Broccoli Omelette | Healthy Recipes | Broccoli recipes | Broccoli and Egg | #simpleandyummyrecipes

Do you want your omelet to make healthier? Then try this broccoli omelet recipe. This is easy to prepare and protein-rich nutritious recipe too. Whenever I make an omelet, I will try to make sure it has some additional healthy factor included. So today it is broccoli, one of the super healthy green vegetables.

Broccoli Omelet is very easy to prepare and it is an excellent breakfast recipe. It is also perfect for brunch also. Serve this broccoli omelet with bread toast and milk.

Preparation time: 10 minutes
Cooking time: 10 mins
Makes: 2 to 3 omelets

Ingredients:
  • Broccoli - 100 gms
  • Egg - 4 nos
  • Onion - 1, finely chopped
  • Chilli flakes - 1 tsp
  • Pepper powder - 1 t 2 tsp
  • Salt as required
  • Oil - 2 tbsp
Method:

  • Chop the broccoli into fine florets and keep aside.
  • Heat 1 tbsp oil in a heavy-bottomed pan/kadai, when hot add the chopped broccoli to it and stir-fry for 5 minutes.
  • Allow it to cool and transfer it to a wide bowl.
  • Add chili flakes, pepper powder, salt, and onion. Mix well to combine.
  • Then break the eggs one by one into the broccoli mixture. Mix well using a fork to get the fluffy texture. Keep aside.
  • Heat 1 tbsp oil in an omelet pan, when hot pour the egg-broccoli mixture to it and spread evenly.
  • Drizzle some oil around the omelet. Cook covered until the eggs are nearly set say about 4 to 5 mins on low heat.
  • Then flip the omelet and cook another side for 3 to 4 mins on low heat and serve hot.

Broccoli and Egg Stirfry - a tasty and healthy stirfry recipe and this dish is ready in less than 10 mins. This is Indian style broccoli and egg stirfry recipe made with very few ingredients.

This broccoli and egg is a perfectly healthy meal to try when you want to make something quick and delicious.  Broccoli and egg, they are both healthy and filling. So far a healthy meal that's easy to make, this broccoli and egg stir-fry is a perfect choice.


Ingredients
  • 2 cups Broccoli florets
  • 1 tbsp chopped Garlic
  • 1 tsp Red Chili powder
  • ¼ tsp Turmeric powder
  • 2 Eggs, beaten
  • ½ tsp Pepper powder
  • Salt as required
  • 2 tbsp Oil
Method:
  • Boil ½ liter of water in a saucepan, add the chopped broccoli florets and cook for 3 mins on high heat. After 3 mins drain the water through a sieve and keep the broccoli florets aside.
  • Heat 1 tbsp oil in a frying pan, add the chopped garlic, and fry for few seconds.
  • Next, add the broccoli florets red chili powder, turmeric powder, and salt. Cook for 5 mins or till done on medium heat. Once cooked, move the broccoli to one side of the pan.
  • Heat 1/2 oil on the other side of the pan, add the lightly whisked eggs. Add salt and pepper as required. 
  • Gently scramble them and cook until set. Then mix the egg with broccoli and cook for a min and serve hot.

Spanish Omelette | Potato Omelette | Spanish Tortilla | Easy & quick Breakfast Recipe | Simple and Yummy Recipes

Spanish Omelette or Spanish Tortilla is a traditional dish from Spain. It is one of the signature dishes in Spanish cuisine. It is an omelette recipe made with eggs and potatoes, optionally including onion.

In Spanish, it is called “tortilla de patatas” - the world-famous Spanish potato omelette. You can either include onion or not. In Spain, it is usually served as a tapa (snack ). As a tapa, it is usually cut into bite-sized pieces and served.




