 • 1 teaspoon soy sauce
 • 1 tablespoon shaoxing wine (Chinese cooking wine), sake or dry sherry wine
 • 1/2 teaspoon Chinese five spice
 • 1/2 teaspoon baking soda
 • Pinch of black pepper
 • 2 ounces shiitake or button mushrooms
 • 2 ounces julienne carrot
 • 3 ounces sugar snap peas, cut into halves
 • 4 ounces Bean sprouts
 • 2 green onions
 • 1 teaspoon toasted sesame oil
 • 1 teaspoon toasted sesame seeds

For the Sauce:
 • 3 tablespoon oyster sauce
 • 1/4 cup chicken stock
 • 3 tablespoon Cooking oil
 • 1 tablespoon chopped garlic
 • 1 teaspoon grated ginger
 • 1 red chili, chopped

 • * 1 tbsp of rice vinegar
 • * 1 tbsp of Chinese Cooking wine
 • * 1 tsp of dark soy sauce
 • * 1 tsp of sesame oil 
 • * 1 tbsp of any sugar
 • * 2 tsp of cornstarch
 • Stir Fry:
 • * 4 tbsp of cooking oil, divided 
 • * 5 cloves of garlic, minced
 • * 1 tsp of ginger, minced
 • * 10 dried chilies, cut into 2 cm pieces 
 • * 2 tsp of ground Sichuan peppercorns 
 • * 4 green onion, white and green parts, cut into 2 inch pieces
