previously, I am trying to make more and more things from scratch...  I have found that it doesn't always save money and certainly doesn't always save time, but often it tastes better and is healthier.  There are seasons when I can make more things from scratch and seasons where it is better if I just buy things.  But, here's what I've been trying over the last several months...

Easy Blender Salsa (Easy is RIGHT!  I make this almost weekly!)

Chocolate Syrup (This is a slightly different consistency than store-bought, but I love it!)

Evaporated Milk (This was a recipe emergency...so convenient!)

Ranch Dressing

Healthier Ranch Dressing (use spices from above mix...)

Italian Dressing Mix (haven't actually made dressing, just the mix for other recipes)

Stovetop Granola

Baked Granola

Wheat Thins (These are easier than I thought they would be...just roll them REALLY thin!)

Cheese Crackers (Claimed to be like Cheez-Its...more like cheese straws in cracker form - YUMMY!)

Fruit Snacks (my daughter loved these!)

Jello Popsicles (these have an interesting consistency...I prefer fruit juice)

Granola Bars

More Granola Bars (these taste more like dessert!)

Pumpkin Butter (Super Easy!)

Cinnamon Raisin Bread (I actually did this in my bread machine and baked it in the oven!  Amazing!!)

I make most of our bread, and those recipes aren't online so I can't link to them, but I will work on getting them typed up on my printable recipe page -- I've made white bread (blech!), wheat bread, light wheat bread, sourdough bread, and my latest favorite is a rich wheat sourdough bread.  It has a secret ingredient that makes all the difference!  The whole concept of sourdough bread kind of grosses me out a little bit, but the end product sure is tasty!

Pizza Crust (not my favorite, but it's pretty good.  I didn't pin/save my favorite and my only hope is that I printed it....and it's somewhere in my pile of printed recipes!  I also make a biscuit type crust sometimes.)

English Muffins

I happen to live in a house with a child who would happily live on muffins alone, so we regularly have some sort of muffins in our house for breakfast/snacking.  I'm constantly looking for healthy(er?) recipes for those muffins, so check my recipes page and pinterest board for what sweet breads we're trying out around here.

I also make a double batch of pancakes or waffles when we have them and put the extras in the freezer.  I just lay them in a freezer bag, and we pop them in the toaster or toaster oven when we're ready to fix them.

Taco Seasoning is very simple to make -- I have a recipe from a friend in a church cookbook which I can try to get typed us as well, but a quick google, pinterest, or allrecipes search should bring up some good results.

I also make cornbread from scratch (the sweet kind so it tastes like the Jiffy box mix).  I had no idea how simple it is to make, and I just keep a bag of cornmeal in my pantry.  This is the recipe I use.

A friend recently gave me a copy of this book and it is a very valuable resource...if you are able to get a copy, I highly recommend it.  I made the vanilla pudding and vanilla ice cream from it last week.

Lots of sauces and seasonings are easy to make and don't require adding too many items to your pantry.  I recently discovered that BBQ sauce is relatively easy to make....just need to work on my vinegar measurements...too much the first time.

You may remember my post about Stretching a Chicken, and I continue to do that to make my own chicken broth, and I save beef broth as well from when I cook a roast.  My freezer was so full of broth that I have stopped making any for right now and it kills me to throw out the chicken bones without making broth from them!

I've talked before about shopping at Costco, and I continue to purchase basic pantry items there.  Most of my baking supplies come from there, and I've started purchasing canned tomatoes/tomato sauce there as well.  We certainly don't use up the huge can in a timely manner, but I've had no problems freezing the leftovers for the next time I need them.  The tomato sauce is used in recipes, for pizzas, and spaghetti, and the tomatoes are used in ALL sorts of things, including salsa, italian dishes, and other recipes that call for diced tomatoes.

Finally, I've been dabbling in some homemade cleaners/household products and so far I've liked what I've made...

(Marathon) Baking Day

Yesterday was one of those days where I thought I'd tackle a few small projects and be done in a relatively short amount of time.  8 hours later (and really, really sore feet!), I finally finished.  Whoa.