Preparation time:  5 mins
Cooking time: 25 mins
Serves: 2

Ingredients
  • 3 Potatoes, medium-sized
  • 1 Onion, medium-sized
  • 3 tbsp Olive Oil
  • Pepper powder as required.
  • Salt as required
Method:
  • Cut the potato into quarters and slice them into thin pieces. Slice the onion lengthwise.
  • Heat 3 tbsp oil in a wide frying pan, add the sliced onion, potato, and 1/4 tsp salt. Saute them for 2 mins on high heat.
  • Cover and cook for 15 -20 mins on low medium heat. Stir occasionally and cook till the potatoes are softened. Set aside to cool completely.
  • Break 4 eggs in a large bowl. Add salt and pepper as required. Mix well and beat them lightly.
  • Next stir in the sauteed onion and potatoes. Mix well and set aside for 5 mins.
  • Heat 1 tbsp oil in a wide frying pan or an omelette pan. Pour the egg mixture gently to the pan.
  • Cook on low medium heat until it sets on top. This will take 3-4 mins.
  • Gently scrape the side of the pan using a spatula.
  • When almost set invert the omelette to a plate. Then slide back the omelette to the pan and cook until done on medium heat. Serve hot

Paneer Omelette | Indian Cottage Cheese Omelette | Step By Step Pic + Video | Paneer Egg Omelette | Simple and Yummy Recipes

Are you bored of the same old omelette recipes, then try this Paneer Omelette recipe which can be done in a few minutes. A simple, healthy, protein and calcium-rich breakfast recipe.

It's a perfect breakfast recipe and also very easy to make. You can make this for dinner too. It is a healthy breakfast recipe and also tastes very yumm. It makes a great breakfast/tiffin recipe for your kids, to ensure they are eating a wholesome meal because it has the nutritious value of both paneer and eggs which are both great sources of protein.
Preparation time: 2 mins
Cooking time: 5 mins
Serves: 2
 Ingredients:
  • 3 Eggs
  • 100 gms Paneer, cut into small cubes
  • 1 Green Chilli, finely chopped
  • ½ Capsicum, finely chopped
  • 1 Onion, small-sized, finely chopped
  • 1 tsp Ginger Garlic paste
  • 1 tsp Red Chilly powder
  • ¼ tsp Turmeric powder
  • 1 tsp Garam Masala
  • 3 tsp Curd
  • Few Coriander leaves
  • 1 and  ½ tbsp Oil
  • Salt to taste
Method:
  • Break the egg in a wide bowl. Season with little pepper and salt. Whisk lightly and keep aside.
  • Heat 1 tbsp oil in a frying pan, add the finely chopped onions, green chillies, capsicum and saute till it turns translucent or till onion becomes soft in medium flame.
  • Next, ginger garlic paste and add all the spice powders ( red chilly, garam masala, turmeric ). Mix well and saute on low flame for 2 mins.
  • Then add the curd and mix well. Saute the mixture for a min on low flame.
  • Next, add the paneer cubes and mix well. Cook for a min on low flame. Add a few coriander leaves and give a mix. Set aside to cool.
  • After it cools down add the paneer mixture to the beaten egg. Mix well and leave aside for 5 mins.
  • Heat 1/2 tbsp oil in a small frying pan. Pour some ladleful of egg paneer mixture to the pan.
  • Cook for 4 -5 mins on low flame until it sets on top. Once the omelette sets and cooked on one side, flip the omelette and cook the other side for 2 more min. Once done transfer to a plate and serve hot.

Egg Drop Curry without coconut | Poached Egg Curry | Udaitha Muttai Kulambu | Simple and Yummy Recipes

If you are looking for egg drop curry without coconut, then this recipe is for you. usually, most of them prepare boiled egg curry, but this recipe is totally different where the eggs are broken and dropped in the curry. This recipe is tastier than the usually boiled egg curries.

This recipe is a super simple and quick recipe too. There is no boiling of eggs here, making it hassle-free. This recipe is so flavourful and tastier as the raw eggs are simmered in the curry. All the spices are absorbed by eggs, resulting in a very yummy gravy recipe. It goes excellently well with rotis, naan and parotta.

