Happy Happy Joy Joy!!

(Ren & Stimpy, anyone?!)

Today officially marks the first day of Summer Vacation!! Ahhh, the joys of working in the public school system. :) I have to say, though, as nice as the snow days were back in February, I'd take them back in a heartbeat to have been done a few days earlier. Oh well!



I'll be working part-time this summer... with preschoolers at a private practice, private clients at their homes, and doing some paperwork/trainings for school... enough to keep me busy, but I'll still have plenty of time to relax!!

If you know of anyone in the Dallas area (Richardson, Addison, Plano, etc) area looking for private speech therapy or even a babysitter, let me know! I'd love to work with some additional kiddos! My rates are definitely pretty competitive cheap, if you ask me!

To all my fellow SLPs/teachers/school staff: HAPPY SUMMER! We did it!

Massage!

For months now, I've been talking about wanting a massage. Training for / running the Half Marathon had my muscles in all kinds of knots. I openly admit that I am terrible about stretching. I'm also incredibly UN-flexible.

Thankfully, my wonderful sister picked up on my not-so-subtle hints and got me a gift certificate for a 90-minute massage at Massage Envy for my birthday!

I finally scheduled my appointment for Sunday morning.... and I was QUITE pleased with the result. My massage therapist was a tiny little lady, and I was worried that she wouldn't be firm enough, but it was perfect! She also hardly said a word, which was exactly what I wanted. I would not have enjoyed if she tried to talk to me the whole time! Although I did hear her stomach growl a few times when she was standing right by my head!

After laying face-down for nearly an hour (I assume), I realized my nose was starting to run. I didn't really know what to do - my hands were back by my sides! Sooo... I may have just let it drip on the floor! When it was time for me to roll over, I tried to slyly wipe my nose on the sheet. So gross!

She worked really long on my shoulders and legs - clearly a lot of tension in both of those places!

And I experienced a first for a massage - stretching! She had my legs stretching in every direction! A little awkward, but I have to say, she did an EXCELLENT job of ensuring that the sheet was throughly covering my lady bits at all times! And don't worry - I was wearing underwear! ;)

Hopefully my face didn't actually look like that - I tried to control my face as much as possible, but MAN, she really stretched me! Had she been someone I knew, I most likely would have been saying 'ow-ow-ow'! But I stuck it out. ;)

Overall - great massage! Don't appreciate how much they pushed me to buy a membership, but I held strong and said "no". I've read a lot of reviews about how HARD it is to get out of their membership packages.

Hopefully I can retain this relaxation through the last 5 days of school. Can't wait for "summer"! I'll be working part-time this summer, but it'll be nice to have a few days off a week!

Blast from the Past!

Did you know that drive-in movie theaters still exist?! I sure didn't... until my sister started talking about it non-stop! She's been wanting to go for years, apparently. Have I been living under a rock? I guess it's okay... because it is all the way in the small town of Ennis. And I can't say I frequent Ennis often. ;)

 

Danielle messaged me Friday to let me know that there was a double feature of Hangover 2 and Something Borrowed on one of the screens... $6 for both movies. Sign me up!

I had read on the website that outside food and drinks are prohibited, because they depend on the money of the snack bar to survive, BUT Danielle and I decided to live on the edge and pack a small bag of munchies. Shhh!

We got there around 7pm (anticipated show time of 8:30) and we were able to find a great spot right in the center of the screen. We had plenty of time, so we walked around to check things out.

 


We saw security...


We saw the lamest excuse for a miniature golf course that I've ever seen...




And we saw all types of people! If you think people watching in airports is fun, you have got to go to a small town drive-in movie theater! I saw quite a few girls who I may soon see on MTV's 16 & Pregnant. Holy moly!

We stopped at the snack bar to grab a grilled chicken sandwich and some cold drinks (just doing our part!) and partook in some more fabulous people watching while in line.


Eventually (9:20pm-ish!!) the movie finally started! It was hard to get comfortable - started out in folding chairs, but the car next to us ran their engine the whole time, which made it super steamy and hard to hear, so we moved into the car. Hangover 2 was alright. There were some funny parts, but it basically had the exact storyline of the original, just in a different city. I wasn't expecting much but it gave me a few laughs.

Something Borrowed started about 10 minutes after Hangover 2 ended. We moved the car forward during intermission, after people left, to get away from the running car. Once again I started outside, but I couldn't get comfortable in my chair and eventually moved back to the car, which was much better! Something Borrowed was cute! I liked it!

