And this festival falls on first sunday of January. French people celebrates this day with a king cake prepared either with brioche dough or a pastry cake baked with puff pastry sheets and filling. Traditionally the filling calls for a rich frangipane filling prepared with grounded almonds, eggs, sugar and butter. Some of the king cakes goes for apple sauce or for pears or else simply with chocolate spread, now many versions do exists. Eventhough this popular King cake is still available in stores, every year i bake my own version of King cake as my kids love this super flaky cake especially for the trinket in it.

Anooshaboor/Anoushabour/Armenian Christmas Pudding
Happy New Year Wishes to You All
Am kick starting this year with a sweet note, and this healthy and delicious pudding is from Armenia which is also known as Armenian Christmas Pudding aka Anoush Abour/Anooshaboor. Anoushabour means Sweet soup in Armenian. This dish is a must in every new year's and christmas tables in Armenia for many centuries. This Armenian pudding is a delightful pudding which calls for pearled wheat berries or pearled barley. However if you dont get pearled wheat berries you can replace them very well with white wheat berries and pearled barley. Traditionally a couple of dry fruits like apricots, raisins and almonds are usually used for making this pudding more fruity and nutty. And not to forget that this pudding is flavored with cinnamon powder and sweetened with honey.

No Maida, No Sugar, No Butter Christmas Fruit Cake
You may wonder how can one bake a rich looking Christmas fruit cake without Maida, sugar and butter. Trust me, even i was skeptical before baking this incredible cake. Its quite an interesting Frutis and nuts loaded Christmas friendly cake to carry with you if you are visiting friends or family. I have prepared fruits and nuts soaked in jaggery syrup before 20 days for baking this Xmassy cake. Yes you heard it rite, this cake is completely sweetened with jaggery. Varieties of dry fruits and nuts are soaked in a thick jaggery syrup is used to flavor up this fruits loaded rich looking cake. Actually my initial idea to make this rich fruit cake was with usual ingredients as much as every year. When i opened the fridge, i noticed that there was no butter, obviously i opted for Olive oil, then comes to idea to make this fruit cake without all purpose flour/maida. Finally i baked this cake with Spelt flour, jaggery syrup and olive oil.

Nonnettes à la Fraise /French Strawberry Jam Filled Gingerbread Cake
Nonnettes are small French gingerbread cake which is quite popular in Dijon, a city in Eastern France.Usually filled with orange marmalade, this nonnettes de Dijon are christmas special baked treats. However many variations do exists. Though the traditional Nonnettes goes for Orange marmalade, many fillings like strawberry jam, mixed fruits jam etc are also used to make a different version of Nonnettes. Since i dont have orange marmalade and none at home like this citrus preserve, i opted for our all time favourite strawberry jam. Spiced gingerbread cake filled with strawberry jam tastes absolutely fantastic with your favourite drink either for your evening snacks or else to enjoy simply to kick start your hectic day's breakfast.

Vánočka/Vanocka - Czech Christmas Bread
Vanocka/Vánočka is a Czech Republic and Slovakia Christmas bread which is often baked during Christmas time. This bread calls for a rich bread dough prepared with eggs, butter and this bread dough sounds almost like Brioche. Usually this bread have raisins and almonds though sometime you can add some lemon rind or orange rinds just to give some flavor. Braided like Challa, this bread calls for three progressively braids stacked on top of each other. This is sometimes interpreted as a rough sculpture of Baby Jesus wrapped in cloth laying in a manger (manger is a structure used to hold food to feed animals). Manger is also a Christian symbol. Earlier people felt like saying that this bread is very difficult to prepare at home and so many superstitions and special customs are followed while baking this bread. When making Vánočka some says that the person who bakes this bread should jump up and down while the dough rises, another custom says that to avoid touching silver or metal to the Vánočka.

Christmas Meringue Trees
Merry Christmas Wishes to All !!!
Meringue, i came to know about this kind of desserts or confections once i landed France, actually while my H took me to a walk, i was intrigued to see some whitish fluffy cuties sitting in our street corner Bakery. Immediately i asked for it and H bought it for me,instantly i have completely fallen in love with this egg whites based crispy meringue. They just melt in mouth, later i came to know that we can make them easily at home. I tried my hands in making meringues at home and failed twice. Obviously i never want to give a try when its comes to meringue, days goes on and as a blogger i learned so many techniques regarding baking. Again i tried meringues at home, its was big success, you can take a look at my Meringue Mushrooms which is used for decorating this Yule log cake. But my today's post is quite a different from this meringue mushrooms, i followed Swiss meringue which makes some beautiful meringue.