I grocery shop for two weeks at a time.  That sounds like I spend two weeks shopping.  I go grocery shopping every other week.  There.  That's better.  This saves me both money and time and I'm happy about both of those.  I also make a lot of what we eat from scratch.  We're pretty much getting to the point that anything we eat is either whole food (by that I mean fruits, veggies, meats/protein) or homemade.  There are still a few exceptions, but they are becoming the (very small) minority.  What all of this means is that I usually have a baking/cooking day once every two weeks where I try to make a lot of the things we will need for the next week or two, and then I just fill in with other things when time allows.  I hope to be able to share the recipes (and pictures...since I have a cutey-patootey-helper!) for future baking days on a regular basis in order to encourage and inspire you all to have your own baking days.  For me, being in the kitchen is relaxing, even with 4 things going on at once and my helper underfoot.  I have my mom and great-aunts to thank for that.  I know for some it is not, but I hope that whichever side you land on, you will at least find a recipe or something from these posts that is helpful for you.

Today, I was having camera issues again (shocker!), so I don't have any pictures that are worth posting, but I will try to link to the recipes that I made, and you can look at the original pictures on those sites.  Note that today was a longer-than-normal day for this sort of thing...normally we are only in the kitchen for 3-4 hours at a time.

May...where ideals and reality meet.

Eventually, I will learn that blogging every day (even just the weekdays) for a month is NEVER going to happen for me.  It's not only a time-thing, but also an idea-thing.  I don't like forced writing...I did enough of that in school.  Even now I'm struggling to peck out a suitable introduction for all the pictures I'm about to show you in place of me actually having to write something worth reading!  So...I guess that does it - when in doubt, write about your doubts...?

I had an anniversary post all planned out...in my head.  I want to post a photo from each year that we've been together just for reflection and fun -- but I have to find them.  I've started looking and I have 2 or 3...  The boxes of pictures/disks were on the kitchen counter for several days but then they got moved to the guest room where they are now collecting dust...I AM determined to get it done though, so stay tuned for THAT post. 

One other quick recipe to share...we've been enjoying the basil, chives, and parsley in our backyard and have been making all sorts of yummy things with them.  These Grilled Pork Chops with Basil-Garlic Rub were quite possibly THE. BEST. pork chops we have EVER had.  Yeah...they were THAT good.  C kept saying, "Thank you, Daddy, for grilling the pork chops for suppah!"  We'll be having these again this week!

Okay - that's all for now.  Hope to get that anniversary post up soon, and I have lots of other ideas coming up for June....now to find the time to post them all...

May 16th, 17th, and 18th: Randomosity...

Forgive me, folks.  I just haven't taken the time to post these last few days.  I attribute this to lack of desire to spend too much time at my computer, warm temperatures making it really FEEL like summer so I gravitate towards summer activities (usually involving water!), the realization that my little girl is growing quickly and I'll have plenty of time to blog when she's grown and gone, very few "must-do's" this week allowing me to spend more time doing fun things with said little girl, and then I had to go and read these articles:


So...my already in place commitment to staying off the computer during her awake hours became an even more firm commitment...and I started caring less about my phone.  I mean, we did survive before cell phones and texting after all.  I'm just kind of over it all.  Not to say that I don't appreciate technology...I am posting this on my BLOG afterall, but our need to be "plugged in" all the time has just became exhausting for me and it just leaves a bad taste in my mouth and a sick feeling in my stomach.  So...if you e-mail, facebook, text, or call me and I don't respond right away...don't worry...I'm probably just playing with my daughter while I can! :-)

So, for the sake of the grandmothers, I will give you a glimpse of our week...

*Monday - at home all day, laundry, recovering from the weekend, gearing up for the week

*Tuesday - met friends at the aquarium (hundreds of school kids there AGAIN!), stayed to play in the fountains outside for about an hour afterwards and shared our popcorn with the birds. C helped me make a new mexican dish for dinner and we made some fresh salsa that was quite tasty! worked in the garden in the evening...pulling weeds after all that rain.  C was happy to break out her new gloves and spray bottle.  G had session meeting in evening, so C went to bed early and I enjoyed reading in bed for a few hours before I crashed.

