Raspberry Chia Pudding Parfaits🩷 These contain between 23-28g protein, depending on what kind of yogurt you use. The Greek yogurt I use contains 13g protein per 100g.  🥰 • This recipe makes two servings: Ingredients for the chia pudding: 1 cup raspberries (240 ml / 130g) 3/4 cup milk of choice (180 ml) 2 teaspoons maple syrup or honey 1 teaspoon vanilla extract 4 tablespoons chia seeds • Other ingredients: 1 1/2 cups (lactose-free) low fat Greek yogurt (360 ml / 380g) two handfuls of raspberries • 1. Blend together raspberries, milk, sweetener and vanilla extract 2. Pour the mixture into a jar or container. Add the chia seeds and stir to combine 3. Let set in the fridge for two hours or overnight 4. When the chia pudding is set, build the parfaits and enjoy!

Okay so the Aussies will know what I am referring to here: this is healthy Yogo lol. If you didn’t grow up here, Yogo is basically a kids chocolate custard dip thing that is utterly processed to high hell but was a staple of 90s kids childhoods (I don’t know if anybody is feeding this to their kids on the reg these days haha maybe as a treat). THIS however is a delicious, healthy cacao and chia pud which is full of fibre and healthy fats to keep you feeling full. By blending the chia seeds you remove that slightly offputting fish-egg texture (it’s never bothered me too much but I know it’s a sensory ick for some people) AND THE CHIA SEEDS WON’T GET STUCK IN YOUR TEETH. I literally cannot eat chia pudding that is not blended without checking my teeth every 5 minutes for the rest of the morn
