One Pot Chicken and Vegetables | One Pot Chef




My super simple One Pot Chicken and Vegetables is the kind of easy, comforting, home style dish that’s perfect to throw together after a long, busy day. Brown some chicken, toss in some veggies and simmer until done! No complicated prep work. No hard to find ingredients. Just simple, wholesome food that lets the natural flavours of the ingredients shine - Try it today :)

Ingredients:

8 Chicken Thigh Fillets (or any chicken pieces such as breasts, drumsticks, wings etc)
1 Large Brown Onion
1 Teaspoon of Crushed Garlic
2 Cups of Frozen Peas
3 Large Carrots
8 Baby Potatoes (aka Chat Potatoes)
4 Cups (1 Litre) of Liquid Chicken Stock
2 Tablespoons of Freshly Squeezed Lemon Juice
Freshly Cracked Black Pepper

Preparation Time: About 5 minutes 
Cooking Time: About 40 minutes approx.

Slow Cooker Chicken Teriyaki with Vegetables | One Pot Chef



This Slow Cooker version of Chicken Teriyaki with Vegetables takes all the fuss of cooking the modern classic dish! Cooked all in one pot, it’s as simple as adding chicken pieces to the pot, pouring over the home made teriyaki marinade then switching on the pot. Add in some vegetables and the meal is complete. Simple enough to make on busy weeknights, but tasty enough for feeding a crowd, this one is guaranteed to become a new go-to recipe at your house - give it a try today!

Ingredients:

1kg of Chicken Thigh Fillets (skinless and boneless)
1/2 Cup of Soy Sauce
1/2 Cup of Honey
1 Small Onion (finely chopped)
2 Teaspoons of Minced Ginger
2 Teaspoons of Minced Garlic
1/4 Cup of Rice Vinegar
Freshly Cracked Black Pepper
1/2 Cup of Water
2 Tablespoons of Corn Flour (aka Corn Starch)
1 Head of Broccoli
1 Carrot
1 Zucchini

Preparation Time: About 10 minutes
Cooking Time: About 4 hours (HIGH) or 8 hours (LOW) + 30 minutes extra

Slow Cooked Pot Roast with Vegetables is a classic one-pot main meal that is guaranteed to keep the whole family happy. A delicious beef roast, potatoes, onions and carrots are slow roasted in a crock pot / slow cooker until tender. Preparation Time:  About 10 minutes
Cooking Time: About 9 hours on LOW setting