Ingredients:
  • 4 Eggs
  • 1-2 Cinnamon Stick
  • 3 Cloves
  • 3 Cardamon pods
  • 1 tsp Fennel seeds
  • 2 Onion, finely chopped
  • 2 Tomatoes, large-sized, finely chopped
  • ½ tsp Red chilly powder
  • ½ tbsp Coriander powder
  • ½ tsp Turmeric powder
  • ½ tsp Garam masala
  • few Curry leaves
  • few Coriander leaves
  • 2 tbsp Oil
  • Salt as required
To Coarse paste
  • 6 - 8 Garlic cloves
  • small piece of Ginger
  • 2 Green Chilies
Preparation :
  • Take two eggs. Separate the egg white from the yolk and keep aside.
  • Pound garlic, ginger and green chilies to a coarse paste and keep aside.
Method:
  • Heat oil in a heavy-bottomed wide pan, when hot add the whole spices- cinnamon, cloves, cardamom, fennel seeds and fry for a few seconds.
  • Then add the onions and saute. Next, curry leaves and green chilies. Saute the onions till they turn light golden brown in color on medium heat.
  • Next, add the tomatoes, pound paste, chilly powder, coriander powder, garam masala, turmeric powder, Kashmiri chili powder, and salt. Mix well and saute on low heat for 2 mins.
  • Add 1/2 cup water and mix well so that the masala doesn't bur,
  • Cover and cook for 5 mins on low heat. Stir in between.
  • After 5 mins open the lid add 2 cups of water, mix well and bring it to a boil.
  • Add the egg whites and immediately mix it.
  • Then drop the eggs one at a time without breaking the yolk, do not stir at this stage.
  • Cover and cook for 2 mins on low heat.
  • After 2 mins open the lid and flip the eggs, cover, and cook on the other side for 2 more mins on low heat.
  • When it's done, open the lid and add the finely chopped coriander leaves and serve hot with rotis.

Vermicelli Biryani | Egg Semiya Pulao is a very quick and easy one-pot meal dish that can be either made for breakfast or lunch. It is also perfect for kid's lunch box recipes. It tastes really delicious and easy to make as well.

I have added mixed vegetables and scrambled eggs to this recipe to make it more healthy. You can skip the egg in this recipe. Serve this with simple onion raita.

Preparation time: 10 mins
Cooking time: 20 mins
Serves : 3 persons

Ingredients:
  • 150 gms or 2 cups Vermicelli
  • 1 large Onion, chopped
  • 2 Green chilies
  • 2 Tomatoes, chopped
  • ½ tbsp Ginger Garlic paste
  • ½ tsp Red chili powder
  • ¼ tsp Turmeric powder
  • ¼ tsp Garam masala
  • few Mint leaves
  • ¼ cup Carrot, finely chopped
  • ¼ cup Beans
  • ¼ Green peas
  • ½ tbsp Ghee
  • 800 ml or 4 cups of Water
  • few Coriander leaves
  • 1 tbsp Oil
  • Salt as required
Whole spices
  • 1 Cinnamon stick
  • 3 Cloves
  • 2 Cardamon pods
  • 1 Bay leaf
For Egg Mixture
  • 3 Eggs
  • little Red chili powder
  • ½ tsp Pepper powder
  • ½ tbsp Oil
  • Salt as required
Method:
  • Heat ghee in a heavy-bottomed kadai or wok. When hot add the vermicelli and fry till it turns light brown in color. Keep aside to cool
  • Heat oil in wide heavy-bottomed kadai, when hot add the whole spices and fry or few seconds.
  • Add onions, green chilies and fry till onions turn golden brown in color on medium heat.
  • Next add tomatoes, ginger garlic paste, red chili powder. turmeric powder, garam masala, mint leaves, and a little salt. Saute till tomatoes become soft and mushy on medium heat.
  • Next add the vegetables - carrot, beans, peas. Saute and cook the vegetables for 3 mins on low heat.
  • Add the water and required salt. Mix well and boil. for 5 mins on medium heat.
  • Next, add the roasted vermicelli and mix well.
  • Cover and cook the vermicelli on low heat till done.
  • When done add chopped coriander leaves and gently mix it. Keep aside.
  • Break 3 eggs to a bowl. To it add little chili powder, pepper powder, salt as required and whisk it.
  • Heat oil in a wide non-stick pan, when hot pour the egg mixture and gently scramble the eggs and cook till done.
  • Next, add the scrambled to the vermicelli and gently mix it. Serve hot with onion raita.

