Ingredients:  400g gnocchi 400g green asparagus 1 red onion 125g mini mozzarella Cherry tomatoes Arugula Salt, pepper Italian herbs Olive oil Fresh parsley or other herbs  Dressing: 2–3 tbsp green pesto 3 tbsp yogurt Preparation: Trim asparagus and blanch in salted water for 5 minutes. Toss gnocchi with oil, salt, and pepper, then bake at 200°C (390°F) for 15–20 minutes. Cut asparagus and onion. Mix arugula, asparagus, tomatoes, onion, mozzarella, and parsley in a bowl. Combine pesto and yogurt, toss with salad, then add gnocchi and season to taste.
