15min · 1 serving     UPMA- easy South Indian breakfast   *Ingredients*  - For 1 cup of sooji/rawa add 3cups + 3tbsp of water  For tempering-  • - 3 to 4 tbsp of ghee  • - 1 tsp of cumin seeds  • - 1 tsp of mustard seeds  • - Handful of Curry leaves  • - 1/4 of groundnuts   • - 2 green chillies, minced  • - 1 medium onion, finely chopped  • - 1 medium tomato, finely chopped  • - Salt as per taste  • - 1/2 tsp of turmeric powder (optional)  - 1 tsp red chilli powder   For garnishing-  • - 1 lemon juice  - Handful of coriander leaves   *Instructions*  1. Dry roast sooji on a pan until light golden, keep it aside.  • 2. In the same pan add ghee, cumin & mustard seeds along with green chillies groundnuts & onion. (add in fresh curry leaves, if using)  • 3. Once onion turns golden add in tomato

Ingredients:
 • 1 cup coarse semolina/Rava/Sooji, rice rava or polenta could work too
 • 1½ tbsp coconut oil or vegan ghee
 • 2 tsp mustard Seeds
 • 1 tbsp chana daal
 • 1 tbsp peanuts
 • 1 tbsp cashews
 • 1 medium onion finely chopped
 • 1 medium carrot finely chopped, brunoise
 • 1/3 cup green peas
 • Salt to taste
 • 2 cups water water to semolina ratio 2:1
 • fresh coriander/cilantro leaves to garnish

Sooji Umpa |ரவா உப்புமா  Ingredients:   • Rava-1&1/4 cup  • Vegetables- 1 cup (tomato, capsicum, carrots)   • Onion-1   • Oil-3 tablespoon   • Ghee-3 teaspoons   • Mustard-1 teaspoon   • Chana dal-1 teaspoon   • Urad dal-1 teaspoon   • Green chilies-3   • Cashews-2 teaspoons   • Curry leaves- a sprig   • Salt- as required   • Water-4 cups   Coriander leaves- for garnishing   Steps:   • 1. In a pan add oil and ghee together, retain 1 teaspoon of ghee for the last drizzle while garnishing.   • 2. Add the tempering items and when they splutter add green chilies and sauté. Then add onions and sauté for couple of minutes.   • 3. Add curry leaves and vegetables. Mix and add salt. Cover it with lid and cook for 3 minutes.   • 4. Then add the rava and fry for 2 minutes. Rava upma made in Instant pot. This timing works (2 mts high pressure + quick pressure release after 5 mts) perfectly fine for the not-so-fine roasted rava. For 1.5 cups of rava, I added 2.5 cups of water. For a mushy version add more water and do a natural pressure release.