Egg Biryani in Pressure Cooker | Pressure Cooker Egg Biryani | Quick Egg Biryani Recipe | Simple and Yummy Recipes

Egg Biryani - an easy and quick biryani recipe made using a pressure cooker. Among all the biryani recipes, egg biryani is very easy and it can be made very quickly at home. It tastes very delicious too. Serve this biryani hot with onion raita and salad by the side.

This is a quick biryani recipe that can be made within 30 mins. This can be served as lunch or dinner. Also, it is best for the lunch box recipes. In this recipe post, I am sharing the recipe of egg biryani in a pressure cooker with step by step photos and a video recipe.

Cooking time: 20 to 30 mins
Serves  2-3 persons

Ingredients:
  • 3 Boiled Eggs
  • 250 gms Basmati Rice
  • 300 ml of Water
  • 1 Onion medium-sized, thinly sliced
  • 2 Tomatoes, chopped
  • 2 Green chilies
  • 1 tbsp Ginger Garlic paste
  • 1/2 cup Mint leaves
  • 2 tsp Red chilly powder
  • 1 tsp Garam masala powder
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 2 tbsp Curd
  • few Coriander leaves
  • 2 tbsp Oil
  • 1 tbsp Ghee
  • Salt as required
Whole Spices
  • 1 Cinnamon stick
  • 4 Cloves
  • 3 Cardamon pods
  • 1 Bay leaf
  • 1 Star Anise
  • few Stone flower
Method:
  • Wash and soak the rice for about 15 minutes
  • Boil eggs and peel them and make slits on them
  • Heat a pan with some oil, add red chili powder, turmeric powder, salt and mix well.
  • Add the eggs and fry/roast the eggs for 3 mins on low heat and keep them aside.
  • Take a pressure cooker and add oil, ghee to the cooker and roast all the whole spices.
  • Next, add the onions and saute till they turn golden brown on medium heat.
  • Add green chilies, ginger garlic paste and saute on low heat for 2 mins.
  • Add tomatoes and little salt to it. Cook till the tomatoes turn mushy and soft.
  • Next add curd, chili powder, turmeric powder, garam masla, coriander powder and mix well. Cook for 5 mins on low heat.
  • Then add the mint leaves and mix well and cook for a minute.
  • Then add the soaked basmati rice, water, and salt as required. Mix well.
  • Add the coriander leaves and give a mix.
  • Finally, place the eggs one by one on the rice.
  • Close the pressure cooker with the lid. When the steam releases, place the weight and cook for 2 whistles and switch off the heat.
  • When the steam releases, open the lid and serve the biryani with onion raita.

Egg Pepper Fry - a quick & easy South Indian style boiled egg stir fry recipe that can be done in a few minutes. It's spicy and it's perfect to pair with ghee rice, rice with sambar, rasam, and curd.

This is a quick recipe that you can make when you have no time to make a side dish for rice. I usually prepare this with ghee rice or chicken biryani. This can be even served as a starter too.

