Garlic Honey

Cold and Flu season is coming up fast!  Now is the time to be prepared instead of waiting until sickness strikes. I recently made up a batch of honey garlic.  We try this time of year to incorporate more garlic into our diet due to it's wonderful benefits. It is sprinkled on salads, mixed with butter and parsley for a spread, added while cooking to a variety of food dishes.  But sometimes it helps to get a good dose in to ward off an oncoming illness. Garlic is a powerful immune-booster. It is very effective against  bacterial, viral and fungal infections. On a recent morning the sounds of a son waking up with congestion filled the room.  Some over the counter allergy medicine was given but the symptoms continued. In the middle of two weeks of school Christmas break linked to a week of vacation for sweet hubby and I, with lots of family time spent together, someone came down with a cold!  As in any generous family, it was shared.  Thankfully it wasn't the flu and didn't put us down and out, but complaints about sore throats and congestion were sounded.   A dose of over the counter medication cleared up our son's nose, but totally knocked him out. Ginger is one of those spices that never got used much in my kitchen cabinet.  When a recipe called for it, I would sprinkle a dash of powdered ginger in, but that was the extent of my ginger use!