*Wednesday - woke up feeling HORRIBLE (thank you allergies!) and finally resigned myself to take some meds and then felt much better (apart from being a little lightheaded).  Made it to the last meeting of Bible Study and a brunch with those ladies - love them!  Home in time to get some lunch for C, visit with G while he ate, and then a guy showed up to do some work at our house.  C helped me finish making a new dish for dinner (EPIPHONY!  Cooking as much of our dinner as possible earlier in the day allows me to cook at a cooler time of day, and allows me plenty of time to have C help me without feeling pushed to get it ready.  And we ALL know that kiddos get a little cranky the later the day gets...WHY haven't I thought about this before?!?), and then she went down for her nap.  Worked on some church stuff on the computer, checked e-mail/blogs, etc.  Played with her after nap while guy finished up his work, played outside for a bit, dinner, and spent some time enjoying the cool evening outside.

*Thursday - Running errands and researching a new cell phone/provider (ironic, I know), lunch with G at CFA, more errands...discovered we have a SWEET FROG's now...stopped for frozen yogurt, OF COURSE.  (I'm kind of a frozen yogurt junkie...sort of.  TCBY was my fave!)  On the way home, made a last minute decision to swim at a friend's pool for a bit, leftovers for dinner.

*Friday - Cleaning, Mowing, Gardening.  C's napping, I'm wrapping up some computer stuff, need to exercise.  Dinner with friends tonight and more swimming.  The weekend is full and I'll try to snap some photos to share next week to journal our events.

May 15th: Salsa for Breakfast...

This is a strange post - you have been warned.  I ate salsa for breakfast...corn salsa...a pinterest find.  You can see the original recipe here, and my changes are as follows: no scallion/cilantro - substituted fresh chives, basil, and parsley, added a can of black beans, and used regular chili powder instead of chipotle.  It is so-amazing-I-can't-stop-going-back-to-the-fridge-for-more-eat-it-with-a-spoon-good.



I can't wait to try it with some greens for a refreshing lunch salad.  1 cup has about 150 calories, so it's not too bad -- it's the chips that get ya!  

But still -- salsa for breakfast.  NO...not pregnant.  (Just in case any of you went there.)  

I just finished up a 7-day cleanse "diet" with yesterday being my last full day -- so this morning, I had NO limitations as to what I could/could not eat, and the salsa had been sitting in the fridge since I made it yesterday afternoon...all the flavors blending together.  YUM.

So this cleanse -- it's supposed to flush your body of impurities, and over the week, you should lose somewhere between 5-11 pounds.  (**Losing that much in a week IS.NOT.HEALTHY...on a regular basis...just clarifying.)  I was intrigued and decided to try it.  I think I was being driven by hitting the first plateau on this weight loss journey and being frustrated with "doing all the right things" but not seeing too many results.  (Turns out I had some numbers wrong, but anyway...)  

So here's the plan:

Day 1: Eat only fruit, but NO bananas.
Day 2: Eat only veggies, but NO peas, corn, beans.  For supper a baked potato with butter! 
Day 3: Eat only fruit and veggies...no potato today.
Day 4: Eat only bananas and skim milk (or yogurt made with skim milk).  Up to 8 of each.
Day 5: Eat only chicken or turkey and 6 tomatoes.
Day 6: Eat only chicken, turkey, and veggies...no potato.
Day 7: Eat only Miracle Soup.  (onion, cabbage, green pepper, celery, tomatoes, onion soup mix, water)

Yeah....so I learned a LOT of self-control this week...and throughout the process ended up losing just over 7 pounds...which was a really nice added bonus!  This is not a very balanced diet obviously, so it would not be a good idea to eat this way regularly to try to lose weight.  Plus...you might go crazy.  I was SO ready for the week to be OVER!  I can't really tell any difference in my body as far as the cleansing aspect, but the weight loss was nice and hopefully jump started things again so that I will continue losing and not gain it all back.  I searched around a little bit and discovered there are several variations on this, so if I end up doing it again sometime, I will read up on those before I start.