Preparation time: 10 mins
Cooking time: 5 mins
Serves: 2

Ingredients:
  • 3 Boiled Eggs, cut into halves
  • 1 tbsp Oil
  • Few Curry Leaves
  • Salt as required
To Grind:
  • 1 Onion, small-sized, chopped
  • 1 ½ tsp Pepper
  • ¼ tsp Cumin seeds
  • ½ tsp Coriander seeds
  • 4-5 Garlic cloves
  • small piece Ginger
Method:
  • Blend / Grind all the ingredients under " to grind " with 1 tbsp of water. Blend to a smooth paste and keep aside.
  • Heat oil in a wide pan, when the oil is medium hot add the ground masala paste.
  • Saute and fry the paste for 3 mins. Then add the salt and cook the masala in low flame till the oil separates.
  • Once the oil separates, add 1 tbsp of water and mix well.
  • Now place the egg halves yolk side down and cook for 1 minute in low flame.
  • After a minute turn the egg yolk side up.
  • Next add few curry leaves and gently mix. Saute the eggs for a minute and switch off the flame. Transfer to a serving plate.
  • Serve with ghee rice or rice with sambhar, rasam, curd, etc.

Indian Style Scrambled Egg Spinach | Egg Spinach | Scrambled Eggs with Spinach | Egg Palak | Simple and Yummy Recipes

Are you bored with regular egg bhurji? Then do try this version of making egg bhurji - Indian style scrambled eggs with Spinach.  This is very healthy yet very very tasty too. I have paired eggs with Spinach. It is perfect for a healthy breakfast and also pairs very well with Rotis or a sandwich filling. Or have it as a snack in the evening with some hot tea during winter days. Also, you can serve this with some rice and curry for lunch.

Ingredients
  • 2 Eggs
  • 1 medium-sized onion, sliced
  • 1 small bunch of Spinach, chopped
  • 1 tsp Mustard seeds
  • 1 tsp Ginger Garlic paste
  • ¼ Turmeric powder
  • ½ tsp Chilly powder
  • ½ Garam masala
  • 1 tbsp Oil
  • Salt as required
Method
  • Heat oil in a frying pan. When hot add mustard seeds and allow it to crackle.
  • Add sliced onions and fry till it turns light brown in color.
  • Add ginger-garlic paste and fry for a minute on low heat.
  • Next, add chopped spinach, a little salt and stir fry for 2 to 3 mins on low heat.
  • Add turmeric and chilly powder. Mix well and saute for one minute on low heat.
  • Move the spinach mixture to one side of the pan.
  • Break two eggs into the pan side by side. Leave it for one minute on low heat and allow it to cook.
  • After a minute, gently scramble the eggs.
  • When the eggs are half cooked, fold in the eggs with the spinach mixture and cook for another one minute.
  • Add garam masala and salt as required. Mix well and cook for one minute. Switch off the flame and serve hot.

Ingredients
  • 3 Boiled Eggs
  • 1 large Onion, finely chopped
  • 1/2 Capsicum, chopped
  • 1 large Tomato, finely chopped
  • 1 tsp Fennel seeds
  • 1 Green chilly, finely chopped
  • 1 Cinnamon stick
  • 3 Cloves
  • 2 green Cardamom
  • ¼ tsp Red Chilly powder
  • ½ tsp Turmeric powder
  • 1 tsp Garam masala
  • ¼ cup of water
  • Few Curry leaves
  • Few Coriander leaves
  • Salt to taste
  • 2 tbsp Oil
Method
  • Heat oil in a frying pan or kadai, when hot add fennel seeds.
  • Saute cinnamon, cloves, cardamon in hot oil.
  • Add finely chopped onion and saute them.
  • Add chopped green chillies and curry leaves, saute till onions become light brown in colour.
  • Next, add the chopped capsicum. Saute it.
  • Add ginger-garlic paste and saute for 2 minutes.
  • Add the chopped tomatoes and saute them.
  • Add the spice powders and salt Mix well and cook in low flame till the tomatoes becomes mushy and raw smell of spice powders goes off.
  • Add ¼ cup of water and mix well.  Cook for 2 more minutes in low flame until all the water gets absorbed. 
  • Grate the boiled eggs directly to the kadai/ pan and mix them very very gently.
  • Garnish with coriander leaves and serve hot with parathas / rotis / naan / bread/ ghee rice etc.
