This is a timeline how I feed my starter.   It pretty much depends on the day and time but today it started in the morning.   9 am Take starter out of fridge.   - feed 1 cup water, 1 cup flour, and I do all of my leftover sourdough ( sometimes it’s about 50 grams and today was way more)   - cover and let it sit out on counter  - about 5 hours later it has tripled and started to fall.   - I now can make my dough    Test the starter, if it floats, it’s fed, ripe, and ready to be used! Someone shared this little sourdough starter tip with me, and I finally put it to use. If you're not sure if your starter has peaked or not, mark the height on your jar. Come back and check it in 30 minutes or so (the timing of that depends on what ratio you fed... you may need to wait longer to check). If it's rising above your line, it has not peaked yet. The more experimenting I do, the more I believe it is better to use slightly overripe starter than to use your starter before it has peak...