SO -- maybe NOW you understand WHY I ate Corn Salsa for Breakfast. :-)

Hey Good Lookin'...

...here's what we've been cookin' up around here lately!  First up...

Scallops with Creamy Bacon Corn Sauce

Here's a few pictures taken during preparation to get you ready for the recipe...





Total Time: 30 minutes (or longer if you're talking with your bestie and sippin' some wine...just sayin')
Makes 4 servings... ahem...riiiiiiiiight

3 ears fresh corn, husks and silks removed
1 T. canola oil (I used vegetable)
1/4 t. kosher salt
1/4 t. pepper
3/4 lb. sea scallops, thawed
4 slices bacon, coarsely chopped (I used turkey bacon)
8 oz trinity mix (fresh diced tomatoes, onions, bell peppers)
1 T. blackening seasoning (recipe below)
1/2 cup half and half
1 T. chives, coarsely chopped (optional)

Removed corn husks and silks; slice kernels off cobs (2-3 cups) into medium bowl.  Scrape cobs with back of knife to release remaining juices.

Preheat large saute pan on medium-high 2-3 minutes.  Season scallops with salt and pepper.  Place oil in pan, then add scallops; cook 1-2minutes on each side or until golden opaque, and firm.  Remove pan from heat; transfer scallops to plate and cover to keep warm.

Cut bacon into small pieces (using kitchen shears) while adding to same pan (wash hands); cook 3-4 minutes or until crisp.  Drain bacon fat, reserving one tablespoon in pan.  Stir in trinity mix; cook 2-3 minutes or until soft.  Combine blackening seasoning, half and half, and corn; add to pan.

Reduce heat to medium-low; cook 3-4 more minutes, stirring frequently to prevent sticking.  Transfer corn mixture to serving dish; top with scallops and chives.  Serve.

Blackening Seasoning
2 t. kosher salt
1 t. black pepper
1 1/2 t. cayenne pepper (unless you LOVE spicy, I would cut this back considerably!)
1 T. paprika
1/2 t. thyme
1/2 t. oregano


Next up...a few pinterest finds made for a lovely Saturday evening dinner on the deck...


1 envelope (7oz) Italian dressing mix (or make your own - recipe below)
2 T. brown sugar
2 T. oil
2 T. soy sauce
1 t. ground cinnamon
1 t. ground thyme
1/2 t. cayenne pepper (I used 1/4 t -- some of us aren't into spicy like others of us are)
1-1/2 lbs. boneless skinless chicken breast halves cut into 1-1/2 inch pieces
3 bell peppers, cut into 1-1/2 inch pieces
1 fresh pineapple, cut into 1-1/2 inch pieces
2 small yellow squashes, cut into rounds (squash is not in yet...will repeat once harvested)

Mix together the Italian dressing mix, sugar, oil, soy sauce, cinnamon, thyme, and ground pepper.  Add the peppers, squash, and pineapple.  Stir in chicken until all are coated.  Let marinate for at least 30 minutes, longer won't hurt!  Thread onto kabob sticks, and grill over medium heat until the chicken is cooked through.

Italian Dressing Mix
1 1/2 t. garlic salt
1 1/2 t. onion powder
1 1/2 t. white sugar
1 T. dried oregano
1/2 t. ground pepper
1/8 t. dried thyme
1/2 t. dried basil
1 1/2 t. dried parsley
1/8 t. celery salt
1 T. salt

Mix together and store in a tightly sealed container.  To prepare dressing, whisk together 1/4 c. white vinegar, 2/3 c. canola oil, 2 T. water, and 2 T. of the dry mix.


1 1/2 cups cooked long grain rice
3/4 cup canned black beans, rinsed, drained, heated
3/4 cup cooked corn, heated
1 large tomato, diced
1 large scallion, diced fine (we substituted fresh chives instead)
2-4 T. chopped cilantro (not cilantro fans around here)
1 T. fresh squeezed lime juice (no limes. will make again and try with lime)
salt to taste (due to the lack of limes/cilantro I used seasoning salt)

Combine all ingredients in a large bowl, toss, and serve.
