40min · 4 servings  Easy shrimp ceviche uses pre-cooked shrimp marinated in citrus juices with cilantro, red onion, tomato and avocado. Even ceviche newbies will love it! (rephrase)  1 pound shrimp cooked, peeled, and deveined  1/4 cup lime juice  1/4 cup lemon juice  1/4 cup chopped cilantro  1/4 cup diced red onion  2 roma tomatoes diced  1 large avocado diced  pinch of salt   Optional:  1 cup diced cucumber to add crunch, 1 whole minced jalapeno for some heat  DIRECTIONS:  1) Cut the shrimp into 1/4 inch pieces and transfer to a large mixing bowl.  2) Pour in lime juice and lemon juice. Cover and let marinate 30 minutes.  3) Stir in cilantro, red onion, tomato, and avocado. Season with a pinch of salt, or to taste. Serve chilled.

Shrimp Ceviche 

1/2 lb cooked shrimp, chopped
 • 2 Roma tomato
 • 1/2 cup red onion 
 • 1/4 cup cilantro 
 • 1 jalapeño, seeded & diced
 • 2 avocados, diced
 • 1/4 cup fresh lemon juice
 • 1/4 cup fresh lime juice
 • Salt & pepper
 • Tajin

Add the chopped shrimp to a large bowl. Pour in the lemon and lime juices. Let marinate for about 45 minutes.

To the shrimp marinade, add the remaining ingredients and stir until mixed. Let chill prior to serving. Serve with your favorite dipping chip. 

Enjoy! 

*traditional ceviche does consist of letting the acid from the citrus “cook” the seafood. I had some leftover boiled shrimp and decided to use them in this easy recipe.*