By the time we made it home it was nearly 2am! It was a really great night - thanks, Danielle! It would definitely be a great place to go on a date. But, as Danielle pointed out, probably not good for a first date because if you don't like him, you're stuck in a car with him for several hours! ;) Maybe one day a boy will take me there... a girl can dream, right??

Oh... and at one point when I was laying back in the car, I looked up through the sunroof and realized that my car didn't fare as well in the recent hail storm as I thought it did! MAJOR BUMMER!

Enchiladas Verdes!

The leftover green onions and cilantro from the Green Hummus inspired me to create a Mexican recipe of some sort. I perused the pantry and found green enchilada sauce, a can of Rotel (which I usually use for stuffed portabellas!), and some green lentils. Lentils?! Well, truth be told, I had never even eaten lentils before. I picked them up, out of intrigue, on a shopping trip many months ago, and had no clue what I was going to do with them. 

If you're anything like me, Enchiladas Verdes top the list as one of the most delicious food ever... I can't get enough of that slightly tangy green sauce! I figured that if lentils didn't taste good smothered in green sauce, then they probably don't taste good at all. Hence, Enchiladas Verdes were born!

Here's what you'll need:
  • 1 package lentils (cooked according to package directions)
  • 1 can Rotel tomatoes (I had the Cilantro and Lime flavor)
  • 1 cup (?) green enchilada sauce
  • Small bunch of cilantro, stems removed and chopped slightly
  • 3-5 green onions, chopped
  • 1 package corn tortillas (I think mine were the larger size)
  • 3/4 cup reduced fat Mexican cheese... plus a little more to sprinkle on top



This recipe took a little while, only because it takes a good 40-45 minutes to cook the lentils. (I cooked them about 35 minutes, assuming they would continue cooking in the oven, but that was not the case! They could have cooked a little longer on the stove.)


I ended up cooking the WHOLE package, which was a major mistake. Look how much I have left over (after filling 5 enchiladas) - probably 3+ cups!


While the lentils are cooking, cover the bottom of a casserole dish with a thin layer of green enchilada sauce.


In a bowl, combine Rotel, mexican cheese, chopped green onions, chopped cilantro, and lentils, when they are finished.


Warm corn tortillas in the microwave 30-40 seconds to make them nice and soft. Fill each tortilla with about 1/4 - 1/3 cup of the lentil filling, roll, and place seam-down in the casserole dish. I squeezed 5 enchiladas into my 8 x 8 dish.


Cover enchiladas with approximately 1 cup (I didn't measure...) of green enchilada sauce. Make sure they're covered well to prevent the tortillas from becoming too crispy. I ended up adding a little more sauce during cooking because they were looking a little dry.


Bake at 350 for 25-30 minutes until cheese begins to brown and sauce is bubbling.


The enchiladas were rather difficult to remove from the pan without breaking, so the pictures of it out of the pan are not exactly beautiful (or appetizing!) but these enchiladas were quite delicious! The flavor combination was perfect. The texture of the lentils kind of reminded me of black beans (a little firmer than some other beans). In my eyes, if it has cilantro and/or green sauce, you really can't go wrong! Next time I might jalapenos to give it a bit more of a kick!

Now what am I going to do with all of those leftover lentils? Any ideas??

Green Hummus!

Oh, Apron, how I've missed you so!


I've been so go-go-go in the past couple of months that I've been neglecting my kitchen. Well, not completely... a girl's gotta eat! However, I've done very little cooking; relying mainly on frozen meals, salads and sandwiches. BO-RING!

This afternoon I embarked on a major, much-needed grocery shopping sesh. (It's probably been a month since I did a full haul, since I've been out of town every weekend for the past month!) I passed the hummus in the produce section, and as easy as it would have been to throw some in the cart and shell out $4 for a tiny container, I decided to concoct some of my own. I've made plain hummus in the past, but today I made a delicious GREEN Hummus.


Cilantro and Green Onion Hummus
(measurements are approximate... I was just throwing stuff in the food processor!)

  • 1 can garbanzo beans, drained and rinsed
  • ~1/3 C tahini
  • 3 green onion stalks (?)
  • 1/2 t salt
  • 2 t minced garlic
  • handful of cilantro
  • 1/2 C water
  • 1/4 C EVOO
  • 1/8 C lemon juice


Throw everything in the food processor and blend until smooth. :) Easy enough? Serve with fresh veggies and/or crackers.


It is quite tasty! If you like cilantro, I highly recommend giving it a try. I didn't do the math, but I'm telling myself it was cheaper this way... even if it wasn't, I have A LOT of hummus now! :)

I should have put it in a prettier bowl, huh?

P.S. It's not
necessary to wear a green shirt when making green hummus... but it sure doesn't hurt.
